Went to this very casual restaurant last night. The "menu" is a large blackboard with seasonal offerings with fresh protein choices with meat seafood and vegetarian. The outside entrance is very rustic, and inside is similar with very austere tables and chairs. Expect to be greeted by the owner and head chef Hai Le Fitzgerald who will also be the guide on your food selection. We had surf and turf with NY strip paired with sea bass, fresh Alaskan halibut and Asian chicken stir fry. Drinks were self-serve at the soda fountain. Don't let the appearances fool you. The portions were large and more important the fish, steak and stir fry were cooked and seasoned expertly. The place has been in business for 16 years and somehow went unnoticed by myself and others. Don't expect a detailed listing of dishes and pricing since everything is listed on the menu as "Market Price". When the bill came it was $175 then added tip, so expect to spend from $40-$50 per person. Might seem pricey, but the quality of the offerings justify the market prices. My buddy and I popped in here for dinner while driving thru SLC en route to Moab and had a true experience to remember. Hai, the owner, is an Anthony Bourdain style cooking show waiting to happen. A high voltage personality and a culinary artist. The food was delicious, creative, fresh, and diverse. Big portions. This was the most eclectic restaurant I may have ever visited - he's growing herbs and chili peppers in the front window, has a butcher shop with fresh meat right there in the restaurant, and Hai is blending his own spice mixes from around the world to sell. We had the steak salad (huge and incredible), the squash curry (he grows the squash at his own farm, was delicious) and the Pho (perfectly spiced, lots of thinly sliced prime rib beef). I was able to meet both the chef and his daughter in one evening. Chef Hai has been running the restaurant for 14 years, and grows many ingredients for three food in a garden behind the restaurant The food is "market priced." This is a great place to eat if you want a great steak and great time. I ordered their New York Steak and it was great. The Chef ( The owner as well ) was very entertaining. If you have never been there ask to see his book of money notes he has collected from folks around the world who have eaten at his place. Right now as of 03.22.2026 there is a bit of construction that is going on, but that is temporary. The pictures that are hanging up all over the walls is great art and they are for sale as well, it gives the to the atmosphere. You will not be disappointed to eat here. 5 of my closet friends and Myself who ate there yesterday (03.21.2026) had never been here ever. We decided on a whim to try it. We read a few of the online reviews and said why not. We were not disappointed at all that we went. The Owner and again the Chef was hopping from table to table chatting with folks about one thing or another. His Introduction is priceless to those who have never been there. I would make sure to bring a little bit of cash with you as it is not inexpensive I paid for myself and one other in our party and it was 114$ without tip , but it is well worth it the $$$. Looking from the outside of the building, it looks like a grocery store.Once you enter, it kind of looks like a warehouse converted to a restaurant.We had high expectations of the food based on all the good reviews, but we got mixed results. Pad Thai with Shrimp- 2 stars - used thin pho noodles instead of thick noodles, it did not taste like traditional Pad Thai, too much fish sauce and too watery. Butternut Squash Curry Chicken - 3 stars - the taste was not complex enough, not coconut based, not great. Scallop with rice and vegetable - 4 stars - too over cooked but still good because it was fresh. A perfect example of disarray in a restaurant/market. We sat down and someone in the back said "go get your drinks up there" Next the the owner Chef Hai asked "do you want meat or seafood?" I said "king salmon" he responded "it isn't in season". I responded "why is it on the menu board?" *received a blank stare* He was trying to tell me what I should/shouldn't order but I carried on anyway. :-) 1. sea bass with sweet potato concoction, and mashed potatoes 2. Pho which came with cooked prime rib 3. Pad Thai w/chicken Sea bass with mango topping was absolutely perfect, the sweet potato/yam mixture was also excellent. The mashed potatoes meh The Pho was flavorless and was overpowered by star anise seed. From a guy born in South Vietnam I would have expected the Pho to knock my socks off. The pre-packaged dry Pho at Harmon's had more flavor. The last item was the Pad Thai, that was incredibly delicious with many interesting flavors and perfectly cooked chicken. Ended with