    ONLINE ORDER + PRODUCT REVIEW Ordered just over $50 for free shipping (for tri-state area only, over $70 for other states). Order arrived 3 days later, faster than expected! A mistake was made with one of the bags. Rice was the right year and area but wrong cultivar, an understandable mistake. Contacted them on the website to inquire about an exchange and waited. It took some time for a response but CEO Satoshi Ito personally replied back! He was away on a specialty food event for a few days (saw on their Instagram stories) so no wonder it took a while! The day Ito-san emailed back, he notified they would mill and ship the correct rice the same day and gifted the incorrect bag, which arrived the following day. Me: O___O Upon opening the box, to my surprise, they also gifted a bag of soy sauce rice crackers with a personalized note of apology! I was shocked. That's a $19 bag of rice AND a $8.09 bag of 9 rice crackers that, while 30% off on clearance at the time, let's be honest, is still not cheap! It was quite delicious and addicting. Because they're such a small business, I'm shocked by their generosity and am touched by it. Free return shipping for an exchange or gifting only something small like the crackers alone would have sufficed, but Ito-san and the team went above and beyond the minimum of what was required and I appreciate them even more for that. If Ito-san and the team at TRF are reading this, thank you all so much! Time has passed and since then I've tried all the rice. 2021 HOKKAIDO YUMEPIRIKA, White: - Does get sweeter and that sweetness expands the more you chew! - More on the slightly firm, chewy sticky than soft, moist sticky side - Oh my, they weren't kidding. Meat really makes yumepirika shine more and vice versa. When eaten, coalesces to enhance the meat flavor! The texture, bite, and sweetness works incredibly well with meat dishes! Eye opening experience. - Personal and family favorite! 2021 TOYAMA KOSHIHIKARI, White: - Grains are more distinct with a crisper and firmer bite than yumepirika but not as sweet - Good with meat as well but doesn't shine as much as yumepirika - Personally enjoyed with stewed Yukon gold potatoes 2021 TOYAMA TENKOMORI, White: - Grains are lightly crisp and a lil more distinctly separate from each other along with a bite while chewing - Still sticky but not as sticky as the previous two 2021 HOKKAIDO NANATSUBOSHI, 50% milled: - Grains are much more distinctly separate compared to the rest above. Drier and not really sticky. - Fragrant and crisp with extra texture and bite from the mill rate - Ended up the best of the 4 served cold as leftovers Yes, they're pricey compared to what's available at Asian supermarkets. BUT... With high quality rice and other imported pantry/snack/kitchen products along with that quintessential Japanese service and the fact that they allow you to customize the mill rate and freshly mill your rice to order warrants at least one store visit or purchase online. Seriously, experience Hokkaido yumepirika at least once in your life. There's a reason high-end Japanese restaurants in NYC source from them. Nancy Singleton Hachisu would approve!     One of my earliest memories of visiting Japan was when my aunt took me to get some rice milled. I was a lot younger so I didn't really understand why we were standing at a vending machine to process rice. Wasn't the ones sold in stores ready to eat? My aunt quickly explained that she liked a custom blend of brown and white rice... this made me more confused. Now that I'm older and know a bit better, i fully understand the virtues of great tasting white rice. When I first heard of The Rice Factory from EaterNY, I knew I had to visit. Although it is a bit far from New York City proper, I knew it would be worth it. I finally got a chance to visit and Rice Factory is a chef's paradise. The Rice Factory has each available rice on display with a note on which prefecture the rice was harvested from, the year of harvest, and a blurb on tasting notes. When you pick a rice you also get to pick the milling ratio between 0-100% (something my aunt would love). After I picked two different options, the clerk went to the back to fresh mill my rice. The entire process took less than five minutes. I particularly like that the employee I spoke to was really knowledgeable and was able to answer all my questions regarding the process. Being a foodie and amateur chef I love specialty stores like The Rice Factory. It's clear to see that the people behind the Rice Factory are very passionate about what they do. I highly recommend making a trip to visit this unique and interesting store!
