I was at a thing in Jersey with some friends, and I realized that God's gift to dining, Waffle House™, could possibly extend to somewhere within driving distance. And it almost did, but nobody wanted to take an hour drive with me to Bethlehem, PA. So upon some further scouring on Google Maps, I find "Nassy's Waffle House." I didn't think it would be a Waffle House™, but it was worth looking. Sure enough, Google's listing had "wafflehouse.com" as the URL. To be safe, I thought I'd call. [phone ringing] Nassy or whoever: "Waffle House." Me: "This might sound like a stupid question, but are you a Waffle House™ in the Waffle House™ chain?" Fuckface: "Yes." Me: "GREAT! Oh, are you open 24hrs?" Fuckface: "No, we close at 1." Me: "Oh..ok...see you in a bit." And with that, we jumped in the car and embarked on the 35minute drive to Plainfield, NJ. What a flaming shithole Plainfield is, btw. Around 11pm, we finally arrive on the street, and while I'm looking for the familiar Waffle House™ beacon, I find cruel reality staring me in the face. "NASSY'S WAFFLE HOUSE" in a totally unfamiliar font. In comical slow-motion, my head pan's down from the sign to see a tiny, shitty, lunch-counter gyro restaurant. My vision does one of those dramatic slow-motion zoom-in things on all the details of how this is not in fact a GODDAMNED WAFFLE HOUSE. The pictures of gyros. The lack of tables. The total lack of patronage. And in my head, each time I zoomed in one one of these things, it was accompanied by that very grave noise that happens when that kinda scene happens in the movies. That very heavy weight of reality hitting down. "THUNK." Despite all this, my friends are trying to remain optimistic. "Maybe it'll be really awesome anyway, and we'll have a story." "No", I say, "We can't fucking eat here." Ramze S. convinces us to go to Kennedy Fried Chicken next door, but first Gordon H. pops his head into Nassy's and yells "I thought you said you were a fucking Waffle House™!!". Personally, I think he let him off easy. So we walked to the K(ennedy)FC, where we found there was no seating in the dining room at this hour, and that's when I finally convinced the guys to go across the street to Red Tower #1.....(to be continued)

These pancakes are more fluffier and eggier (I think that's a legit word, LOL), and super rich! If you don't like eggs, don't visit because there is a lot of eggy flavor. I've tried the two dominant flavors, Matcha and Strawberry, and I can't tell which one I like better. The light cream topping is better than any butter or maple syrup I've ever had. There is usually one more flavor that they change from time to time as well which I've heard is great. Going on the weekday avoids the wait. The space is small, and the famous Kiseki pancakes take their time, about twenty to thirty minutes, as if they are being persuaded into existence rather than cooked. These Kiseki pancakes are not pancakes in the American sense. They are soufflé style creations, tall and trembling, as if gravity is only a suggestion. They arrive airy and delicate, with a gentle jiggle that suggests optimism. We ordered accordingly. I had the lemon ricotta, which tasted like sunlight had been filtered through dairy. My oldest chose matcha, green, purple and quietly sophisticated and complex. My youngest went with the original maple, a classic executed so well it made the classics feel new again. All were excellent, the sort of food that makes conversation pause because mouths are busy being grateful. My father in law ordered what I personally considered a cautious breakfast. Regular pancakes with eggs and bacon. A meal that could have been assembled in any roadside diner between here and forever. Yet even this was handled with care. The eggs were perfect, the bacon honest, the pancakes dignified. No irony, no shortcuts. Yes, the prices are a little steep. But this is not a place for routine nourishment. This is a place for occasions, for birthdays, for reminding yourself that breakfast can aspire to something like art. Five stars, because sometimes the world surprises you by getting something exactly right.

I guess I was expecting an American version with shaved ice infused with sugary syrup and perhaps topped with fruit toppings and whatever else. However, this was the Korean variation (Bingsu), and it was huge, good for 3 or 4 people. There was a lot of ice cream, very finely shaved ice, jelly bits, red beans, crushed oreos, and I'm not sure what else, but again, more ice cream than ice. At this price point, I don't think I'll try the Bingsu again, and I can't say I'm excited about the other menu items, but you never know, I may give it another shot and try other breakfast items. It's not fair to judge an eatery based on 1 item, but looking at the ambiance and service also, for now I'll throw out a rating of 3 1/2 stars. Add another 1/2 star if you love waffles.
