A truly hidden gem. On the way to the airport, we stopped for gas and realized we were hungry and saw this tiny taco truck parked in the back corner, just opening up for the day. While not much to look at, we thought, what the heck, it could be good, having tested many trucks in other cities... Oh man it was! What wonderful surprise to find a great Mexican taco/torta/burrito truck in the middle of nowhere. I had the Burrito con Asada, sin arroz, with a chopped Jalepeno mixed in. The Asada was full of flavor, not too greasy and the burrito was packed. With the addition of the homemade salsa verde and salsa roja, it was reminiscent of great burritos I've had in Los Angeles. A definite 5 stars. My partner had the Quesadilla con Pollo thinking it might be lighter but beware, it is a meal. Delicious but filling and oh so tasty with the accompaniment of the homemade salsas. While mozzarella isn't quite the same as queso blanca or queso fresco, it worked well. Seems some traditional ingredients are perhaps hard to get in this area. The menu covers the essentials (Burritos, Tacos, Tortas, etc.) and with mix and match choice of protein, it should cover most every taste. Options include bowls for those that want to forgo the delicious tortillas. Overall, a great find. Next time I'm in Burnsville or surrounding environs, I will be sure to hunt this place down. I've seen Tacos Tacuba food truck in Burnsville many times with super long lines even during a pandemic. Finally, I decided to try it upon recommendation. What a great decision! Everything is made to order of course they have a few specialties but the most popular is their quesadillas and volcan. I tried 3 tacos- cochinto pibil, chorizo and chicken definitely get the chorizo! Make sure to get the volcan with chorizo! read more

I can guarantee that every single person has their own favorite taco place. I can also guarantee that debating where to get the best tacos in the Twin Cities is as heated as the 2020 debates. While I can't say that Tacos Tacuba has the best tacos in the Twin Cities, I can say that they do have some pretty damn tasty tacos. Since it is a food truck, the menu is pared down compared to a brick and mortar location, but that doesn't mean that Tacos Tacuba skimps on the pure variety of their dishes. From tacos, to tortas, to gringas, to gorditas with prensado de chicharron, Tacos Tacuba really does feel like authentic Mexican food from the streets of Mexico City transplanted to Burnsville. I tried their gorditas de prensado de chicharron, which was pretty tasty but not really my style. I do love tacos though, and their tacos were amazing! I tried the chorizo, the asada, the al pastor, and the cochinta pibil. They were all flavorful and huge, and generous for the price! The chorizo in particular had a really nice sweet smokiness that I hadn't found in other chorizos. There also aren't too many places that have cochinta pibil, which is a slow roasted shredded pork seasoned with a variety of spices. Tacos Tacuba did it so well, I'm tempted to go back just for the cochinta pibil. They also provide green or red hot sauce, and the hot is HOT. I'm talking sweat down your brow hot. The tacos do come with some raw sliced beets, which I guess if you like beets, it's great? I could do without. The staff are super friendly, and they work to get your order out as soon as possible. You do have to wait, sometimes up to 30 minutes if there's a few orders in front of you, but you can definitely wait in your car if the weather isn't that good. There are a few stools to sit and eat if you prefer too. Tacos Tacuba might be my new favorite taco spot, and it's a welcome addition to the south metro. read more

This food truck in Burnsville was awesome! The food looks almost like Mexican-American street food but it is traditional in many ways. They also have "tacos de canasta" this is a Mexican cuisine jewel but only on the weekends an it is special order. I have never tried them before from here I would be surprised if they were bad. I'm sure they will be great! read more

How did I not know about this place? Staff are friendly and welcoming even if the location (behind BP) is maybe a little strange. I had the Pambazo with Cochinita Pibil. HUGE for the price, and the taste? Awesome! I will definitely be back to try more of the menu. read more

They catered our graduation party this year. It was a great way to allow better social distancing. They were amazing. They set up a display with canopy. We did the steak, chicken and Pastor meat. It came with all the trimmings. They are willing to change the cheese or anything you like. It was served with 2 types of home made salsa. We had a lot of compliments on the idea and of course the food. The display of the Pastor meat cooking on the rotisserie was neat. I highly recomend them to anyone. Try them out in their truck in Burnsville first. This is how I found Jonathan. He is easy to work with. We have had two other friends already ask for their number for a party. Oh, you get to keep all the leftovers. The only thing I bought was few bags of tortilla chips and Picante sauce. Only because I love picante sauce. He supplies everything. read more

Great food, hands down some legit Tacos. This is now our favorite Mexican spot in the Twin Cities. We were driving looking where to eat when we saw the truck and decided to stop and try it out. Loved the food, tried three tacos Al Pastor, Asada and Cochinita Pibil. All three were great, full of flavor, fresh, perfect temperature and made on the spot. The staff was very friendly, it helped that there was no line when I got there so we had a little conversation about the menu and my visits to México. We will definitely return and update the review once we try other items tema in the menu like the Volcanes, Burritos and Costras. read more
