Let me just start off w WOW!!! I have seen this place on social media and showed it to my husband and since it's foodie Friday day (trying new local spots) for us we decided to take a 43 min drive all the way from the northwest side of town. Let me tell you the drive was worth it, we have been searching for a good Texas style brisket and we think we just found our place. It is in the smiths parking lot but there is plenty of parking but just know that it is a food truck so w the Las Vegas heat wait in your car or find a shade because it's hot. First of love that they offer samples before you buy and uncle Bo's reasoning for that is he wants you to try the his food before you purchase it. Him and his wife are very welcoming and very nice and after chatting w him about his background we can see why the food that comes out that window is delicious. We ordered 1/2lb brisket,half rack Memphis ribs,1/2lb hot sausage links, side of jalapeño Mac n cheese,side of coleslaw and 2 root beers. The Texas style brisket is what we have been searching for after we visited Texas along time ago, no one has really came close in town here because u either get something too dry,bland, too smoky etc... but not uncle Bo's brisket. Hands down so juicy and moist and just the right amount of smoke 10/10 for sure we loved a fatty brisket instead of the leaner side w a good flavorful bark. The Memphis dry rub omg meat falls off the bone and that dry rub is so good it doesn't need bbq sauce at all but if you do his bbq sauce made from scratch is delicious! Even from a store bought expensive bbq sauce this one beats it for sure, The meats just melt in your mouth lik3 butter. He definitely knows what his doing back there and you can definitely tell he has been doing this for along time because he perfected it. Hot link sausage is also very good just a good amount of kick and it had a nice bite to it. Now the sides, one of the best coleslaw we have had no lies and the jalapeño bacon Mac is so creamy and delicious we devoured them sides in the parking lot. We also were able to try the potato salad they have and it's also very good.We still have so much meat to take home for dinner,The root beers also went so good w the bbq for sure. Spent over $60 and drove 43 mins out and it's so worth it, we will be back for sure! Go eat here any chance you get! The food is Amazing. They REALLY know how to make a great brisket. Not just that but the ribs. I got a full rack and my son (12 yrs) cleaned them out. The sides (backed beans & jalapeño Mac & cheese) GONE! We got enough food for the 5 of us. We ate it all, even the picky kids. The brisket had a great peppery bark and was tender and moist. I didn't take any food pics, we were all too busy eating and enjoying. We talked to them for a bit when we were there. Uncle Bo KNOWS what he's doing. They were easy to talk to and very kind. I've read so many good reviews about Uncle Bo's Smokehouse. Yesterday at the coffee social at the clubhouse I was talking to my neighbor and she loves them and has gone every weekend to buy different smoked meat items and told me I have to try it. After that raging endorsement from somebody I know, I went today and bought a half a pound of brisket and a half a rack of back ribs. I did get a free sample of brisket and I was hooked from the first taste. I already knew the ribs were going to be awesome as well so I didn't take a sample of that. Everything everybody said, including my neighbor, was 100% spot on. This barbecue is amazing. This is the most tender, juiciest brisket I've ever had in my life and those dry rub ribs are absolutely off the hook. I find their barbecue sauce to be extremely tasteful. They don't offer a hot option but there's so much flavor to this stuff it really doesn't need to be hot. I think the prices are very fair and you get very good service from some really friendly folks. You definitely can't go wrong walking up to this business and placing an order. I moved here 10 months ago and this is my first purchase of barbecue food. I don't need to look elsewhere, I think I found my spot! read more

I've been craving this place ever since I had their brisket 10 days ago. It was the best brisket I've ever eaten, hands down. I've tried other places in Vegas that people recommend, but this is the real deal. This time, I ordered the smoked hot sausage and the green beans. The smoked sausage comes in mild and hot, and I opted for the hot one. It had a nice bite and paired well with their sauce, which was incredibly spicy. I'd give it a solid 9 out of 10. The green beans were seasoned to perfection and topped with crispy bacon. They reminded me of my grandma's sides when my grandpa used to barbecue. I'd give them a 10 out of 10. This was my second visit, and the man behind the grill remembered who I was. The young lady in the truck and everyone else I spoke to were incredibly friendly and helpful. When I tell you this is the best brisket I've ever had im not even joking. Not paid to say this. Not persuaded. Genuinely I installed this app just for this place. My goodness it is so so so good. The price is pretty right for how insanely tasty, tender, and seasoned this is. You can't even eat it with a fork might as well grab a spoon it's so tender and juicy. Finally was able to try this out! Glad we did! They do offer you free samples before your order! I thought maybe people just said that. We tried the baked beans and ribs. They didn't like the first rib they gave us so they gave us another one. They were both delicious. Fall off the bone! We ordered the pound of brisket and 1/2 pound of pulled pork, 16oz of jalapeño o macaroni and cheese. Only wish they had rolls maybe should have asked lol. Omg it was all sooo delicious! I was a little skeptical because of the food truck for BBQ. Usually you need a brick and mortar place for the fire pits to get good BBQ. I have seen a lot of positive posts on social media, so I decided to give it a try. And boy am I glad I did!!!! This is AMAZING BBQ! I got the brisket, ribs and Mac and cheese. The meats fall apart and off the bone just picking it up. It is so tender and the flavor is AWESOME! The owners are so nice and let you sample pretty much anything. I've had Michelin rated bbq before and bo's is up there in the same caliber with their brisket. . Best brisket on the west coast! 1000000/10 The ribs. Dry rubbed memphis style and again lots of love is being done with the time and execution to get the ribs falling off the bone . You will never get sauced ribs and the sauce is always available on the side. I really wanna try their other sauces they've made in the past as well but hopefully available sooner than later... I was eyeing this food truck from inside Smith's and I'm glad my friends decided to stop by and peep the menu on our way out. As others have said, the owners were more than happy to let us try a sample while we looked over the menu. Friendly, generous, and confident in their BBQ- which they ABSOLUTELY should be. I picked up a small order from their food truck on 1/8/2026 at Tractor Supply Parking Lot on Equestrian Dr. off of Boulder Hwy in Henderson. I had their Marbled and Lean Brisket, a rack of Smoked Pork Ribs, Spicy Sausage and Coleslaw. The meats were tender. The marbled cut was very tasty. A bit peppery. The spicy sausage wasn't too spicy and the coleslaw was great. The lady that took the order was very friendly and knowledgeable of their products. Even though their website says cash, they do accept cards. Using a card has a $4 charge but is NOT passed onto the customer. I'd suggest kick a few dollars extra in your tip to cover that charge if you use a card. The BBQ was excellent. I recommend you try it for yourself. read more
