I didn't like the more western take of the bao, the buffalo chicken dip bao. It came piping hot in thin cardboard takeout boxes. There's a long line to order and a hallway for you to wait for your pickup order. There's a decent number of tables and a few window seats. Very busy though. Another place I wish was around when I was at Auburn. Both types of baos I ordered were pretty true to traditional baos. Pork (brisket in one of them? I cant remember), soy, sugar, sesame, fluffy and warm bun, sesame seeds. Those were the vibes. And those alone are enough. I understand they have some untraditional baos, like Nashville hot chicken or hot tofu. Would definitely like to try those at some point, and I applaud the creativity. I'm not opposed to different combos of meat and flavor inside a bun as long as the more traditional stuff keeps its place on the menu. Stopped in for a quick bite and honestly didn't expect much beyond good food--but shoutout to whoever hired Hampton. It's a counter-service place, so you order at the window and wait, but while we were hanging out, Hampton came out from the back just doing a lobby check or something... and dude was awesome. Super chill, really friendly, cracked a joke, and made sure everyone was doing okay--even though that's clearly not part of his usual job. Just felt like he actually cared, and you don't see that a lot these days. The food hit, but the vibe? That was all Hampton. Irritable Bao, despite the less-than-appetizing name, is a great spot to pick up lunch if you are in Auburn, and it is something a little different in a town overrun with chicken tender restaurants. A definite win. Here's how my visits have unfolded. The place is small, so it gets busy seeming quickly. Despite that, the line moves pretty fast. I always anticipate a line. You should too. I usually check their Instagram ahead of time to see what the baos/rolls of the day are. I appreciate that they have an ever-changing menu, but I also admit that I find that asset to also be one of its biggest liabilities. I have wanted the tofu curry bao again since I got it in October, but, alas, it hasn't been in the menu on a day I can go since then. Another con, they have very limited days/hours. I get in line usually knowing what I am going to get. Recently, I was dining with a friend, which was perfect. This allowed us to split the pork belly buns (they come in a set of 2) and get a bao each. We also decided to try the dessert (cheesecake egg rolls). The buns were both our favorite of the items we have had there so far. Great flavor. The pickled veggies provided the perfect extra tang. We got a bao with egg and glass noodles. Too earthy for our taste. We also go the Buffalo chicken. Good, but I wouldn't say it was a showstopper. We both enjoyed the egg rolls a lot. Since writing my original review, they have since moved to a new location, about five minutes from their original building and conveniently in downtown Auburn. This new building is much more expanded on the inside, with actual seating to make those long lines much more comfortable. Plus, even getting to the restaurant is much easier with the expanded options for parking that come with the location swap. Overall, this only improves my opinion of Irritable Bao (their only name going forward) as any issues I had were all location related and have been solved. read more

First time Dumpster here and I am a Stan! I have been following their Instagram Page "dumpslikeatruck_irritablebao" since May and watching in envy until I had a day to drive down and indulge. Today was a special day because it was their first day back in business since their vacation. To celebrate, DLAT collabed with some local chefs and offered a special stuffed bao with one of their normal offerings. Each were delicious but the service was even better! You can tell Whitley, his wife and staff enjoy what they do. Whitley says "Bye" to everyone who leaves and comes around to make sure the food exceeds expectations! Okay, let's talk about these Bao's The Braised Beef Short Rib Bao was tender, savory, and hot to the touch (be careful! These baos are freshly made and stored). When paired with the spicy cilantro slaw and the braised peanut sauce, the flavor and crunch sent me in a wave of "yum"! I could taste the ginger, garlic and peppers in the sauce, it complimented the braised beef and enhanced the savory flavor. I was a bit disappointed that it wasn't spicy but I love spicy so I didn't sense it. The Green, Egg and Sam was delicious as well! I've never paired Zucchini and egg but I think I will from now on. The Bao reminded me of a savory quiche, simple flavors but warm and reminds you of home. The Mango Sago definitely finished my meal! It was a sweet end to my experience, it was sweet, creamy and vegan! Lastly, the wood-ear, cucumber and tofu curd.....this was an interesting combo but I liked it! The tofu curd gave the salad an extra crunch and the wood-ear mushrooms were soft and easy to chew! When I think of it, the salad and the sago were refreshing and cleansed my palette so I was ready for more Bao! Cool Tips: The menu changes daily and DLAT always finds a creative way expand the Bao menu with new collabs and flavors. DLAT is located in a college town so the prices are going to be affordable. It's alsways quick despite the long line, and the staff is nice. I especially LOVE the owner. He is a kind person who cares about the community and he's sometimes in the restaurant with his kids. I personally can't think of anything negative to say abt Bao, other than I wish their hours were longer so I could have dinner there lol. I would implore everyone to get Bao at least once. This place is an absolutely fantastic local option for people looking to try traditional Chinese style bao in Auburn Alabama! I had never eaten bao before my wife convinced me to try this place, and I am so glad I did! While the braised pork is my favorite, their buffalo chicken is also excellent and a nice American spin on Chinese cooking. Also, you have to get the dipping sauce, because it adds SO much to the dish. This place is very much a local business; they are only now going to expand to have dine in seating at all, and when I would go by the old storefront for lunch the line was always crazy long(that's how you know its good though honestly, and they made it thru the line relatively quick). Lastly, the employees, especially the owners, always bring an incredible energy to the restaurant, and make it a delight to drop by. This amazing food started out in a food truck with a small storefront, eventually opening up in a great location in downtown Auburn. The owner and his adorable family are precious and give more than terrific food to this community. You have to follow him on Instagram and Snap for menus and inspirational stories! You KNOW it's got to be good to get college students up BEFORE DAWN to stand in line for HOURS to get baos and dumplings. And they ARE that good.
