The perfect pairing! Type of cuisine: Espresso and other beverages, a small selection of pastries, including bagels, cinnamon rolls and the like, and access to the entire Daisy Cafe menu. Ambiance: A two-in-one spot, where The Daisy Cafe takes one side, bright and complete with kitchen and bar seating; and The Union Coffee Shop takes up the other side, dark and complete with mega barista station. Both sides offer table-chair set-ups for patrons wishing to dine in. The atmosphere is casual, laid back, clean and very Bellingham - cozy, artsy, quaint and friendly. Despite being downtown, the Coffee Shop feels like a neighborhood spot, where you can walk in and know your barista and the faces seated about. What I ordered: For our children, two 12-ounce caramel sauce steamers, a 12-ounce mocha for me and a 16-ounce matcha latte for my husband. Visited on 5-25-24 at 130pm. The baristas and cashier made me and my partner feel incredibly unwelcome. They forgot to make my partners drink, and were rude and impatient while we were trying to order. The coffee, unfortunately, was not good, but the Chai latte was very good. read more

Have you ever walked by something a hundred times and never realized it was there? Then you do realize it's there, so you go in and it's great!? That's my relationship with The Union Coffee Shop. I planned on going to Daisy Cafe, but I wasn't too hungry so I veered next door to The Union Coffee Shop instead. The shop was clean and had a few tables with chairs, which was perfect for my work I planned to do. I ordered a drip coffee and a ham and cheese croissant. The coffee was rich and delicious and the croissant was flaky, buttery, and heavenly. The whole time I was there I was able to get a lot of work done. The wifi had a strong connection and the shop itself was relatively quiet. I'll definitely be stopping back in here in the future now that I know it exists! read more

I entered the Union Coffee Shop after our first visit to the St. Joseph Cancer Center, sad and caffeine-depleted, yet thankful to see 'Espresso' and the too-rare-elsewhere neon sign 'Open' lit. I ordered a Con Panna, thrilled to see it available according to the chalkboard menu. An oasis of humanity, kindness in a cup. I'd never visited the Union before but I had the chance to stop in there a couple of times this week and I really liked it! They've managed to turn the funky-shaped space previously occupied by a gift shop into a warm, inviting coffee shop with nice places to sit, work, and/or study. They offer a large menu of the usual gourmet coffee drinks, plus some yummy-looking sweet and savory treats. Both days I ordered my favorite, a white chocolate mocha, and on the second visit (when I was apparently looking to consume some serious calories) I also ordered one of their savory turkey & swiss breakfast croissants. I appreciated that they took the time to heat it up in a toaster oven, rather than the usual microwave (which leaves things soggy). Instead it was nice and crunchy on the outside, and warm/gooey/cheesy/melty/delicious on the inside. It was a nice start to what was a busy day. I would have preferred a bit more white chocolate in the mochas on both visits, but then again I like things a little sweet! Each day I had a different barista, and both were pleasant and friendly. This location also offers the full menu from the neighboring Daisy Cafe, as well as free wi-fi. What isn't ample here is parking - but that's pretty much par for the course in downtown Bellingham! read more

I'm not sure what type of shenanigans were going on last year, but as of spring 2014 Union Coffee Shop is an awesome cafe! I work nearby and it has become my go-to coffee shop in the the morning. They have 2 varieties of AMAZING cinnamon rolls, depending on which day you go: apparently there are two different bakers who make them, each with a different recipe. The coffee is A-OK and fairly priced: for less than $5 I get a medium coffee and a pastry, smiley service, and the satisfaction of buying from a local business owner instead of Starbux or other big franchises. To address some of the other reviews: if they have slow-service issues, it is not in the morning before 8am, and if they have distracted or rude employees, those people don't work in the morning. As a newcomer to Bellingham, I felt very welcome thanks to the earnest friendly service these baristas dish out along with caffeine and baked goods. read more

We ordered their version of a frozen mocha (hot day) and so glad we did. Dark chocolate but not too sweet. One was plenty for both of us. THIS little gem!! Super convenient on the lowest level of the Magnolia Building and adjacent to the Daisy Cafe. I shimmied into the back corner with my main Bellingham babe, Jennifer J, to talk about work shenanigans and get caffeinated. As I waited in line for my drink, the man in front of me purchased the most delicious looking cinnamon bun - sort of resembled a pop over actually but I was VERY temped to get one too. He said they were delicious and that he got them regularly. I passed, as I know myself and would get one EVERY TIME I WAS IN TOWN if it was as good as he said. Anyone care to take those calories for the team and tell me if it's true? The coffee itself was fantastic, and the service great too. It's a tiny joint - that serves mostly the building's offices etc. but swing in sometime, I think you'll like it if you sit inside the coffee shops space - and if you eat the pastry I want a full report. read more

