    Schnitzel with mustard potatoes.

    A unique Swiss Alps vibe makes the Walliser a decidedly different dinner destination. Service is great, decor is warm with lots of wood, gold and blue. Their wine list is extensive and they make great mocktails. We had schnitzel and trout mains and both were delicious.

    My fiance booked the Fairmont, which is honestly one of the most magical places we stayed at. He also grabbed diner reservations at this amazing restaurant. Shout out to Erika who was so attentive and always refilling my glass. We ordered the chef choice where it came with the cheese fondue, two entrees, and we chose the chocolate fondue. I am not a big cheese person, but this was so good. The pork schnitzel and beef was so delicious and filled us up. Everything was beyond tasty and I loved the whole aesthetic of this restaurant. Highly recommend.

    Since we were staying here, my boyfriend wanted to try the fondue experience. Since it was the ending of autumn, we weren't sure how busy it was going to be so we made reservations. Luckily, we eat early so there wasn't much of wait. We were seated upstairs next to the dumbwaiter. The staff were very attentive and knowledgeable. We knew what we were getting already because he wanted the fondue experience, which is the Chateau Experience set menu. The cheese fondue was alright, it was a bit too rich for us. It was very interesting dipping certain vegetable in cheese. The entrees were the rockstar of the meal. We both opted for the Alberta Filet Mignon and it was definitely the right choice. It practically melted in our mouths and pairing with yummy Butterly mash. Aside from the entree, chocolate dessert fondue was a hit! My boyfriend ate majority of it as I'm not a big fan of chocolate. I had a few things and the cream puffs was really good with the warm chocolate. Overall it was a good experience, but once is enough.

    Definitely not worth the price, and not all all consistent with the fine dining experience it purports to offer. We had a reservation yet were seated upstairs facing a wall. The restaurant was not busy. Service was extraordinary slow and inconsistent. When you are paying $100 per person or more you should not have to ask for water refills three or four times. We also ordered other drinks but were never offered refills or asked if we wanted another. The fondue was ok, quite small for the price, and our main course filet mignons were cold. We did have kids with us and maybe that's why they treated us like second class citizens. While the ambiance of the hotel was somewhat nice, nothing else matched. Definitely advise giving this restaurant a miss. For the price we paid, it felt like a ripoff.

    The service was amazingly pleasant. Our waitress Kira was fantastic. Great conversation and attentiveness. The maître d' frequented the table with knowledge of the mountains seen from the huge bay windows of the restaurant. MUST HAVE - Wiener Schnitzel. I've been to many places around the world and tried the schnitzel. This is my favorite one so far. The breading to meat ratio was divine. The mushroom sauce paired with it, elevated an already fantastic dish into an experience.

    Booked our anniversary dinner months in advance and was excited to have a nice meal while staying at the Château. We were seated pretty close to the window so that was nice. Our server seemed very knowledgeable and professional. Our fondue was $60 CAD a person I think or more. Probably one of the worse meals I've had in a long time. Our sides and meat that we received were tiny portions and consisted mainly of bread and sprouts. We only got a few pieces of shrimp and each piece was cut in half to make it seem like more food. We got two tiny potatoes that were pre cooked and soggy. We did sub the red meat for the bison so maybe bison cost more. I'm giving the experience 3 stars because we did have fun and enjoyed the view. The server was great but yikes the food was terrible. We spent big $$$ on this meal.

    Cheese fondue

    We did the 3 course tasting menu with the Sommelier wine pairings. We have eaten at fine restaurants around the world and this was right up there with any of them. We started with the cheese fondue which was fun and very good. It was served with a variety of vegetables, pickles and breads. The entrees were the star. We had the filet mignon and the Wiener schnitzel, both with fois gras. They were both amazing but the Wiener schnitzel was out of this world, just melted in your mouth. Dessert was a baked Alaska which was torched table side. Very good. The wine pairings complemented the meal but we thought the sommelier would come out to give history, tasting notes which did not happen. Our waiter just told us what they were so that was the only disappointment of the night. Not sure that was worth $125/person for 3 glasses of wine.