complementary chocolate cheesecake cupcakes. Those were pretty good as well. The sad part about the meal was he was yelling at his employee for forgetting a salad and it was so loud all of the guests could hear it. He verbally attacked him a few other times. The power also went out twice while the businesses next to him didn't have an issue. Maybe he should hire a server or two? Maybe a host/hostess. Before we were leaving there were 4 different groups coming to dine in. One guest asked me "what are you supposed to do?" I said "it is a disorganized cluster and it took just over an hour for our food to come out". We were blown away by the 65 day aged Prime Rib with fresh horseradish and Curry Prawns over vegetables, both so tender and flavorful we couldn't imagine the entree's living up to the high bar he set. (Long winded post...skim to ending to see final thoughts) I read a lot of mixed reviews on here so we decided to just check it out ourselves. We were looking for pho, in Bountiful, near where we live. Saw some posted pics of chopped Prime Rib Beef in Pho. I've only ever had thinly sliced brisket and the like. So, we ran up there an hour before closing. But not without calling to find out what is on the menu as there didn't seem to be one online. Chef Hai answered and here is how convo went... "Hi! Do you still carry the Prime Rib Pho?" -Chef-"You want it to go?" "No, I was just wondering if you still have it because I don't see a recent menu online?" -Chef-"You just tell me what you want." "Oh! I see. Well, I guess we will run up there to see what you have on your menu" -Chef-"We don't have a menu." "Ok! We are coming there right now. Bye." LOLOLOL. You guys don't even know...I had all kinds of flashbacks to my aunts, uncles, grandparents and all my Asian friends from where I grew up in the Northwest. This is how it is! Most people would find this offensive, but in our Asian culture, this blunt convo is "normal" and expected. I felt right at home...and off we went. There were no prices. No menu. Just like he said. We walked in and Chef pointed to where we could sit. Without any eye contact he said while multitasking, "You still want the Prime Rib pho?". I was surprised he knew who we were just from the call earlier. I ordered us each one and asked for purple rice. No rice available. He did belt out, "We are the ONLY place who serves Prime Rib in pho! We also the only place serves purple rice in a pho restaurant!" As we waited he brought out a binder full of different banknotes/tender from around the world. He brought out our pho and we dove in. We loved it. There wasn't too much broth. There was a good amount of veggies, greens, noodles. We were expecting those HUGE bowls but it was a normal sized bowl BUT jam packed with flavor and quality flavor and ingredients. When we slurped up the last of it, he snuck over a couple strawberries dipped in the most decadent Belgian Chocolate. I was in HEAVEN! That alone was worth the whole meal. We had no idea what the bill was. He simply slid over a POS machine showing a total of $32.54. We left a 20% tip of $6.51. Total for 2 bowls of Pho and one soda was $39.05 w/ tax and tip. I had to email myself a receipt to see if I could find the breakdown. No breakdown of what it all cost...just that flat amount. So, being the analytical type, I think I figured it out. This will help some of you who needed to know beforehand. $13.99 bowl of Prime Rib Pho $13.99 bowl of Prim Rib Pho $1.99 cup of soda ====== $29.97 Sub Total $ 2.57 Sales Tax ====== $32.54 Total + 20 percent tip $6.51 ====== $39.05 Grand Total ====== Is it worth it? Is it a bit expensive for the size...SURE.... but, depends how you gauge "worth". We felt it was priceless for the taste and quality. Priceless learning bits of cool info on fresh fish and what he carries. Priceless for the experience to have Chef Hai talk and tell stories to us. Priceless to see pictures of celebrities and big names from his personal cell. Priceless to read letters hanging around from people we know and love. Priceless to support a local business that has been around almost 15 years and made it through the hardest of times. We went to Thyme and Seasons in Bountiful. I had read that it was a unique dining experience, and it was! It stripped away our normal eating out thinking. I suggest going in with an open mind..kind of like the Vegas blindfolded dining experience, or your brother's neighbor's friend's house. Upon entering, I wasn't sure what we were getting into because the decor didn't project the ambiance we've come to expect when dining out. But the air was rich and heavy with fantastic aromas. There are no menus. Rather, a big wall with meats, fish, pasta or Asian. Pick you meat or fish, and Chef Hai did the rest. Again, different