Love them margaritas and the table side guac is always amazing. This is my second time visiting and I don't know how I've never done a review. The jumbo margaritas are always great! I always get the passion fruit and they are huuugggee. The carne asada was really great and everything on the plate was so filling, huge portions. Our server was Rosa She did an excellent job coming by the table and refreshing my guests soft drink and chips and salsa without being asked My guest ordered 3 soft shell tacos with rice and beans and side of sour cream $16.99 I ordered the lunch version of texano fajitas - although it was lunch I was expecting a sizzling platter of steak, chicken and shrimp fajitas- instead the ingredients were on the plate with rice and refried beans- 2 soft tortillas wraps - wish there was a 3rd - I though the steak was dry- the shrimp I liked $15.95 I also had a small Ultimate margarita $14 -they offer a large version as well Over all the meal was good - read more

We've gone here for years and the servers are wonderful everytimy someone is sick they alaways ask. When we don't show up for awhile they get worried and we've been busy so it really shows. Food is alaways the same and alaways consistent and really good to eat. they even asked if the new menu was up to our standards and it really is it's authentic. I ordered a small steak Fajitas which cost $22. I usually order chicken but had a desire for steak this evening. This was the worst decision I have made in years at any type of restaurant. The steak was so tough and chewy that I had a very difficult time chewing it and was afraid that I was going to choke because I couldn't break down the grisly pieces of meat. If they continue serving such a low quality of meat, they will go out of business. Pathetic! I actually struggled to eat this meal and will never come back again. I ate at the 20 seat bar with only 3 others and the bartender never checked in to ask how I was doing. I left without finishing my dinner. Beware of this restaurant. read more

I was hungry for some Mexican food. There is very little Latino influence here in Bellingham. People are very nice - just not a lot of Meccan food. So I'm trues this place. - the initial impression was very positive. The place was clean, well decorated and ha the cutest hostess at the door. I said - all good so far. Then I ordered what I wanted - which was not on the menu. To my expectation - she said that f course - we can certainly do as you ask. I was very pleased with what I ordered. Two chicken tamales with homemade mole sauce and white cheese. I asked for two with beans and rice. I was very happy with the plate. They also gave me chips and red salsa. The chips were thick and crispy. The salsa was not warm, and lacked any spice. It was fresh, but had no fire. Overall - very good. I will come back. read more

The bright spot was the service. Everyone was very helpful and attentive! Kudo's to the team for fighting through a tough night for me. First, the house marguerita is maybe the worst I've ever tasted. No taste of tequila or even lime for that matter. Nor sure what's actually in there for $16.99. It didn't look like or taste like any marg I've ever had. The Ultimate (without OJ) was much better for the up charge. The Three Amigos special was awful. The pork was not in a salsa verde, it was sitting in its own pork fat. The steak was actually half chicken chunks half chicken fat chunks. The chille relleno with ground beef was actually ok. I don't know who was in the kitchen tonite but it must usually be ALOT better than it was tonite. read more

"Wow, you guys don't mess around!" I told the waitress when she came over with my margarita. It was HUGE! And really good. The waitress then told me that I should wait till I see the food. And she was right! All four of us were very satisfied with our meals and I even had a full meal for the next day. The waitress wasn't Uber knowledgeable about the menu which wasn't a big deal to us expert Mexican eaters but might be a problem with those less well versed. 4 years since last visit, unfortunately this will be the last ever. Went on a Sat night, got seated promptly, and wondered if the place had changed. Well .. walked by the fresh quac cart which was messy and not clean in the back, matched by the table and laminated menus which had sauce on them. OK, well, this was starting to match my past memories. Next onto drinks - I saw they had 3 extra premium tequilas featured on the menu, no prices. Had to ask the server who was not familiar with any and had to leave to go ask. Came back and told us the top one was $60, the second one was out of stock, and didn't ask about the 3rd. This is not the kind of place to feature ultra-premium liquour IMO but ok .... went down to their large list of more common tequilas, chose a Cazadores Anejo and risked the fresh quac. Server left again. Came back, and they were out of the Cazarores. OK, I dropped back to punt, ordered a Grey Goose Martiny. The guac lady came by, got a nice bowl and tipped her. And up to this point, no one had put napkins or silverware on the table. Didn't stop us. Server came back a third time and guess what? They were out of Grey Goose. Now - I've never experienced a bar being out of GG. But even worse - not 50 feet away was an OPEN liquor store where any staff could easily have restocked this - even at retail prices - and re-sold it at a profit. I bailed on drinks altogether. My wife had one of their typical humongous rail margaritas, which I noted almost every other table had as well. Though the guac was good, the entrees were greasy and left us both feeling bloated. We quickly signed the check and left. Only to later discover that the place charged me for the Cazadores we never got. Had to call the manager and ask for an adjustment. This was, front to back, just an awful experience with matching food. Not sure why it's still in business tbh, and looks like we need to go back to Acapulcos or find another better mexican place. (For the old timers in town, we still miss greatly the days when its predecessor was located in Diamond Hill road in Woonsocket, and the food and service were good, as was the occasional mariachi performers!). read more

