John began by saying that Roll'os Food Truck is located at 114 South Main Street in Seymour. We had our traditional dog - mustard, onion and chili. Grilled bun, dog was grilled, but right on! It was a Hummel Bros. Chili was fantastic - had a lot flavor to it. Not as spicy as I would have liked, but it was really good. Garlic in that... GOTTA HAVE IT! John went with an 8.5 on this dog and he said it was really, really good. I chimed in saying that this place was cool and it was not what we originally expected (actually anticipated a different truck being parked in the same location). They have only been open for 5 weeks, but believe me, this place is worth a visit. I really, really enjoyed this joint. Home made chili...and I mean 'home made' like Joyce (the owner) made it this morning. The chili had beans and garlic in it (along with meat). The garlic was awesome. The potatoes were delicious - it was actually the only thing I ended up eating at my wedding, running around I didn't have much of an appetite but a veggie potato was perfect for me and so delicious. My husband loved the flavor of his too. He noted the menu was great too, listing out how much time each potato would take and they were so efficient. We got lots of compliments from guests for the potatoes and everyone said how nice the servers at each food truck were. I also appreciated working with Jared, he was very kind, communicative and flexible (I was also very impressed he remembered what my potato order was the next day!). Total hit at our wedding, and I only hope I can come back to Connecticut to find his food truck again soon. Highly recommend!!