They probably have the best chocolate chip cookies in town. I frequently visit just to get them. However, today, the girl was sweeping the floor when I walked in. When I asked for a cookie, she immediately grabbed the tongs and reached for the cookie. She didn't even wash her hands or sanitize.... I was even looking at the broom behind her while I was ordering to make sure she got the hint. But apparently not. I was grossed out for sure. Most of the times I visited, the staff weren't very friendly, hardly smiled. However, the tall guy with piercings on the weekends makes the best white mochas. But everyone should try to greet customers in a friendlier manner. But, I will keep going back for those chocolate chip cookies anyway. read more

The Union Coffee Shop (Next to and owned by the Daisy Cafe) has been open for a month since May 22. 1st Impression: Upon entering this coffee shop the decor and minimalist modern vibe was projected well by its recycled wood, sparse furniture, and concrete countertops. Upon entering the coffee shop next to The Daisy Cafe the place was semi-busy with one couple at the counter. As I stepped forward to order my 'Go-To' (8oz. Whole Milk Double 1 Pump Vanilla Latte) I received no greeting, no 'Hello' just a blank stare. As i started to talk to the cashier the Barista started complaining about the grind and that the shots were coming out too fast. #notagoodsign I ordered my drink and was charged for a 12oz. ~ we later corrected that mistake ~ after a lot of discussion. The couple ahead of me had to get a refund because the drinks were too long in coming, another gentleman waiting for his dopio took two sips and rejected its taste for another refund. My latte was a 8oz semi-warm, dry-poured, sour two shot, improperly stretched vanilla latte. It was more than disappointing. The foam was non-existent after the first sip, the shots were sour and the overall latte was poorly done from start to finish. My overall experience at The Union was one that was un-friendly, bad coffee, and un-worthy of a Bellingham Coffee shop (7 Great Shops with 4 Good shops) that this town has produced. I give The Union Coffee Shop Two Stars ~ its location and vibe has potential but its Barista's have got to know better on how to adjust the grind for a great shot. I know of at least three local coffee shops that train the Barista for 6 weeks before letting them operate a La Marzocco on their own. The Union has been open for four weeks. Here are my ratings (1 - 5 with 5 being the best and 1 the worst) for The Union Coffee Shop: Overall: 2 Location - 5 (Downtown is still the place to be...) Parking - 2 (Its more to do with Downtown and its lack of parking than the Union's fault) Ambience - 2 (Sparse, unfriendly, and not good coffee) Espresso - 1 (The guy I know from other shops rejected the Dopio he was served) Latte's - .5 (Its less than a one ~ the latte was dry, bad, bad shots ~ just bad) Comfort - 3 (they welcome you to stay but don't want you to stay forever) Barista Quality- 1 (We will start from there ~ if we get better I'll be back) Study-Ability - 2 (Pretty busy, not easy to park, outlets by the window don't work) WiFi - 4 (Fast, consistent and named Daisy) That's it for now. I'm a semi-regular here. I come largely for 3 reasons: 1. The superior--coffee-wise--Black Drop has no open tables at which to work. (Sorry, I like Union, Drop's coffee is just hard to beat) 2. I want real food, as they serve Daisy/Sunshine (I can never remember its current name, sorry) Cafe food but are less restauranty, so I don't feel guilty staying to work. 3. I want a matcha latte, as not many of the good shops downtown carry them. I do wish they had *unsweetened* matcha, though. Easier to add sugar than take it away. All in all it's a great shop-- usually decent coffee, great variety of food (pastries or Cafe food), and nice straightforward service. The pastries are yummy and the cafe portions are huge; I always take home half of it. The space is a bit odd. There are a couple tables in the main area, but on weekends restaurant patrons get seated there too. I like the little back room for working, if I can score it, because I can hop on a quick call if need be and not disturb anyone, even though it has no power outlets. When it's not busy, they don't mind if you take a table out in the courtyard either, though that's dark. My only complaint is the wifi is crap. It drops constantly. Of course not their main focus, but I'd spend more money and stay longer if I knew I could count on it. read more

