I have been meaning to visit the Pueblo cheese shop for years and finally stopped in today. My friend and I both got a sandwich which was good. Mostly meat and cheese focused, so I was missing fresh veggies, but I understand why they keep the ingredient list basic. The shop itself is very clean, well organized and with lots of different cheese selections as well as other items that go well with cheese. I have had their cheese before from other local business and am excited to try the new ones I picked up today with my sandwich. Great little treasure in Pueblo! read more

Springside cheese is the creamiest delicious cheese I have tasted in a very long time. Their mail order service is awesome!

Tried the Pastrami Crunch sandwich, the special of the week. One of the best sandwiches I've ever had! What a great combination of flavors and a deal for less that $10! Well worth stopping in. Also some great cheeses from the shop. A must try is the Pueblo Chili cheese curds! read more

My sister in law has been telling us about Springside and we finally made it in. All I can say is, what took us so long? We were looking for a specific "stinky" cheese, which they didn't have, but hooked us up with something even better. The guys were so friendly, even made us a mini cheese board to try some different varieties they carry. They were really knowledgeable about the various types of cheese, telling us where and how it's made. We like to support small businesses and small family farms. Needless to say, we left with about six different types of cheeses, none of which we would have picked out on our own. The only caveat to the review is that we visited on a Thursday, after the holidays, around 3:00 so it wasn't their busy time. We look forward to going back and trying some of their sandwiches. A great, small cheese shop near downtown Pueblo. Their selection is small, but thoughtfully chosen so there's a good variety to choose from. The prices on their brand of cheese are fantastic and the international choices are competitively priced as well. The service is very helpful and they offer samples if you ask. The only negative I can't think of is that it isn't near my house and I'm rarely in Pueblo. read more

This is a great cheese shop, especially for Pueblo. They are super helpful, and have great recommendations. It's odd to me that someone would complain on here about their selection being spare... you gotta think of the clientele in Pueblo, you want them to overstock to end up having to throw things away? You can tell them what you're looking for and they'll give you a call when it's in. Comments like that is why businesses don't thrive, because you're a once a year customer and refuse to go back instead of saying "hey this is what I'm looking for, give me a call when you get it in." I'd rather have rare, quality cheeses than bulk cheeses that you can just buy at king soopers. Customer for life. (Horseradish,chive cheese is a favorite of mine. A small business with big heart! Today was my first visit, and I was blown away! We sampled different cheeses to pick what we thought best, and I will say a few tastes surprised us! (Apple cinnamon and chicken soup) Everyone was courteous and friendly from walking in the shop until we left. No question was unanswered! We were pleasantly surprised to see they also served sandwiches, and I have to say, they are just a good, if not better than the cheese! I will say they have made a customer for life, and I can't wait to see what new combinations of cheese and pairings they come up with on my next visit! read more

Cute and cozy cheese shop located inside a beautiful brick building. They offer a large variety but we were mainly there for the cheese curds. We got 3 different kinds: plain, jalapeno and another spicy type that I forgot. Sadly, they can't compare to the fresh squeaky cheese curds that I got in Wisconsin. They're pretty good though. I think I just had higher expectation for this place, since I've been on a quest to find "the perfect cheese curd" around CO. Overall, I love how more and more of these cute, artisan, mom&pop shops like this have been opening in Pueblo. Also, if you're looking for something to pair with the cheese you got, look for the wine shop right across 5th street. read more

This store should be on everyone's "Things to do in Pueblo" list. The store is spacious and modern, while being cute, warm, and homey. The prices are reasonable and the selection is fairly vast. Many of the items seem unique. I would imagine that this is the only place in the world where you can find Pueblo Chili jack cheese. For those who do not know what a Pueblo Chili is; it is a green chili grown in Pueblo County just east of the City of Pueblo. The chili was developed by a CSU Ft. Collins ag guy and the local farmers. The Pueblo Chili puts the Hatch NM green chili to shame. "nuff" said. Having the friendly owner of the store ring us up was icing on the cake. Very cute shop! There was a pretty good selection of cheeses. A good selection of meats to go along with the cheese for nice pairings. It is a gem for Pueblo and my husband and I made a point to visit because we live in the Springs and were already here for the chili festival. Selfishly, I wish they were in the Springs because my favorite specialist cheese store is in Breckenridge. I think they would make a killing in downtown Springs. They had a very nice sitting area with a table and chairs that made me wish they had a wine license for cheese and wine pairings! Overall, very helpful and friendly staff and great selection. I stopped into Springside Cheese on a Saturday afternoon about hearing about from a food critic last summer. I live in Colorado Springs so I don't often get down to Pueblo, until recently! I can't explain how impressed I was with Springside Cheese. You may be asking what credentials I have to be reviewing a cheese shop, let me fill you in. I grew up in the heart of Wisconsin and our cheese selection growing up was ONLY purchased at our local cheese factory. We almost never purchased cheese in a grocery store. When I moved to Colorado I really began to miss and have intense cravings for good cheese. Colorado folks don't even know what that is! The staff was very friendly and it seemed like it was run by a family. They really treat you well when you walk in the door. They offered up sample of cheeses and asked about our weekend while we browsed. I picked up some black pepper cheddar, cheese curds, aged cheddar and spreadable dip. All of the cheese was delicious! If you're looking for good cheese, and I mean good cheese, Springside is where you need to go. This is the closest slice of Wisconsin I've found on the Front Range. I will be returning over and over to get my cravings filled. read more

This place is Top Notch! The varieties of cheese is wonderful. You have to try the Pueblo Jack. It is the best cheese I have ever eaten. The cheese mongers are very friendly and helpful, especially Stephen. He usually goes out of his way to help you out.
