When traveling I typically don't have Mexican food because we have such great Mexican food in Arizona, but when traveling to the treasure coast Vargas is a must! This is a simple family restaurant that serves excellent authentic Mexican cuisine at very reasonable prices. Ordered at the counter, sat down and food arrived in less than 5 minutes. I decided to try the Cameron - Shrimp Diabla style. The dish included a small salad, beans, rice and choice of flour or corn tortillas. The shrimp was cooked correctly with vegetables in a spicy sauce. Delicious! I used the small tortillas to make four shrimp tacos garnished with salad that included avocados which was a perfect cooling counter to the spicy shrimp sauce. A unique culinary delight. A blend of American pop and Mexican music provided a nice ambiance. Decor was traditional Mexican art and bright colors. Highly recommended! read more

My dad has been telling me about this place for a while, so I ventured down 20 mins before they closed. And let's just say the delivered in a great taco! When you arrive to the place parking is tight but there's plenty of it, and the restaurant is a cozy I recommend take over eating in space is limited you can see in another reviewers photos. This is a nice little spot close to the Wabasso Causeway. The unit is small and usually hot inside there's a real lack of seating. The food here is pretty darn good in the portions are usually pretty darn good and we'll make some really great is the price. For a quick lunch break you can get a burrito and a drink for 5:25 that's a good burrito, surely does fill me up. The run daily specials which Change Daily because their daily specials of course. The red sauce is the hotter sauce but I drink it like a cup of tea. You always see same group of people working. They get to know you and we'll say hi to you and talk to you a little bit giving you that Hometown little restaurant feel. Their hours start early morning till early afternoon. Abuela cooking out back making THE BEST Mexican in this area hands down! They are open at 6:30 in the morning when I drive by headed to work. I get taco's around 9 myself I go once or twice a week, my co workers are there virtually every morning. The boss actually fetches if ya buy. He even buys sometimes. Really good food. Our first stop at Vargas was a great experience. Service was great. Very helpful with our first visit explaining the difference between breakfast items and lunch. The food at Vargas is good, authentic Mexican. The menu is more of a guide---just tell them what you want. And they'll make for you. The people are very nice. Vargas is only open for breakfast and lunch but remains open until 7:00pm, so it's possible to go for dinner if you go early. You order and pick up at the counter, and there's about 7 tables. It's definitely a hole in the wall and very easy to miss in a small strip mall on US Hwy 1, but the food is excellent. A foodies' type of place. read more

Without a doubt, The best restaurant breakfast we've ever had in ANY cuisine! Passing through Vero Beach at 6am we discovered a gem end the end of an ancient old strip mall. The restaurant is old, but clean and all kept and decorated with the best sort of kitsche. The kind family staff at Vargas offer several breakfast selections, including made to order burritos or chilaquiles (a Mexican staple made of corn chips wilted in a chile based sauce that is reminiscent of lasagna.) They offer a full Mexican breakfast of toast or tortillas, eggs any style, bacon/sausage/chorizo, homemade home fries, pintos w/ cheese and sour cream and a bit of queso fresco, and a generous portion of extremely fresh salsa (or pico de gallo) for an amazing $4.75!!! Hubby had his eggs scrambled with the chorizo and stirred in with a spicy homemade red salsa w/ epazote (a classic Mex spice.) They also offer homemade green salsa in this mixture. For right around $10, we are five hours down the road and not really hungry yet. It was a huge breakfast but the portions were perfect. Oh, the home fries, yea that! Our eggs were cooked perfectly by the excellent Señora en la cocina. When's the last time you had breakfast in a restaurant and can say that??? The coffee wasn't stellar but who cares?! There is a cold case of Jarritos and other authentic Mexican sodas. Several working class men stopped by on their way and ordered to go. All left smiling. If you enjoy this mean as much as we did, tip generously! They have given you their all on a plate. It's only fair that you should reciprocate generously. Quilters, plan to stop at the quilt store in the same strip mall. We didn't want to wait three and a half hours for them to open. Maybe next trip cos I'm certain if I pass through again, we'll be stopping to dine with the folks at Vargas! read more

Delicious, quick, and filling! Stopped by on a Saturday at 6am before heading to the State Park for sunrise and was greeted with a smile and quick service. Vargas Mexican is a great place to grab a delicious and fresh breakfast burrito before you head out for your day. We had the egg, sausage, and bean burritos and they were super filling and much bigger than expected for only $3. We also grabbed coffee from the self serve fresh pot on the counter. I'm new to the area and read reviews about this place. They were spot on. Little hole in the wall, which I prefer to big chains, with nice size portions of good food. I had the chorizo eggs and they were (almost) as good as my mom's (I'm Mexican so she will always get top votes!) priced right. Definitely recommend. Word of caution, confirm they are open! It is a little dive/hole in the wall with Great fresh food. More of a takeout place or eat and go. On top of their regular menu items, they do daily stuff so you never know what delicious things you might find. stopped by Vargas Mexican Food today due solely to the comments about them I'd read on Yelp. All I can say is that the reviewers were generous. I ordered two burritos, one with chicken, one with ground beef and three tacos with ground beef on soft corn tortillas . Upon arriving home with the food, we found it to be very bland. The chicken burrito was not satisfactory - the chicken had an abundance of gristle - which is not only distasteful - but rude! My burrito was eatable, as were the tacos - but this place is nothing special - and we won't be back, nor will we recommend Vargas to any of our friends. read more

Staying at Disney Vero Beach and decided to check out Yelp for lunch. Vergas was close and had very good reviews. Service was fast, food was fresh and tasty. I had a couple of beef burritos. Price was reasonable. It is a "hole in the walk", but clean and has great service and food. I would recommend it to my fellow Disney Vacation Club members. read more
