The 72-hour wagyu nigiri was insane. Literal meat butter. Rich, smoky, melt-in-your-mouth perfection. I also loved the sashimi dish with the fresh mandarin oranges/citrus broth situation. The brightness from the citrus paired with the richness of the fish so beautifully and made the whole thing feel incredibly fresh and layered. Every dish had contrast and balance like that. Nothing felt heavy even though we ate a LOT. Another unexpected favorite was the handheld salad that you dip into the dressing. Super fresh, crunchy, acidic, and honestly such a smart palate cleanser between richer bites. The service was incredible too. This is the kind of place where you can tell them what textures/flavors you like or don't like and they genuinely curate the experience around you instead of making it feel intimidating or pretentious. The Hama Chili, Bincho Temaki, Bincho Nigiri, and Sake Salmon were all fantastic, and the Inari Temaki was easily the table favorite. The Crispy Rice with gyutoro was another highlight that we all loved. The Kogorashi Old Fashioned was amazing--it's a must-try if you enjoy cocktails! We did run into a couple of small hiccups. The Otoro and the Nikko drink we wanted to try were both sold out, which was a little disappointing. Additionally, the timing of the dishes was a bit off--some people at the table were done eating while others were still waiting for their food, which felt a little awkward. Lastly, a few food items didn't make it to the table, and the server ended up putting the order in towards the end of the meal, which was kind of disappointing. We attempted to get a table during happy hour around 5 p.m. on a Friday and were informed there would be a three-hour wait. However, we were pleasantly surprised to find bar seating available within the next hour! Our server was incredibly friendly and knowledgeable about the menu. We were unsure of what to order, but he suggested the somakase, a curated menu based on our budget. With high expectations from reviews, I'm thrilled to say this was one of the best meals we've had. Although we're only in Colorado for two more days, we're seriously considering returning tomorrow. We chose a mix of nigiri and sashimi, and the standout dishes from the somakase were the seared salmon belly and gyutoro--both were rich, buttery, and tender. We also tried the Santa Barbara uni, which, while pricey, was excellent, though it doesn't quite measure up to what we've had in Japan but I digress. The yuzu cucumber oysters and ponzu yellowtail with tangerines offered a refreshing flavor profile, the grilled walu walu (escolar) was perfectly cooked and flavorful, kinoko nabe (mushroom rice claypot) added a wonderful umami depth, and the soft shell crab roll had a satisfying crunch and a great sauce. We ordered 16 different types of sushi and a dessert to top it off. While all of them were good, three of them stood out as our favorites - the Foie Gras, Walu Walu, and Dulcey Trifle. However, we were disappointed by the small sizes of the sushi pieces, which made the price point quite steep. Our server Wade was attentive and provided us with informative insights on the dishes. The other staff members were also quick to clear out the plates, making the dining experience quite enjoyable. In terms of quality and service, this place definitely met our expectations. We had great expectations for my birthday dinner based on reviews. My son made reservations and we were promptly seated. First impressions, table, ambiance, location ok. Menu has some unusual offerings between Asian and western styles. We ordered a lot of dishes to try it all and they came steadily with no great disappointments until this one called Shag arrived. When I asked our server how they can sanitize wood effectively she told me with pride that all Uchi wood was sealed and sanitized through the dishwasher. When I asked if she considered the dish our food came on as sealed and pointed out the rough edges she refused to say anything else and politely left. I ask you , the reader, to decide...Is this type of plate and presentation in the pictures to be indicative of a quality restaurant? Yuk, I say. Expected better. So disappointed to see this type plate and even more disappointed in how my inquiry was handled. We were very excited to try this restaurant as we heard lots of good things. To say that we were disappointed would be an understatement! Our sushi standards are incredibly high with most of our local sushi dining taking place at Sushi Den on Pearl street, Denver. Comparing Uchi to sushi den is like comparing Long John Silvers (Uchi) to the #1 rated Sushi restaurant in San Francisco (Hashiri). The portions were 1/2 the size of Sushi Den and their wasabi came in plastic sealed packet!!! They are over priced and deliver very poor quality. Needless to say we were VERY disappointed! read more
