Uchi is dangerous for people like me. Not because of the raw fish. Because the place understands seduction. I've been eating at Uchi since it opened in Denver and today it still carries that same intoxicating balance of precision, warmth, swagger, and restraint. The room itself glows instead of shouts. Wood slats divide the dining room into little private theaters while the sushi counter hums with focused choreography. Expert hands moving constantly. Rice. Fish. Quiet communication. Tiny acts of discipline repeated hundreds of times a night. I sat down intending to have a civilized happy hour. That plan lasted maybe twelve minutes. The kurodai crudo arrived first. Gooseberry, leche de tigre, candied garlic. Bright, sharp, and alive. This is the kind of starter that wakes up your entire palate and you are reminded that you will absolutely be spending more money than originally intended. Next was the bincho temaki: cool albacore, kimchi, avocado, and a vividly garish orange sauce with some heat to keep the richness from becoming too much. Uchi understands something many restaurants don't: luxuriousness needs balance. Fatty fish without acid, spice, crunch, or brightness is palate exhaustion. And then one after another the deliciousness continued: the oysters were cold and perfect with cucumber, calamansi vinegar, and umeboshi. The day boat scallop nigiri nearly stopped time altogether. Just sweet scallops, rice, citrus, a little finishing salt. Incréable. Or whatever the French word is for "I briefly forgot my own name." And somewhere during martini number one, the staff adopted me. Apparently Uchi keeps notes on guests. Mine, I was told, says I'm "nice and a good eater," which may be the most flattering thing anyone has said to me in months. Suddenly more dishes started appearing. Gifted nigiri. Ikura glowing like little amber jewels (my favorite). A ridiculous and completely delicious carrot toro maki with green chili crunch and enough heat underneath the richness to make the whole thing flirt openly with your mouth. At one point the bartenders literally invented a "walu walu shot" on the fly just because the mood had drifted into improvisational chaos. This was somewhere between oyster shooter, seafood dare, and excellent bad decisions. [[HIGHLIGHT]]Meanwhile, the guests next to me started talking to me and the entire energy of the evening shifted into communal sushi-bar joy. Suddenly we were all reacting to dishes, laughing, comparing bites, participating in the same ecosystem of salt, fish, alcohol, and temporary human connection.[[ENDHIGHLIGHT]] This is the real thing Uchi sells. The final bill before tip was somehow only $141, which honestly feels mathematically impossible considering I briefly entered a spiritual relationship with the sushi counter. Uchi was recommended to me by a friend, who actually told me about the Texas locations previously. So, I was really happy to know that one also exists in Denver! It was my first time going to a Uchi even though it is a chain, and I had only heard great things so I had high expectations. We ordered a bunch of items off the menu. They were all delicious and the sashimi was very fresh. Each dish felt very intentional based on the presentation and proportions of the dish. It felt like we were eating "tapas" throughout the night because of the small portions. The only thing I did not like was the chicken karage - it had a very weird aftertaste which I think might have been attributed by the pickle flavor? We ended the night with the fried milk for dessert, which was so great. This is a fancy sushi place with excellent service. Friends and I sat at the bar & our bartender, Alex, was the best. I let her know I was vegan & she brought out the vegetarian menu & recommended the items that could be made vegan. I had the mapo dofu (made with soft tofu) and it was delicious! I regret not taking photos of the menu but the sashimi we ordered was off the Toyosu market menu, which means the fish is flown in from Japan. It was yellowtail. Very tasty! The rolls were very good too. My boyfriend loved the karaage. The cocktails were pretty damn good. I had a spicy mezcal drink that I thought was very refreshing. The dessert was amazing! It was a banana cake with ice cream, miso caramel and some kind of crumb that was chef's kiss. The restaurant is pricey but I think it reflects the quality of service and food. Absolutely wonderful experience, Uchi has skyrocketed to the top of my restaurant experiences in Denver! The balance of sweet and spicy was perfect and the dish felt incredibly fresh. When I asked Jessie for a recommendation, he suggested the Masu Crudo which had butternut squash curry, apple, and beet chips. This is something I never would have gravitated toward on my own, and it completely blew me away and it ended up being one of my favorite dishes of the night. Another standout was the Tanin Bune (sea urchin and salmon roe) which also wouldn't have been my first instinct to order, but Jessie so kindly gifted it as his favorite piece and I'm so glad he did because it was absolute perfection and one of the most memorable bites of the night. Uchi is perfection. Time after time, they grant customers with such an elite culinary experience full of fresh fish and delicious drinks. They're most famous for their happy hour, though my friend and I came for "regular dinner" last time. I also realized they have several other locations across the country - good for them! On this particular visit, we had the sea bream, yellowtail, kosho toro maki, mapo dofu, and mango tapioca. Ever since our Great experience at