I…read morecould have gone to any of the other seven or so food trucks lined up next to it, but my belly was telling me it was a Cajun food/fried seafood sort of day. Best decision ever, belly! The shrimp basket was out of this world: eight jumbo fried shrimp served with texas toast, french fries, and pickle slices. I got some ketchup packets for dipping purposes, but they were ultimately useless because the spicy tartar sauce (?) that was included just owned everything. And the shrimp... likely the best I've had in my life. Those plump crustaceans were enrobed in the lightest coat of batter and fried to crispy perfection. The only downside to my meal was that the pickles were buried under the fries, causing some loss of crispiness to two fries. But I don't think this will prevent me from coming back, as all of the other fried goods I saw people getting looked equally amazing. Maybe some fried mac and cheese next time... And as a side note, props to the service. Before placing my order, I was warned that it would be a fifteen minute wait. Although this, plus ~10 min, is expected of the Klyde Warren food trucks (in my experience), I think that forewarning your customers is one of those small but considerate gestures, and completely necessary. So I took a seat at one of the nearby park tables, while customers of less considerate food trucks paced deliriously back and forth before me, checking on their orders every five minutes and totally exacerbating their hunger pains.

I'm so glad I walked all the way down to the end because there sat the Lab Food Truck, the name kinda of threw me off because I saw flames but had no clue what goodness was on that truck. First thing that caught my eye was poboy I love a good poboy and my decision was made, plus I had the option of spicy or regular? Well give me spicy. The portion was really a nice size for a food truck. The serving was comparable to any sit down restaurant and the flavor exceed many sit down restaurants as well. When they handed me my sandwich I hurried and walked back to my table protecting my sandwich from all the canine sniffing noses. That poboy was wonderful it was fresh shrimp and oh so spicy. The bread was buttery and toasty. The remoulade sauce was tasty but not even necessary. The fries were standard but it was all about the poboy. I cannot wait to try other offerings from the Lab Food Truck, one of my friends arrived late and she went and got the same thing and neither one of use were disappointed. This is a must try again.

No hype, no long lines (yet), just seriously impressive plant-based cooking that delivers on every level. I discovered Hop Boy's while searching for a true vegan burger during a short trip to Dallas. As usual, most spots offered a vegan patty paired with non-vegan toppings, which can be frustrating. Hop Boy's stood out for being fully vegan, offering both burgers and sliders. Despite having limited reviews, I decided to take a chance and it paid off in a big way. The truck is located in a shared lot with a local brewery, with plenty of parking and a relaxed, welcoming vibe. At first glance, it's modest and unassuming but the menu tells a different story. Beyond burgers, you'll find items like a BBQ link sandwich, vegan steak chimichanga, sliders, house-made drinks, and banana pudding. Since I was only in town briefly, I went all in: smashburger with fries, chimichanga, BBQ link sandwich with potato salad, and a watermelon hibiscus drink. The BBQ link sandwich (made with beyond sausage) was outstanding. The sauce leaned slightly sweet with a smoky depth and tangy finish, all served on thick Texas toast that held everything together perfectly. The potato salad deserves its own spotlight rich, flavorful, and easily one of the best I've had, vegan or not. Every bite felt intentional and dialed in. The smashburger was just as impressive: two perfectly seared inpossible patties, grilled onions, house sauce, and a soft vegan brioche bun. It hit all the right notes savory, juicy, and balanced without feeling heavy. Then there's the chimichanga, which might be the sleeper hit of the menu. Stuffed with seasoned beyond steak, rice, and layered with both a spicy and creamy avocado sauce, it was crispy on the outside and packed with flavor inside. And the banana pudding? Next level. Instead of traditional nilla wafers, they use Biscoff cookies, creating a dessert that's rich, slightly spiced, and completely addictive. It sets a new standard not just for vegan desserts, but desserts in general. Even the watermelon hibiscus drink stood out refreshing, vibrant, and the perfect complement to the meal. While I took my food to-go, there's a great outdoor seating area with picnic tables, greenery, and a laid-back atmosphere that makes it easy to hang out and enjoy your meal onsite. Bottom line: Hop Boy's Kitchen is a must-visit for anyone seeking exceptional vegan food in Dallas.
