Every time I come to Everett, I find something new to enjoy!…read moreThe Colby Club is my latest find. The revitalizing Everett downtown offers an increasingly impressive selection of restaurant and drinking choices. The Colby Club is one of the best. Presented as a "Speakeasy ", it is not in any way hidden away, but strives for the '20s vibe, with period furniture and decor. The staff are friendly, knowledgeable, professional, and helpful. Our Bartender, Mark, was exceptional! Watching him craft our cocktails was a show in itself! Delicious cocktails well crafted and presented. We're looking forward to our next visit!

Omg, okay so Friday night date night, first Friday of the month, which apparently matters (more on…read morethat later). We roll up to the Colby Club in Everett, and honestly? I thought it was closed. It's dark outside, no sign glowing, kinda mysterious in a "do we knock or...?" way. But we slide in and BAM... disco lights, disco jams, and staff dressed straight out of the '70s. I was instantly vibing. We snagged a table facing the crowd because obviously I live for good people watching. Our waitress, adorable and super sweet, suggested I try the Lavender Flip, and holy moly it was amazing. Like floral, creamy, cozy perfection in a glass. Hubby got some cucumber-whiskey thing that looked so fancy I had to steal a sip (and yes, it was as good as it looked). Food-wise, we split... he got the charcuterie board (solid) and I got the bacon-wrapped dates, which were basically tiny bites of happiness. Just enough to snack on without ruining the drinks. The whole vibe? Chef's kiss. My husband actually said, "This is my perfect place," and he's not wrong. Chill lighting, funky crowd, killer playlist, and that sweet spot between classy and relaxed. Only hiccup, it took forever to get our check, but to be fair, it was packed and our waitress apologized about a dozen times. Then I find out Everett does some big "First Friday" thing every month, and Colby Club goes all in. Disco night and all-night happy hour. Like, what?! Unreal. Definitely coming back on a regular night too, just to see what the "normal" vibe is like (if it's ever normal). 10/10 for date night energy, people watching, and cocktails that make you wanna dance under a disco ball.

If you're in the mood for a basic place where they do everything right, you can probably round up a star. In long This has been at least one other sports bar, and you might be surprised how big it is inside. There's a decent amount of parking, and a ton of reliable places to eat also surround this lot. I came in to check out Husky hoops yesterday afternoon, which nobody around here was showing since it was on a streaming platform. The place was empty when I showed up 'cause it was way between lunch and dinner, so I got to chat with the cool bartender a bit. She had already scoured their channel guides to see which local teams she'd be able to show, so we shared a cheerful grumble about how you can't just get one subscription to cable anymore and see all your teams' games. I didn't get the sense she was a sports dork like me, so she was doing this so she could do a good job at work. I like that!@ This place from the outside looks like it might seat about 25, but the reality is that it's several times that big. Dozen pool tables scattered around, plenty of room for everybody to line up shots. Couple dozen TVs. Huge horseshoe-shaped bar going from the middle of room to the back corner, lots of stools. You can see a few nice choices for spirits here and there. Full bar for sure. Beers are a little on the industrial side, probably no wines. She mixed a decent old-fashioned for me, but asked multiple questions about how I liked it. I really loved how detailed she was with everything--which games are on, which drinks they have, how to make them, how they serve their food. She didn't seem like the owner (I don't think) but she knew the whole place like the back of her hand. I had a prime rib dip, which was just the sandwich you want when you can have a little cheat. Good chewy onion rings that didn't pull apart after one bite--you get batter and onion, both, every time. Jus was good, meat was tender, bread had a nice chew to it. The chef puts his name on at least one dish, and the bartender went on about how much scratch cooking he does. I asked if she recommended something specific, and she rattled off half the menu. This is definitely a place where you can happily eat during the game. I was out the door with a meal and a drink for under $30, which is an amazing value these days.

I can say we were all pretty disappointed in this place. The staff was the only positive that we took away from this experience. Both servers that we encountered were both kind and attentive. The drinks and food however totally missed the marks. We all started off with drinks 2 margaritas, a gin gimlet and a beer between the four of us. The margaritas were terrible, like I am not sure how they put them as a feature drink. They had zero jalapeños and also offered no spicy margarita whatsoever. My wife's gin gimlet tasted like straight up lime juice. All were complete misses. Next we moved on to the food where each couple ordered a dozen wings. The X's and O's( fries and onion rings) and we also ordered a wedge salad. The wedge salad came out and idk how it was marketed as wedge when it was a bowl of salad completely engulfed in dressing(closer to soup than salad). Next the fries and onion rings came out and I'm not usually a stickler for what things cost, but $17 for like 6 onion rings and a very sad plate of fries. We expected a bit more for what we ordered for the table. Lastly the wings. While the flavoring of the wings were good, they came out not too warm to the touch and biting into them they were cold on the inside. Concerned that we may get sick from uncooked meat they assured us that they were precooked and just dropped into the fryer to finish them off. To me it is concerning that though they were precooked and still missed on hearing them all way, you may need to have a chat with your kitchen. Both of the servers were on top of it and ran both dozens back to have our order recooked. Second time around they were hot and crispy with good flavor(although the garlic boom boom wings were missing one of the sauces the second time around). It didn't matter, we ate them and paid. Not sure we will put this on our revisit list. Maybe the burgers or flatbread were the way to go, but out of 3 menu items and even the drinks.... There needs to be much more effort to everything here...