Uchi Houston, been wanting to check out all of the Uchis. While the service was not as great (a bit slow and no complimentary dishes) as in Houston, we still had an excellent time. We ordered a lot, created our own 16 course menu, paired with a bottle of wine. This Japanese restaurant in Rino has been on my bucket list for years. I made a reservation thru my OpenTable app for 4pm. Good thing. When I arrived I was in a group of 30 people waiting to enter. The sushi bar filled up quickly, so I got a table nearby. My server, Billy introduced himself. He said the regular menu was also available. I started with the seasonal spritz made with seadonal shrub, sparkling wine & vermouth. My first HH choice was Bincho Temaki, a hand roll with albacore & kimchi. It was served with a dipping sauce. I noticed no Tamara or soy sauce on the tables. Next was a half order from the regular menu of their Uchi salad. A creative version similar to a lettuce wrap with a daikon spear and a crunchy jalapeno-edamane and cashew pesto sauce. Yummy. I added the HH whitefish nuggets and the HH pork belly. Both very good. My next drink was a 2 oz pour of Mars Iwai "Tradition" whiskey. Billy asked if I wanted a big rock or cubes of ice. I opted for cubes. As the ice gradually melts, it softened the whiskey. I ordered the Spicy Crunchy Salmon, but Billy said the sushi bar was swamped and it would be 20 minutes. I went ahead and got more food including the Crispy Rice with Gyutoro. When the salmon roll arrived, it was smaller than expected for $16.50; I got the HH Tapioca pudding with a Ume Punch. So I went whole hog for this bucket list place. No service charge. read more

Great sushi spot with creative takes on traditional sushi dishes. What doesn't bring it to 5 stars is that not many of the dishes rose to the level of "amazing" or even "memorable". It's nice because they have sliding glass doors which provide privacy but you can still see the restaurant.[[ENDHIGHLIGHT]] We had a 10 course meal with a variety of sushi, rolls, salad, cooked fish, sashimi, and meat. Some of the sushi was inventive and they managed the fishiness of fish like mackerel. Some of the sushi nigiri didn't quite pack a great amount of punch so they were good but forgettable. Some dishes really were unique like the salmon belly, the malu malu, and the wagyu. And the fried milk dessert was amazing. But again, from start to finish it was a little uneven. One of the coolest spots I've been to in Denver. The decor, servers, plating, etc. make me feel like I'm in a different city in the best way. We went for happy hour (highly recommend) and tried their omakase. The happy hour omakase was a great deal, just make sure to go with someone else since it comes in sets of 2. The courses were well timed and our server was delightful. She made sure to explain each course and was incredibly attentive to drinks, timing, preferences, etc., even though it was incredibly busy. She even brought out some extra nigiri (scallop) when we mentioned we'd like as much seafood as possible, which turned out to be my favorite bite of the night! The drinks and meal itself to die for. I had a kocha drink, which was refreshing and light. For the omakase we started off with a lettuce, radish, and edamame salad, then moved onto hamachi sashimi, salmon roll, tuna collar, mapo tofu, salmon and yellowtail nigiri, pork chop, and scallop nigiri, ending the night with coconut tapioca. If I explained how thoroughly I enjoyed each dish, this review would be 20 pages long. I will say the meal was very balanced and had a great progression from lighter to heavier flavors, and each dish was devoured! There were combinations I wasn't expecting that I was delightfully surprised by. I was also SO incredibly full after so I wouldn't be concerned about portion size. I've known/dined at Uchi at their OG ATX location, then had it in Dallas (it worked out really well for a work trip with folks with food sensitivities and Uchi is super accommodating) and NOW enjoyed Uchi Denver! We sat at the bar for happy hour (daily 4pm - 6pm) but ended up basically eating a full meal because everything so was so delicious: *hama chili (yellowtail, ponzu, thai chili, orange supreme) - $11.5 on happy hour and $23.5 on the regular menu so this was a great value! * beef carpaccio (crispy shallot, jalapeño vinaigrette, horseradish) - $9 on happy hour * tsukune meatball (chicken, ginger, negi, soy aioli - $11) *pork chop katsu (bone-in chop, apple purée, truffle soy - 29) - this was SO good. the best katsu i've had in a while. The truffle soy was sooo umami and the apple puree was perfect. * squash blossom tempura (red curry, nuoc mam, chili oil) - love and respect a good squash blossom which this was...but the flavors here are Vietnamese and a bit random? There were better dishes. I also ordered hotate (scallop) and uni off-menu! We also had the fried milk dessert (vanilla custard, salted fudge, toasted blondie) this was stupid good. Sake selection is good but a bit overpriced though bottles other restaurants have for around 30 are closer to 50 here pretty sure it was a dassai 39 I drew the comparison from. The food was fantastic. Don't skip the dry aged fish order one of every sushi on the menu and you'll be alright! Uchi is amazing. The waitress was very knowledgeable. Unfortunately they were out of the bluefin caviar and the pork katsu. Let's see. I did not get photos of everything but included some here. Lobster miso- this is a butter/cream soup not like miso like broth. All of the nigiri was perfect seasoned (as expected!) The blue fin 10/10 recommend! I really wish