Vaquero's is what they really eat. These kinds of tortillas can only be made by the old grandmother's in Mexico, who have never been to the US, and never plan on going. These tortillas here are obviously grown in house on a Metate (ok, I had to look that up), And the meats taste like they are marinated for days, in order to taste like this. My favorite is the Alambre Burrito. If you accidentally order something else in addition to the Burrito, you will probably be taking it home. For some reason they gave me two sides of beans, but the online menu says the regular non-omelette version comes with beans and potatoes. I noticed that there were compliments on the birria, so I might try that if I go back, but I've tried the barbacoa twice, once not long after they opened and today. It's one of my favorite foods, but both times the Olivo's barbacoa was dry and bland.