from expectations, but his explanation of why made me trust him to work his magic: He only sells what's in season. It's halibut prime season, so we went with that. While we waited for our food, we watched Chef engage with customers. We heard his stories of not scrimping on ingredients, and delivering on the integrity of serving food in season. We heard about his spice trade, his farms, and his customers from around the world. When it came out, it was beautiful. Bright red saffron risotto, a beet/squash medley, and potatoes flanked a lovely, warm, and tender halibut steak. He delivered the food with the preparation story-fresh fish, seared with his spice and layered with a French sauce and coconut mango sauce. It was truly the best halibut I've had. Flaky, tender, fresh. I don't think of halibut as a tender fish. But he was right: when you get the fish in season, and you know the fisherman, you get superior quality. An added benefit is the work program he has in place to train and put people with disabilities to work. He's a big supporter of that in Davis county. I highly suggest trying out this place. take away your preconceived notions of dining out. Instead, you are walking into an artists proverbial home and allowing him to preserve the integrity of his artistry. Don't be fooled by appearances. The food is the real deal. The prime rib was amazing and the fresh horseradish was incredible. The unique setting was intriguing as hell. I think this place would fit really well on an Anthony Bourdaine type of show or What Phil's Having or something... it's not some 5-star setting but the prime rib at least is 5-star. Hai just hangs around being amazing and interacting. Someone in my party said "that place is basically Hai's garage and he just hangs out there all day." This place is amazing. There is no menu, the wall will tell you what meat or seafood they have available. You will tell the chef what your choice is, and he makes you a meal that won't disappoint. Everything is farm fresh and absolutely delicious. When you walk in, they will tell you to get your drink and grab a seat. The chef will come and tell you stories and even sit with you for a bit. We had a variety between 4 of us. Prime rib, fresh halibut, prawns and lobster. Fresh beets and corn that was so sweet and delicious. Chef Hai was definitely a character. Although we were a little puzzled as to whether we seat ourselves or not when initially walking in, he asked us to grab a drink and have a seat. We didn't really know where to get a drink so we sat down where he pointed us to. It's a little odd when you walk in & see him talking to everyone & having to seat yourself lol I think it's cool that he interacts with his customers but it can also hold the food up a little bit lol I came with my roommate & brothers girlfriend for dinner. Tasha had the lobster & prawn pasta, I had the salmon & pasta & Mel had the prime rib pho. All of us thoroughly enjoyed our food. My salmon was cooked to perfection & the Dijon sauce was amazing. The pasta in tomato sauce was very good. I don't have any gripes really except that maybe with a little more organization & help, this place could be so much more! The owner makes it a great experience and encourages you to try things outside of your comfort zone. I had the Wahoo, and my cousins Chilean Sea Bass with pasta was amazing! There is no menu as he only keeps what can be cooked within 3 days and flies the fish in fresh from places like Hawaii and the PNW. We had a family dinner here tonight. We were 6 people. We all drank water. The chef sent over soup (that no one liked) and salad (that no one ate - I tried to nibble, but it was bleh) and not a single one of us ordered any of it. TRULY. We ordered our mains and they took a long time to come out. The restaurant looked dirty and crowded - not with people, but with supplies / sundries / wares - very strange. No one ever checked in on us. It felt like we were in a glorified fast food restaurant. I didn't like my meal, at all. I think I took 3 bites? Some of our group seemed to like theirs; especially the two who had ordered the salmon. My husband was not happy with the meal; albeit he liked the portions. That being said, when the check came: HOLY F&&K!!!!!!! We live in LA and I know how expensive good food and good service is. It averaged about $60 p person with tax and tip (and the service was non-existent). I could go to Spago or Mastro's and spend the same amount (or less!!!) and have a nice meal and a glass of wine. Taking my husband out for an early birthday dinner tonight (the birthday and celebration are tomorrow) and he wanted steak. Doing a key word search for steak led me to Thyme and Seasons. If not for this, I don't think we would have ever stumbled in