I keep thinking this place will change so I give it another try because it is close by but sadly it disappoints every time and it the same poor standards of food, high prices and just terrible service all around. This will be the last effort I will put into this nasty place. The food here is below standards and is much like frozen gas station burritos and tacos. The only good thing in the place is the chips and salsa, (which is watery and also tasteless) you get to start, even the handmade guacamole is horrendous. The service is hit or miss and they are consistently clearing off tables around you and mopping the nasty floor to make this even an ideal place to enjoy. If this was 2 years ago, I would give this restaurant 5 stars. This place you to have incredible food and service, but has gone downhill. Food times now takes incredibly long and waiters come by every 30 minutes. Chips, dip, and corndogs are still good though. read more

I love Mexico and I had a great meal ! This is truly a family restaurant and at 8 pm it was full on kids at the table. Kiobel was our server and she as amazing. Friendly and asked if we had allergies and explained all our meals. She got both our orders perfect and the steak was RARE MEDUIM and that never happens .... lomillo con camarones and the shrimps were great size ! I love the black beans and rice. Have been here in the past; most recently over the weekend and it was fair. Very busy so the server wasn't super attentive but it was completely understandable. The food however was disappointing. I ordered the enchiladas poblanos... the temperature of my plate was as if it sat inside a volcano so I knew it sat under the heat lamps for FAR too long - unfortunately the lamps only heated up the plate because my enchiladas were barely warm. Also the sauce was sickeningly sweet... nothing like a mole I've had at authentic Mexican restaurants. While my pina colada was refreshing, there was barely any rum - if at all. Overall, very disappointing. Thankfully the others I was with liked their dishes, because I was less than thrilled. read more

Colorful and fun Mexican restaurants & bar in Bellingham. Large bar area with comfortable stools. Margaritas come in different sizes. The large is huge and enough to share. Had dinner and drinks on a Saturday evening. Got on the waiting list which was 15 minute wait for a table, but two bar stools opened up which is what we prefer. Shared the Vallarta fajitas for two but was enough for three or four. Fajitas was a combination of shrimp, chicken, beef and Chorizo covered in melted cheese. We were the first wedding Sol de Mexico had ever catered. We were also the first event of 140 people they had ever served. They did absolutely amazing! Everyone loved the buffet style food they provided, and services of cleaning, filling water, and serving the food! The staff was friendly and helpful. Brenda, the manager, was amazing throughout the whole process! Her and I had good communication to make sure everything went as planned. They put a lot of resources into this event and ensuring it worked out properly. They are such a great staff and restaurant. It was my husband and I's first date spot and they graciously agreed to cater our wedding knowing they had not done that before. We are so grateful for Sol and their AMAZING food. We love Sol and would recommend the restaurant to anyone and their catering to anyone! They did great! read more