There are a couple things I require from a coffee shop in order to keep coming back. Consistent, quality coffee, friendly service, and location. Union supplies all these things. The equipment is well kept and their grind closely related. I never hear the ear-shattering pitch of improperly steamed milk. So I don't understand why haters are hating. Omg, best coffee I had while in Washington was had here. Barista dude was super nice, and patient with my indecision. Had a hemp milk latte, and it was the most delicious dairy alt I've had. I find the poor reviews below to be inaccurate and premature. I have had *several* very good pastries, interactions, and drinks at The Union Coffee Shop. All new businesses take time to settle into their groove, and then ideally, to shine, and the Union has only been open since the end of May...I'd say they're well on their way to being the best shop in town. First off, hands down, the Union has the best chocolate chip cookies in Bellingham. No other shop (bakeries included) have cookies as good as the "Chocolate Chunk Cookies" served at Union. The chocolate that they use is high quality, Belgian chocolate and there is the perfect ratio of vanilla; they're made from scratch with real ingredients and care. Saturated and just the right amount of chew. Second, there has been some uncertainty (completely understandable when attempting to find your customer base) about whether the Union is serving the full Daisy Cafe menu, and on a day that was extremely busy in the cafe, the barista that served me went out of her way to be friendly and treat us well despite our misunderstanding that there was table service. There really isn't table service, but she made it seem like there was, and cheerfully at that. Third, while they don't have many varieties of alternative milks, they do have coconut milk, and while they are working on being able to consistently have it, they make it a priority to communicate with each other about what people want and LISTENED to what customers were demanding in taking a chance to offer it. Many coffee places in town only offer soy which is extremely limiting and actually one of the most allergenic alternative milk options out there. At Union, I have had dairy milk that was stretched correctly, that was tasty and frothy. I have also had espresso shots that were pulled correctly and NOT BURNED (of course that's about the roast but it's a phenomenon that's almost unique to this coffee shop here in B'ham), and that were made attentively. (I went to the bathroom and the barista waited to pull them until I returned so the crema didn't disappear). The Union is also one of two places to get pour-overs in Bellingham and damn, they are delicious. I think the culture-wide affliction to be critical is passe and boring, a trend that can so easily be explained by doubt and a desire to fixate on what isn't going right in order to further your own identity of being "intelligent," not to mention a reflection of an unhappy person. Yawn. There's a lot that's going right at Union. I, personally will return and tell others to as well. The flexibility to explore what really works that I've experienced there is worth it's weight in gold and they deserve to be supported , but not just out of charity, Union is finding its feet. read more

Suuuuuuuuuuuuuuuper slowwwwwwww service. Did I drag out those words enough? I'm not sure - maybe double them. Seriously, seriously slow. I stood around trying to pay, sat down, got up again to pay when I thought the barista was almost done - she wasn't. Sat down. Got up again when it looked like maybe she was paying attention - she wasn't. Went to the little Mrs. B's Pies stand to order a pie. Took my sweet time talking to the pie girl - she told me all about the options while I stood there indecisively. Finally chose, ordered, and watched her make the pie. As I was about to pay for the pie, my mochas were FINALLY called up as ready. Went to pay for them - and the barista had disappeared from the counter again. The mochas were good - though uneven; one was filled to the top and the other was not. Took them back to the table, then went to pay for the mochas - the barista had disappeared completely. Sat down and started eating and drinking, and a few minutes later noticed the barista had come back, so went up to pay. Seriously. Just take my money, already. The good news - the mochas were good and it's a nice place to sit. And Mrs. B's Pies is great - a little build-your-own pie stand. read more

Barista was friendly and had great composure when dealing with a ridiculous customer. Americano was the best one that I had, visiting 6 cafes, on my short weekend trip to Bellingham. Sweet, thick crema, and a slight nuttiness without any bitterness. From what I have gathered, Bellingham is a town of subpar espresso but this place offers a much higher quality than the others. I'll definitely come back the next time I'm in town but I am glad to be coming back to Seattle. read more

I decided to try out the Union Coffee Shop, despite reading bad reviews on here. Bad decision! We won't be back. I ordered a latte. The shots were sour, and the milk was stretched poorly. Basically, I got half a sip of dishwater-bubble foam, and then a lot of hot sour milk. Boyfriend had drip coffee, and it was absurdly weak. How do you even mess up Tonys drip coffee? That beautiful espresso machine is wasted on baristas who can't even pull shots or steam milk. read more

I have visited coffee shops in the Northwest by the hundred and would say I have a decent idea of what exceptional west coast style espresso is. For Bellingham, the Union is doing it right. The shots are perfectly pulled most of the time and the espresso tastes fresh and isn't burnt, thank god. The baristas and environment are very nice as well. I've never had a bad experience here. And my friends always love it too. They could use a better, less top 40, music selection but that's anywhere.. I would recommend the Union to any coffee loving person, especially people who work in the area and are wanting a place to regular at without huge lines or a crowded space. Something that I think Bellingham really lacks is more sit down coffee shops. Sure, you have the Black Drop but it's a little snobby (however, I haven't been there since 2007) and cafe Adagio, which is delicious but attracts an older, slightly pretentious crowd. I really like The Union because it has a very mixed environment. It has a great atmosphere and the coffee is delicious. They are also very affordable and it's a nice spot to people watch. read more
