Incredible experience start to finish! We had Trailhound cater our party and everything from the communication leading up to the event to the food at the event was top notch. I don't think I've had barbecue that good in many years, if ever. The meats were amazing, sides were to die for, even the sauces were out of this world. Timm and his team run a great business. They provided an invoice shortly after I contacted them. They were in communication in the weeks leading up to the event. They were super accommodating when we had last minute RSVPs. This past weekend went to our friend's wedding and Trailhound Smokers was their caterer. Oh my goodness the food smelled delicious but more importantly tasted delicious! My absolute favorite thing was the Southwestern Cream Corn that seriously is a crack that you just keep wanting more! I definitely went back for a second helping of it along with the Mac and Cheese. Brisket and chicken was flavorful and made this meal one of my all time favorites to have at a wedding. They were friendly people and serving up their food with a smile on their face. We hired Timm to cater my birthday party of 40 plus people. He brought his custom made trailer and parked in our RV area. We had the brisket, chicken , and tri tip along with various sides. They set everything up buffet style and served our guests. Let me tell you the food was SOOOO good. You know its good when there arent really any leftovers! People kept going back for 2nds and 3rds. Im still craving the Tri Tip, which was my favorite. Timm from start to finish was very professional, kind, and prompt to answer any questions. Thanks to Thomas and Mac my fellow co workers and I were treated to a awesome BBQ Lunch! Normally i always start with my meal then something sweet but the peach clobber was soft and sweet the peaches did not over power the taste of the brown sugar great mix! I went head 1st for it! Spoon was clean The brisket is a must try! I'm not a huge meat person but i would have that every weekend if i could. I added the hot BBQ sauce on top. Won't lie i put the whole thing in my mouth and i was in love! Very soft rolls that go well with the juices form the meats hahaha i didn't have to use the butter they gave me! You should definitely add this to the list: learning to smoke meat from a certified pit master. I was lucky enough to attend a corporate event this weekend at Trailhound Smokers BBQ, where owner Timm Martin taught us to smoke pork ribs and spatchcock chicken. After we learned how to trim and season the meat, Timm tossed them in the smokers and we listened to him dispense wisdom learned throughout his years of competitive cooking. While our meats were cooking, we broke for lunch, which included ribs and chicken that Timm prepared earlier, plus some chopped chicken and sides prepared by Timm's wife, Crystal. It was a long day but a productive one, as each of us left with two smoked racks of ribs and a whole smoked chicken, plus all our pork trimmings (aka rib tips), which we could cook up later at home. Trailhound Smokers is located at Timm and Crystal's residence, which gives it a homey feel although this fantastic complex is more than just a simple kitchen. They also offer catering, but if you can book a private lesson, DO IT! (They also offer brisket and pork, and there's talk of a whole hog class [!] as well.) OMG!! Absolutely the best Brisket ever. I picked up my brisket & sauce up 2 weeks ago. I took it home & froze it with the instructions that TImm had given me. I took it up to Utah this weekend for our Labor Day family gathering of 25+. I defrosted it & warmed it up with the instructions TImm had given me. This Brisket could not have been any better if it had just been cooked. It was juicy, tender & the best flavor possible. I am from Texas the home of the greatest BBQ until now. Since of course I wouldn't be there to make sure everything went accordingly, I relied on Trailhound to get the job done & boy did they. Not to mention, I needed to find a BBQ caterer in a matter of days. Tim was very friendly and personable and walked me through the entire process. He helped me customize a menu and was there to set up at the bachelor pad for the guys, right on time. Their presentation was awesome, with greens and peppers surrounding the servicing dishes.
