Roast it at a very low temp for 8-12 hours. The interior is clean and should be kept that way. There are many Mexican restaurants in Lancaster, so competition is strong. As a new restaurant, you must have something different to set you apart from the competition. Work on the salsa to uplift it and make it better than any other restaurant. We ordered the fried baloney and the shredded chicken. Our sides were fried mushrooms and mozzarella sticks. With water and a soda it was only $19. I am deaf and when the waitress came over she started signing. It made my day! The three of us chatted for a bit with Felicia. She made us feel welcomed so thank you for that.
