Like I said it was windy, but that didn't let his team skip a beat or throw the towel in. They were professionals and adapted to even the windiest of cookouts! So let me tell you about the meal! I'm still salivating thinking about it. BBQ chicken breasts cooked to perfection and kept warm for 4 hours BUT weren't dry or tasteless. Our neighbors kept coming back for MORE! An awesome Mac n' Cheese buffet set-up that, even with the wind blowing out the sternos was delivered exquisitely! And can we talk about toppings? Cheese, blue cheese, spinach, onions, bacon, chives, and on and on! Green bean almondine with sautéed onions was a star of the veggie section with kids even enjoying them!!! We rounded the meal up with potato salad and sweet rolls! Chef Matt delivered an incredible meal for our neighborhood and had a great team of Sous chefs and assistants on hand to help! I will touch on the logistics and then move to the heart of her cuisine...Camille's has handled events for us ranging from 15 people to over 100, and the small details--timeliness, presentation and hospitality--are consistent and make for no surprises. Her prices are $$ on a scale of 1-5. The surprises come in the form of a wide array of Africa-inspired foods--built around Jollof (rice) to Omisagwe (Peanut Soup) to West African plantains to As Efo Tete (Yoruban "greens" which amusingly means "we have money still for fish")--and traditional foods grilled in the West African style. If you have never had cuisine from Central or West Africa, the content is not unlike what might happen if you crossed "southern" cuisine with Caribbean. For the adventurous, Camille's plates can be made spicy-to-order, which comes less like the Latin America "fire" created when you chomped down on a chili and in a more subtle manner (subtle but extended:) as the heat is established over time. Camille's culinary skills include Western or European talents as well, so it is possible to "mix" orders and provide a meal all will love. There are a couple of wonderful restaurants in the DFW area where you can also sample such menus, but if you want the food delivered to your doorstep in the Arlington/Ft.
