I've never had Fijian cuisine before this, so I don't have anything to base this off off, but I am fully convinced that these guys can't be beat. Their poori tacos are to die for! And the brothers that run this place are very nice guys. They make their fry bread on the spot and then fill it to the brim with chicken or chickpeas and top it with salsa and a tamarind chutney that adds just the right amount of sweetness to this dish. This place is amazing! My first time having fijian cuisine (it does seem like there is a fusion going on here, but I'm a fan!) I had the beef and potato taco and it has such great flavor! I can really taste the spices (maybe cumin, paprika, and more!) and it is so well balanced with the fresh cilantro and "taco tortilla" Not sure what the tortilla is made out of but I watched them make it and it's amazing! Tried the chicken poori tacos. Really delicious! Other reviewers are spot-on that it shares a lot of similar flavors as a samosa (the outer fry bread even has similar seasoning as some samosa doughs--I think these are ajwain seeds?). Everything is cooked really well and is super fresh (fry bread is even freshly fried on the spot!). I think that because the stand is rather new and still working out the kinks (and is limited w a small frier for the breads), I did have to wait quite a while to get the food (~20+ min). I experienced this company at the Seattle street food festival. I probably tried around six or seven different companies and this is the only one that I went back to. All I had was the chicken taco but it was so good it was a borderline mouth drug. The best way to explain the taste would be a mixture of Caribbean and Indian. I'm sure to say that I could eat these every day for the rest of my life is unrealistic, but I'd kinda like to give it a shot. The customer service was on par with the quality and taste of the food. We were so lucky to notice Tolu as soon as we entered the SLU night market and being two people that always love trying a new food, we were immediately drawn to this Fijian stand. Fortunately there was no line so we placed our order for the chicken poori tacos and had them in our hands within 3 minutes. Everyone at the booth was friendly and the tacos were our favorite food of the night. The flavors reminded us a lot of Indian food. This place is pretty good. I really like that they use a whole wheat poori, it's really a Fijian/Desi twist on tacos which I found to be very interesting. The chicken tacos were pretty good but I would've liked it if there was more of a kick to it in terms of spiciness. It is a bit of a wait since this place is pretty popular so be prepared to wait in line. They've been operating as a pop-up for 3 months now and said that they're going to experiment for now before they open up a real shop. Amazing food stand. I don't know what makes this Fijian cuisine (since I've never had any before), but the food reminds me of Indian curry. I got the chicken tacos. The chicken is shredded, moist and soaked in a delicious yellow curry. The meat is topped with a pickled salad comprised of tomatoes, onions, cilantro and possibly some other things (I couldn't stop shoving the taco in my mouth to check). It gives the taco an additional/unique sweet and sour flavor. The whole thing is wrapped in a poori which is a super flaky, fluffy and soft fried dough. The guys behind the stand are friendly and clearly passionate about their creations. You can watch them hand make the dough and I appreciate them listing where their ingredients are sourced from on a blackboard on the stand.
