I would have liked a little more of the olive brine and lemon verbena flavors to come through, most sips really just tasted like vodka. The meal only got better and better from there, though! We ordered a couple of the Mezze spreads with pita, the beets, and the roasted parsnips to start. Everything was delicious but the parsnips were an absolute home run, everyone at the table was blown away by how flavorful such a simple veggie could be. For entrees, some of the favorites at the table were the Phos Gyro, Sea Scallops, and the Swordfish special. You can really tell everything is farm-to-table, it's all so fresh and flavorful. I was thrilled to see that Hudson Diner opened the day we arrived in town for a two-week stay. We…read morehave our favorite restaurants here that we visit every trip without fail, but we will always jump at the chance to try a new spot--especially when it's the brainchild of folks who run some of our other favorites in town. It is not surprising, then, that we thoroughly enjoyed our time here and were already planning our return before we had even finished our meal. Hudson Diner is wholesome, quirky, nurturing, fun, and affordable -- certainly a welcome addition to the dining scene! We walked in here at around 8pm on a Saturday night (they don't take reservations, at least at the time of this review). The space was about 2/3 full when we arrived, but about 15-20 minutes into our time here, it had filled up considerably. Hudson Diner took over the space that used to be Grazin' Diner, and while the bones are the same, the energy is noticeably different (read: improved). The menu at Grazin' was giving overpromising and underdelivering whereas Hudson Diner's menu is understated and what you'll receive is fresh, classic, and delicious. I heard from a friend that Hudson Diner was boasting an impressive cocktail menu, so we made that a priority upon arriving. Like the food menu, you'll see a list of well-known classics (i.e., margarita, martini, tom collins) and some lesser known classics (i.e., amaretto sour). Lately I've been more in the mood for the classics rather than that super fancy and intricate stuff, so this was exciting to me. I started with a mezcal margarita because it was a hot day and there's nothing that gets me more in that summery place. They couldn't do it spicy but they at least had salt, and it was delicious. My partner started with a Singapore Sling, which I was pleasantly surprised by (I often find them too sweet but this one was very well-balanced). I then made a hard pivot to a dirty (read: filthy) gin martini, because I am me. This one did not disappoint either! Food-wise, it's still all about the classics. Snacks/chilled apps, a bunch of salads, sandwiches/anything between bread, and mains. Yes, the bread is from Mel the Bakery. We split every as we're known to do, but it's not necessary to do shared plates style here. That said, it's always fun to try everything on the table. Eats, below: Smoked Fish Dip We threw this in at the last minute and the impulsivity paid off. Served with Saltines, which felt correct in this context. It was like very good whitefish salad, delicious and nostalgic. Greek Salad Nothing like a fresh Greek salad on a hot day. I would've liked a few more tomatoes thrown in there, especially at this time of year, but that's personal preference. Overall, a great salad that was very satisfying. Chicken Souvlaki w/ tzatziki, greek salad No frills, no problem. Little else to say about this other than it hit the spot. Chopped Steak w/ peppercorn sauce, onions, peas I was curious what "chopped steak" would be given that I've ever seen something described as such. Perhaps I was thinking it would be something similar to the way steak is served in carne asada? In this case, it was closer to hamburger than steak, the steak being "chopped" to the point of being essentially ground. My partner was surprised, but it was a moment of needing to withstand the surprise of getting something different than what you were expecting, because it was downright delicious. I loved every bit of it. Served with onions rings that we agreed were the perfect ratio of breading to onion, with space in between. Peppercorn sauce was delicious and I wish I could've gotten extra to take home and put on roasted veggies at some other meal. Lastly, I'll just say that the service was excellent. We were checked up on by multiple people throughout the meal, and water glasses were filled in a timely and efficient manner.

Lil Deb's has held that title for me for…read moremany years, but in anticipation of its closing (which remains devastating), a new spot will ultimately be taking over the top spot -- and Haema is the clear frontrunner. The food is a beautiful fusion of Korean and Chinese cuisines with some European influences, reflecting the chef's culinary training and cultural background. Though I love all of the New American farm-to-table spots in Hudson, the dining scene has been lacking in other types of cuisine for some time, and Haema perfectly fits the sensibility of the town while still contributing to the overall variety of the landscape. We came here at 8:15 on a Saturday night. Despite being quite new, it was quite full when we arrived, which is not a given, as there have been other potentially interesting restaurant openings in the last few years that have not garnered this level of immediate appeal. Somewhat relatedly, Haema is in the space that was formerly Bar Bene (which I never went to in my many trips to Hudson because it never interested me -- and it seems I was not the only one given the fact that it is no longer), and it is completely transformed. It's cohesive, warm, and inviting, with energy that feels palpable as a passerby on Warren Street. Though the food is the main draw here, the cocktails are excellent too. We both got the Passionately Naked (mezcal, genepy, passionfruit, apertivo, lime) which I imagine, given the name and ingredients, is a twist on the Naked and Famous which happened to be one of my favorite classic cocktails. My partner also got the Lychee Margarita (blanco, lychee, lime, agave, shiso salt) and I later tried the Salted Plum Manhattan (akashi ume whisky, salted plum, oka kura bermetto), which were also both excellent. All using specs of classic cocktails but with ingredients reflecting the Korean and Chinese influences seen across the food menu. Food-wise, truly everything was excellent so there's not much sense in giving letter grades as I usually do in reviews. The food very clearly reflects the pedigree of Haema's chef -- formerly of Gramercy Tavern and Van Da in NYC -- while still being approachable and familiar. There's an impressive variety of dishes on the menu with plenty of gluten-free and vegan options should you require that. Eats, below: Steelhead Trout Crudo w/ coconut nam jim, nectarines, cucumber, jalapeño Bright, fun, fresh, creative, and a great complement to some of the richer, warm dishes. House Salad w/ miso-ginger dressing, little gem, kohlrabi, lotus root chips If you think every house salad is bound to be basic, think again. The dressing is both savory and bright, and ties together all of the fresh, earthy flavors/textures of the rest of the components. Ginger-Chicken Meatballs w/ tamarind-green peppercorn sauce Do not neglect the snacks because these are a must-order. Only three in an order so they are low commitment and thus easy to add on. The meatballs themselves were unbelievably flavorful and the sauce was just next-level. Mushroom Larb (vegan option of the pork larb) w/ shredded veg, lime dressing, herbs, rice powder, peanuts, pickled thai chilies, cucumbers, crackers Between my desire for enough veggies, my love of mushrooms, and the reviews I saw referencing the vegan larb, this was a must-order for me. This is something I could eat all day and in massive quantities. Larb often feels like a hodgepodge of a lot of great things though I know there is plenty of skill/technique involved, but the varied nature of it makes so satisfying yet it's light so it's easy to eat a lot of it. Five Spice Duck Leg Confit w/ coconut creamed corn, scallion chimichurri If there is one dish on the menu that you cannot miss, it's this one. So unbelievably flavorful and perfectly executed. Your first bite will make your eyes pop out of your face in cartoon-like fashion.

The steak was a little overcooked for my taste but it was seasoned well and mixed with lettuce, cheese, sour cream, and I remember some spicy sauce. I got the food to go so I didn't get a lot of restaurant experience. I did notice that even though the restaurant was practically empty, it still took the kitchen a long while to cook the food. It was still really good so it was worth it. I also wished that they have given me to go silverware and napkins. The food was good but since I wasn't staying at a place that provided silverware or napkins, it was quite messy.
