This spot is AMAZING! Everyone we talked to was so friendly and welcoming, and the food was delicious. My boyfriend and I haven't found a place we can equally enjoy until today. I have a lot of dietary restrictions, he does not, and it feels like one of us has to compromise everytime we go out to eat . Not anymore! This is the first vegan restaurant that my carnivore boyfriend has licked his plate clean at! The BBQ jackfruit fries and the Veg Head nachos were incredible, my only disappointment was accidentally leaving my leftovers behind. I ordered ahead of time, as the we site says it is a takeout restaurant. There were a couple of small tables that you could stay and eat, but there is no bathroom for customers so I did not stay. I ordered a mushroom burger, it was ok. The dorito tots were were really good. I am not a big burger fan so I will definitely try something else next time I'm in town. Absolutely fabulous vegan comfort food! They have a wide and varied menu with lots of different options. There are numerous baked goods available for purchase as well. We tried the special Greek salad with falafel. It was delicious. And of course we had to share a lava cake with vanilla bean ice cream for dessert. It was ridiculously fabulous! If I could give this place 6 stars I would. The owner was SO kind and very friendly upon arrival. The food was outstanding, one of the best sandwiches I have ever had AND it was all vegan!!! We also had to get a frosted sugar cookie and donut bc everything just looked too good to pass up. Vegan and gluten free friends run don't walk to this new restaurant in Benson! This was my first time trying Veg.Edible since it opened its store location and I am beyond impressed. The store itself has a few booths to sit at inside, but we choose to do takeout. Stacy, the owner, alongside her husband, Matt, have not only shown their love for what they do through their food, but also through their ability to bring delicious food to those with dietary restrictions. The entire menu is gluten free and vegan, so there was no worry about getting sick or modifying to your needs. I decided to try the smash burger with chz, and wow. If I hadn't know it was vegan, I would have never been able to tell. The burger was juicy and paired beautifully with the vegan mayo and toppings. This was one of the best burgers I've had in the area. The fries were also fresh cut and reminded me a lot of five guys fries, delicious! The cookie was perfectly chewy with the right amount of sweetness. As someone who is always looking for a place that has gluten free options that cater to my celiac needs, this restaurant has gone above and beyond my expectations. Everything from burgers, to salads, to cakes and cookies, there is many choices to choose from. It's super refreshing to look at a menu and know I can order anything off it, and not get sick while also being satisfied. It's great to see that a new restaurant has opened in the former Baked After Dark & Wonton Jon's space. Veg.Edible was launching a limited soft-opening; which looked like it was going very well because it was busy but the staff was handling it well! The space does have three booths. I myself ordered the Smash Burger - single with fries. And, if I didn't already know it was a beyond burger with a gluten free bun, it would be very hard to tell. I was pleasantly surprised at the short wait time, with how busy they were and it being their first weekend. I tried the Big Matt Salad and absolutely loved it! You. MUST. try. this. place. I had never been there before and I'm not vegan, but I decided to treat myself after a late night event for my non-profit and the food was FLAVORFUL and SO satisfying. I ordered the garbage plate with Jackfruit as my protein and got a bottle of the pineapple + mango cold-pressed juice. 10/10!! The people there were also so nice. When I informed them of my allergies they checked the food for me and I was able to enjoy my meal in complete peace without worrying about it. It is true that not only their vegan but also nut free and one of the most allergen friendly places I've ever stepped into. The place is very chill so if you have to stick around for aa while, please know there isn't a lot of seating but if there's a place available, it's a nice, relaxing place to sit down and eat. I found the owner quite open about the ingredients. It is a place that offers food for those with nut and milk allergies and therefore not advertised as a "healthy" restaurant though vegan. The bakery sounds delicious but for us too high in cane sugar. I have liked the tomato soup though afterwards, it caused reflux--too much tomatoes for me, I guess. We have been here several times. Amazing vegan food! I was in town for college graduations, and took the family out for a Mother's Day pop-up that Veg.Edible was having in Omaha. SO. MUCH. AMAZING. FOOD. It was served attended buffet style. Chick'n and waffles. Omelettes. Biscuits and gravy. And a lot of sweets -- scones, donuts, cookies, muffins, etc. Service was great. I have to admit that when my vegan daughter wanted to go to a vegan restaurant to celebrate her graduation, I was not thrilled. I am not a vegan. My husband is not vegan and is a picky eater. We were thrilled to find Veg.Edible. My daughter had a breakfast sandwich and loved it. I had the lasagna special and the portion size was large enough that I took half of it home to eat later. My husband had a classic smash burger, a Friday special and he liked it. The french fries were slightly over cooked but edible. The staff were welcoming and friendly and extremely helpful when I had question about soy in the lasagna. I had seen a picture of that on the website and it was love at first sight. They went out of their way to ensure that the lasagna did not have soy. They stated that all the salad dressings have soy and offered oil and vinegar as a substitute. I have to say it was the best result I have had when trying to determine if a meal was safe with my soy allergy. Then we went for desert, to take home because we couldn't eat anymore there. My daughter got a brown sugar vanilla milkshake which was fabulous tasting. I got the caramal apple cake and a large chocolate cupcake with a cream center. We divided both of those and each had half. The chocolate cupcake was delicious and there are not words to describe the fabulousness of the caramel apple cake. We may not be vegan, but we are fans of Veg.Edible. We had a lovely, deliciously crafted meal the other night! My husband is on a very restrictive low fodmap only, gluten free, dairy-free diet and has not eaten out in two years. Matt and Stacy were able to accommodate every single one of his customizations. They didn't blink an eye when we stood there researching specific ingredients to make sure it was safe to eat. I looked her up online via her FB and Insta accounts, which brought me to her website. Stacie does pop-up food events at different locations throughout the metro, but better yet, she will make your food from scratch and deliver it. Caters, too. She also offers pick-up options. Her menu consists of sweet and savory Vegan + GF items: Brunch Items, Dinner, Lunch, desserts (cakes, cupcakes, brownies, scones, muffins) hush puppies w homemade vegan/GF ranch dipping sauce, on and on and on.......Come on!!!!!! I was so overwhelmed and overjoyed by these options that I have ordered/eaten her food every week since discovering her. So much love and time goes into her food. She is dedicated + so easy to work with, plus so accommodating! How often can a GF person eat vegan "meat" options, since many vegan chefs use Seitan as their main "meat" product. Her food is amazing! One cannot tell that it is vegan or GF! We have been so impressed. We did the ordering via her website, then discussed specifics via Text, and she responds almost immediately. It is such an easy process and she is extremely punctual; exceeding our expectations! We ordered the following GF + Vegan items and everything is full of flavor, delicious, and fairly priced: Muffins, Cupcakes, cake, decorated sugar cookies, vegan bailey's brownies, McRib Sand + fries, hush puppies + homemade ranch, breaded tofu fishwich + fries, buffalo mac n cheese. We ordered takeout on a trip through Omaha. Those who ordered burgers were satisfied. You can't really mess up a beyond burger. Those of us who ordered "bowls" found them inedible. After 7 hours in the car, the bar was set pretty low and even then we honestly couldn't eat the bowls. She LOVED her food from here, quesadilla and grilled cheese but could not get enough from their housemade ranch, all gluten free and vegan!
