This is a hard chewy part of the oyster; it's not edible in my opinion. In order to eat these oysters I had to cut the foot away from each one. These were the freshest best tasting oysters we had ever had. We bought the 80 lb bag of green banded oysters and they were perfect!! We will definitely use R & A exclusively for our oysters in the future.
