I'm a huge fan of eggplant Parmesan, but the carbohydrates of pasta and I are not friends. The bright waitress suggested I substitute broccoli which arrived bright and fresh perfectly seasoned. What a blessing. It encourages my heart that Yuma has such a nice selection of restaurants that are prepared to meet the needs of not merely our residence, but travelers for whom these businesses are convenient to the freeway.