We had been to the old Plaza Mexico several times, but tonight was our first time at the renamed Sol de Mexico. I think it might be the same owners, and the place looked the same, but the result was a disappointment overall. The night started off on bad footing when my wife and I ordered pina coladas. There was no cocktail menu on our table, so when the server casually asked "small or large?" we didn't think twice and both ordered a large. I figured it would be like ordering a large milkshake or coffee or something. When they arrived, they were HUGE. As in, EACH of them could have served 3-4 people. I would have expected the server to indicate that the larges were for sharing, and when we got the bill they were listed as the "monster" pina coladas. We had no choice but to pay the $20 price tag per drink, and I'm disappointed that the server did not give us a heads up. We each drank MAYBE 20% of ours, and the tables around us were getting a kick out of our struggles (we were chuckling ourselves at the absurdity). Both my chicken fajitas and my wife's Mexican burritos contained grilled tomatoes, which were not listed and are frankly a bizarre ingredient in both dishes. To me, the menus should accurately reflect the major ingredients. My fajitas also had a chicken bone which was unfortunate. The chicken was also sautéed instead of grilled, which was a tad strange. The taste of our meals overall was fine, as were the chips and salsa. We were seated quickly as well, so these few things make for a 3 star review. I'm not sure we'd go back. Maybe if friends wanted to go, but I imagine we'll think twice before eating here again. Not gross by any means, but we left feeling unsatisfied and considerably poorer. read more

I love Sol De Mexico. I have been coming here frequently for years. The drinks and food are usually very good. However in the past few months the service and quality have degraded to a horrible point. I get it. Everyone is understaffed, life sucks for everyone and inflation is running rampant. However when i'm coming out to spend 100+ for my wife and I to be able to eat and have a beverages I do have some standards that I hope are followed. In May we came to eat here. Both of us got the fajitas. They are usually amazing. There was something off about it. The green peppers were still fresh and uncooked. One even had a produce sticker on it. The beef was flavorless. There was no seasoning used. It happens I understand, people are rushed and there is a severe labor shortage. Had them take them back to fix and as usually it only takes a few minutes for the food to come out we were shocked when the waiter brought us our bill about 20 minutes later. He seemed as confused as we were. They eventually took the fajitas off the bill since I never really got to enjoy them (they did not fix them and I just wanted them to be fixed. You know like not having uncooked peppers with stickers on them in our meal) Anyways I was here the other day. Service was absolutely absymal. There was 5 of us. It took almost a half hour for our drinks to come out. The waiter then disappeared. Came back 20 minutes later and we put our food and additional drink orders in. Our food came out. Everyone complained about there was no seasoning and the food all seemed very undercooked the waiter never offered to make it right or anything. Typically if you have 5 people with full plates of disgusting food you would go grab the manager or someone who could rectify the issue. Our second round of drinks never came as well. Paying was a hassle as the waiter must have been very green. Between 5 people we got 7 bills. We paid them but one person never got there card back. She went inside and they told her "no we don't have your card" It was a back and forth and for some reason another staff member had her credit card.........pretty bizarre if you ask me . To add insult to injury everyone got violent food poisoning after. Like praying to god, asking for forgiveness food poisoning. Personally i'm never coming back to this place. read more

I have been a few times and each time I got a combo which seemed thrown together quickly. The cheese in my chicken relleno and enchilada was not melted on my last visit. However tonight I had the Sopa de Tortilla with a side of beans & rice. I also added a side of sour cream and shredded cheese (to top the soup). It was supposed to come with fresh grated cheese, but maybe they forgot. At any rate, it was the BEST! Full of fresh chicken and loaded with veggies, topped with fresh avocado. It was enormous and served as my meal. The broth was flavorful and I thoroughly enjoyed it. I also ordered a margarita flight. Pick any 3. I had coconut, blood orange and Carribean. Beautifully presented and delicious. I'll definitely get the soup and the margarita flight again (soon). read more

I gave this a 5 star review awhile back. Went tonight and not sure what happened. Salsa tasted watered down. No IPAs on tap. The quality of food went down hill. I ordered the fried shrimp chimichangas and it was good, but not like in past. Husband ordered the beef bowl with steak. He ate about half and said the meat had no flavor and the other items in bowl also lacked flavor. Service was good, but we were the only ones there for a bit as we arrived just before 5pm.
