Best Soufflé Pancakes ever! Now that I've actually been to Japan I can honestly say I crave these pancakes more than the ones I had overseas! These pancakes are more fluffier and eggier (I think that's a legit word, LOL), and super rich! If you don't like eggs, don't visit because there is a lot of eggy flavor. I've tried the two dominant flavors, Matcha and Strawberry, and I can't tell which one I like better. The light cream topping is better than any butter or maple syrup I've ever had. There is usually one more flavor that they change from time to time as well which I've heard is great. Going on the weekday avoids the wait. The space is small, and the famous Kiseki pancakes take their time, about twenty to thirty minutes, as if they are being persuaded into existence rather than cooked. These Kiseki pancakes are not pancakes in the American sense. They are soufflé style creations, tall and trembling, as if gravity is only a suggestion. They arrive airy and delicate, with a gentle jiggle that suggests optimism. We ordered accordingly. I had the lemon ricotta, which tasted like sunlight had been filtered through dairy. My oldest chose matcha, green, purple and quietly sophisticated and complex. My youngest went with the original maple, a classic executed so well it made the classics feel new again. All were excellent, the sort of food that makes conversation pause because mouths are busy being grateful. My father in law ordered what I personally considered a cautious breakfast. Regular pancakes with eggs and bacon. A meal that could have been assembled in any roadside diner between here and forever. Yet even this was handled with care. The eggs were perfect, the bacon honest, the pancakes dignified. No irony, no shortcuts. Yes, the prices are a little steep. But this is not a place for routine nourishment. This is a place for occasions, for birthdays, for reminding yourself that breakfast can aspire to something like art. Even if you aren't a sweet breakfast person, get a stack of the fluffy Kiseki souffle pancakes for the table. They are seriously sooo good and they are made to order. Put the order in for them as soon as you can even if you don't know what else you will be having. They take about 20-30 minutes to cook, but they are worth it! Along with the table pancakes, I got their veggie omelette and loved it. It came with a side salad and small side of fries and everything made for a delicious meal to start my day in Princeton. They take 30 minutes to cook so you want to plan to time if you have other things to do. The pancakes were $18. They were cloud like textured and melted in my mouth. Came here for brunch with a friend on Saturday bc we heard the food is insta worthy haha. It's packed by we got seated within 5 minutes. The store is small but doesn't feel tight or crowded. The service was very fast and friendly. We got the famous pancake and an omelette to share. The pancake is so soft and not super sweet which we loved. Granted I don't really like sweet meals, but I remember enjoying them when I was in Japan, but these do not compare. I've been here multiple times. On weekdays and weekends. It's a great brunch option in the area and I've never had to wait for a table. Their egg Benedicts were solid but nothing special. I do like their kaarage in which the portion size is decent for the price. It was fried to perfection where it's crispy on the outside, hot, tender and juicy on the inside. Their burger was also very good where the meat was very juice. The fish burger, however, I felt was a miss. The fish lacked flavor and it was served with a few small pieces of fish so it got very messy with the burger falling apart and fishes falling everywhere. We ended need up needing to eat it with a fork and a knife. The highlight of their menu for me was their soufflé pancakes. I've tried their strawberry, matcha, and their seasonal Mont Blanc. The pancakes were light and airy, perfectly paired with their respective cream which was well balanced and not too sweet. I particularly like their Mont Blanc which included chestnut paste and actual chestnut pieces. Their pancakes are their must get items on their menu. The only downside I found was it seemed a little chaotic when I went on a weekend. They may have hired part timers on weekends in which they didn't seem to know what to do and where things were. The dishes and cutleries were also dirty and we had to ask for new ones. This was never a problem when I went on weekdays. Overall, I would come back over and over again when I'm on the area. Fair warning, however it takes a minimum of 45 minutes to make and up to an hour during peak periods. But that's because it's made fresh and absolutely worth thewait! It involves a very delicate procedure done by about three different chefs. I was lucky enough to get a table close to the chefs and actually watch them make the soufflé pancakes! If you're interested, try to get a table up by the cooking area so you could watch yourself! The strawberry soufflé pancake blew my mind away! We only ordered one to split, thinking that this would be too big and too rich for one person. That was a mistake! We should've ordered at least two, maybe maybe two different flavors, and split them both! And even gotten some of their eggs or something else. Another thing, their coffee is to die for! They were honest that everything was going to have to take quite a bit of time. My friend and I didn't mind, but several other customers were asking for refunds due to the long wait for food. We were able to come here for a Yelp Elite event and it was amazing! The restaurant is super clean with plenty of tables. We had a huge group of Elites and still had extra tables. This is as authentic of fluffy pancakes as you're going to get! The owners are Japanese and this is their first location in the U The pancakes were so light and decadent. It really brought us right back to the first time we tried these types of pancakes in Tokyo, Japan. The variety is great and I wouldn't be surprised if they had seasonal flavors down the road! We first had this style of pancakes several years ago when we were in London during Covid, and I have thought about them ever since. I'd never had anything so light and airy and delicious. Whenever we traveled to other big cities here in the US, I've always looked to see if there was anything similar and I finally found them! I had the lemon ricotta kiseki pancakes, my husband had the chocolate banana kiseki pancakes, and my dad had the regular 2 pancakes with eggs. Our only complaint was that the meals were not brought out together. My dad's meal was brought out a half hour before either of ours, so we sat and watched him eat, which he said it was really good. So he was completely done eating when ours came out. We knew that ours would take longer, but we thought dad's food would be served at least around the same time as ours, not just right away. When we arrived, we were the 3rd ones there, so we were seated right away. We ordered the strawberry kiseki and matcha kiseki pancakes. The strawberry only came with 2 pancakes placed like a sandwich with strawberry jam in the middle, topped with a light strawberry cream and fresh strawberries. It was so decadent! The matcha came with 3 pancakes topped with a scoop of red bean paste, light matcha cream, light white cream, matcha syrup, and matcha crisps around the edge of the plate. This was my favorite out of the 2. Staff were very friendly and made our visit so much more enjoyable. Only thing is that the pancakes are quite expensive, costing $18 each.