here. You would drive right by assuming it's a market not a restaurant. When we walk in it's like an Asian marketplace or deli that just happens to have tables in it for dining. It reminds me of all the hole in the wall shops in chinatown in NYC where the meat and seafood are on display right in front and then you go sit and eat. But you'd be wrong with just that base assumption. It's so much more. We are greeted by the chef and owner Hai who points us to a table and tells us to help ourselves to drinks from the soda fountain. He then proceeds to go over the "menu"...no actual paper menu here. He asks you a series of questions and then your meal is created from there. The wall behind the "deli counter" has a list of options and items that are categorized by colored dots (red =folks love this, purple = weekends only, blue = when available). This is the closest you get to a menu;) After answering the questions my husband gets the slow roast prime rib (available only weekends So we lucked out coming tonight) which gets served with Brussels sprouts, yams, and mashed potatoes. He digs in right away as our meals come out at different times and says he doesn't know the last time he had one this tender. It's a huge slab that fits half the plate and it's like the most exquisite pot roast you've ever eaten only it's a steak. It's served with a homemade horseradish that was a tasty little topper and is just exactly what he hoped for in ordering steak tonight. The mashed potatoes were clearly made fresh the skins still in it (best way to have it) and loaded with butter. I picked chicken and wound up with a Thai Chicken stir fry that has a ton of veggies and is PACKED with flavor. I asked for it to be as mild as possible since we all know I can't handle spice and it came out just right. It came with a side of red rice that was also delicious and a great compliment to the dish. Huge portions for both our meals!! At the end he brought us a fresh strawberry dipped in chocolate to top off our incredible dining experience. Clearly everything is made with the highest quality fresh ingredients. I don't know how there could be any negative reviews but maybe it's just personal preference. I will choose a place like this where the chef clearly takes pride in the meals he creates for his guests over any cookie cutter restaurant. Love that his family works here with him and that they sell their own custom blend spice and rice all over. He will chat with you about all his creations and business and it's fascinating. Some friends and I went recently and were shocked to get billed $100 per plate for dinner. I have traveled all over the world and although the food was delicious, it was not a $100 per plate meal. There is no menu and no prices. I get that it is a risk but we felt like we were taken advantage of. The protein was good but the sides were extremely basic and not at all unique. The owner was friendly but a bit of a chatterbox and talked all about himself and his accomplishments. If you plan to go to visit with friends or family you won't get a quiet meal to socialize. He interrupts a lot. The atmosphere is dumpy which would normally make for a yummy and reasonably priced meal. The atmosphere doesn't at all match what he charges for an evening out. Anyhow, BEWARE! If you don't have deep pockets definitely don't go here. I am not sure how he gets repeat customers but from the looks of the reviews it sounds like we were taken advantage of as it looks like meals are normally $30-$50 each. We got there right when it opened for lunch and were told to serve our own drinks and the owner/chef came to our table fairly soon to ask us what we wanted to order: meat or seafood. Then you go from there telling him what types of dishes you like and he then tells you what he can make for you based on the ingredients he has in stock. I had the Chilean sea bass with purple rice and tons of stir fried veggies. I loved the crispy charred skin and sauce and the fish tasted really fresh. The veggies seemed super fresh and I could have eaten them all day. My lunch companions didn't love their entrees as much as I did, however. One had the shrimp Pad Thai which was nothing like any Pad Thai he had tasted before. He wouldn't order it again but said it was good enough. The other had a fatty prime rib steak, mashed potatoes and beets. The steak had really good flavor, but he had a hard time cutting it because of the fat. The potatoes and beets were just okay. The total of all 3 meals was $108, which came as a complete surprise to us when we paid. So, fair warning. While we enjoyed our food, me especially, I don't think we will be back anytime soon, mainly because we can have incredible food in other places for much less with better atmosphere. read more