    Came on a Thursday evening around 6pm in April (non peak szn) and they do not take reservations unless you are staying at the Fairmont. There were plenty of tables and we got seated by one of the large windows facing the mountain (we were lucky and also it was quiet in general). I could imagine this place gets quite a bit busier during peak szn. Definitely get the Prix fix menu if you're coming with 2 people and want to eat their cheese fondue. I saw a table order the meat fondue and it looked ok, but definitely not as good as the cheese fondue that came with the fixed menu. And the cheese fondue "main" didn't seem like a worthwhile endeavour. For 2 with the fixed menu, you share one pot of fondue and it is more than enough! The fondue cheese base is the same regardless of which option you choose, and the only diff is the garnish... So if you choose the truffle one, you're paying a few more bucks for some truffle shavings. The server was really nice and gave us a few extra pretzel rolls as she recommended we dip it in the cheese. She was spot on. Dipping the chunky pretzel rolls in the cheese was decadent heaven! After finishing the fondue, wife and I were already quite full! The tenderloin steak that was served afterwards was perfectly cooked to our liking and very well flavoured. The nice part was they also give a large bowl of vegetables to share. A very nice touch to keep things a little healthier! Lastly, we got the chocolate fondue for dessert (1 to share between 2 pple). We got the dark chocolate as we figured what you dip will already be sweet. We were spot on. They gave a few small cakes, some strawberries, and my wife's fav, a few pieces of homemade marshmallows. Overall, everything was lots of fun, delicious, and enjoyable! I think the fixed menu was about $95 per person, but I felt it was worth it given how much food you get and what a nice experience it is. Cheers.

    Fondue

    Amazing meal at wallister stube! Antoine was amazing. The fondue was very worth it. Get the Lake Louise dessert! The cherry inside was great.

    Appetizer: sausages, sauerkraut, and herbed potatoes. Surprisingly light for a dish.

    Hands down, no question asked, my favorite place in Canada so far. Came in without a reservation and they sat us in the bar area. Service was timely and attentive regardless that the bartender was filing in as our waitperson - he was unfailingly professional and quite funny. More importantly, his recommendation were spot on!!! If I could give this place 11 out of 10 stars - I'd give it 12! (I threw in the extra for the fantastic service - attentive, humorous, and just flat out awesome.) Started off with the French onion soup and two kinds of non-salty sausages topped with sauerkraut and artichoke hearts for appetizers. Then, because I was starving following an unplanned 9 mile hike, ordered the tenderloin beef with mash potatoes and seasoned veggies AND pork schnitzel with roasted potatoes and summer salad. Okay, okay: one was for mom but it was Korean style - split the plates! Now, there is steak and there is S.T.E.A.K. This one was the latter. I thought it odd that they didn't ask how I wanted the meat. Came to find out it's because they don't care how you like it - it's their recipe, their meat, and their reputation so you'll have it the way they want you to have it! And I'm thankful for it because I wouldn't have thought to ask for whatever level of cooked that was. It didn't have an "look at me - I'm your protein of the day" smell. It was melt-in-your-mouth tender and the marinade...a firecracker could have gone off beside me and I would have kept enjoying the meal without a blink. Not only was it the best steak I've ever had but the schnitzel was crunchy and light on the outside and tender on the inside. The red glob is a fruit jam. Was a bit surprised that they'd accompany the schnitzel with jam but now I get it - it's like leg of lamb with mint jelly. Won't have it again with the jam (though I'm sure they don't call it jam). What's amazing is that all of this was less expensive than a sushi meal that I get in HI. That's right! I'm eating more while I'm here for the next couple of days.

It was our first time trying raw bison, and it was such a unique experience! I've actually wanted to try tartare ever since I saw that one Mr. Bean episode, and I'm very glad to report that I liked it much more than he did! My daughter and I also tried elk for the first time, and we both absolutely loved the "gamey" flavor. While Vancouver often gets all the credit as the food destination west side of Canada, Banff has something entirely different to offer that you simply can't find in the city. It's a unique, rustic experience that feels perfectly suited to the mountain setting. It's rare to find a place that is this interactive and fun. We enjoyed it so much that we are already looking forward to coming back on our next trip to Banff!

It's unique to be sure. You also have a plate with a variety of dipping sauces. The apps and dessert follows a fondue theme of melted cheese and chocolate respectively. This is a rich meal. One to have on occasion and for an experience.