we were able to have the caviar. The bone marrow was wonderful. Very rich - I do wish it came with maybe some water crackers?? My partner and I came here for our anniversary. We decided to do the $150 per person/market price Omakase experience. They put a Happy Anniversary card on our table so all of the staff that came to our table said Happy Anniversary which was a nice touch. The staff were all very friendly and attentive. Our server was great too. The experience is meant to be 2 hours. She asked ahead of time how much time we had and I said 1 hour 40 minutes. She got us out in just that. I don't know how many dishes there were but most of them were cold dishes, including 3 plates of nigiri that we couldn't really tell apart. All of the cold ones honestly were just ok and not memorable- except for one nigiri tuna one- that one I remember was good. But it was really hte hot dishes that outshone. To note: Lobster: tiny amount of lobster but drenched in a super tasty butter sauce Mapo Tofu: Perfect amount of crisp and very flavorful. this was my partner's favorite Wagyu: 5 tiny slices of pink juicy wagyu steak cooked very well For dessert, we received 2. One was for the omakase experience and the other for our anniversary which was a sweet touch. I thought it was funny that the amount of food in these two desserts was almost equal to the 10+ courses we got before that lol. One of them was a banana dessert and the other was kind of like a modern ice cream smore-ish dessert. Both were alright. This is my first trip to Uchi outside of Texas, where I have been to the Austin, Dallas, and Houston locations. I actually did not realize it expanded into other cities. We drove to Denver yesterday and anticipated the meal because Eric R.'s sister told us she made reservations. That gave us the needed window of time to drive here and make two stops for refueling en route. We were seated in a really cool u-shaped table facing the sushi bar and kitchen hallway, so we could watch all sorts of amazing food come out regularly. Our server Jamison was helpful in explaining the menu options and recommending favorites. Eric R. ordered hot sencha tea and a aoi toki cocktail, his sister got a glass of rose, and I had a yuzu sparkling mocktail. We ordered some food to share and some nigiri for ourselves. To share: -shiki (seasonal vegetable tempura) was Japanese beet with a mushroom tsuyu -zero sen roll with yellowtail -soft shell crab roll -ora king salmon sashimi with kiwi We were also gifted a hirame usuzukuri which was a nice surprise. For individual pieces, I got akami, sake toro, kingfish, kurodai (black bream), okami (tuna tartare and caviar) gunkan, uni gunkan, and shime saba. Both Eric R. and his sister ordered the lobster miso butter hot dish which they both loved (I tried some and it was very tasty). Per Jamison's recommendation, they both got sides of sushi rice and covered it in the leftover sauce, also a great idea! We finished with the fried milk dessert, with fried custard, salted fudge, ice crean, and blondie crumbles, Both of them squirted custard on their wrists somehow, but I survived un-custarded. The service throughout the meal was phenomenal. Water carafes were constantly being replenished, water glasses refilled, and empty plates taken away by various staff. I was at Uchi Denver for a team dinner and was a little worried about the venue since I'm vegetarian. I was pleasantly surprised to note that there were plenty of vegetarian options for me - starting with a daikon and kale appetizer followed by mapo tofu. The mushroom fried rice was quite yummy. The waiter made it a point to explain the various dishes( what they were) to us since we ordered family style. They mentioned the seafood was flown in from Japan. The lychee martini lacked flavor and did not smell like lychees at all. The only other complaint I have is that one of the waiters refused to take a group photo of the team( despite asking him twice). We got someone else to take pictures. Uchi Denver exceeded every expectation and gave us the best culinary experience I have ever had. We came in for our anniversary on our first trip without our kids, and from the moment we arrived the team made us feel genuinely taken care of. Having champagne waiting at the table was such a great touch and set the tone for the night. We went with a chef's choice experience and every course was thoughtful, creative, and incredibly well executed. The staff is always friendly, and they have a fantastic happy hour. We've sat at both tables and the sushi bar, and both experiences have been delightful. We love to enjoy the happy hour as you can sample a wide variety of dishes at a good price. Can't go wrong with trying a little bit of everything! Our favorites are the Walu Walu and Hama Chili. One of the best sushi fusion spots! The toro was, of course, delicious and the hama chili was so refreshing. Uchi never fails me. There is always an excuse to stop by and dine here! It's a great spot for date night. Especially how the interior design is greatly designed. The few times that my husband and I have dined here, we have made reservations. I highly recommend doing that if not, get here early! Happy Hour is def our favorite time as well! Sadly, they condensed their happy hour menu but it's still great. We've tried soooo many things on the menu but I will list my most favorite items! Hama Chili -- one of my absolute favorite things. This dish hits all the notes and I can never get enough of this! The fish pairs soooo well with the ponzu, orange and it's truly addicting. Walu Walu -- again it's the ponzu!!!
