I went with a friend on a Saturday night, which admittedly might have been a mistake, since they are extremely busy. But the wait was not terrible; unfortunately, the pizza was just a notch or two shy of very good. Came here an hour early for our reservation--around 6:30, and the place was already packed. We were seated quickly, however! There was a wait until we were served though, which everyone in my party of six agreed was a tad too long, even after we'd all closed our menus. Once we were served, our server for the night was so lovely and attentive! I had a Dark'n'Stormy for my cocktail of the night, and I liked it very much! A nice kick of ginger with an interesting and tasty mix of sweet syrup as well. My friend ordered an Old Fashioned, and it was entirely too bitter for both of us. The drinks menu seemed pretty vast as well. The pizzas--clearly the reason this place is so popular--were amazing! I was a little boring and ordered my traditional favorite, a Margarita pizza, but it was definitely one of the best I've had (including my beloved New York City orders)! A small is more than enough for one person--most people finished theirs, but two of us had enough for leftovers. A regular sized pizza from here is also perfect to share for two. Although I made jokes about it during the meal, I adored the simple decor. The colors were warm without being distracting, and my favorite thing was the black cloths held up by clothespins and binder clips. It felt very DIY and unpretentious. When you first step in, the restaurant seems as fancy as you would want or expect a restaurant that served just pizza to be; nice enough to be a good night-out spot, and casual enough to be comfortable. I would love to come back here, maybe to try a different cocktail and branch out on pizza toppings too! Middlebury is full of good food spots, and American Flatbread surely fits in that mix. read more

We got three regular size flatbreads that we didn't finish. Each was excellent. The atmosphere is fun and not a "pizza place," more upscale/trendy. American Flatbread is a pizza benchmark by which others must be measured. Others have well documented the local ingredients and outstanding libations (in particular, Lincoln Peak is a notable local wine that's available there). There are too few wood-fired oven pizzerias, and this one is too good to be missed. The staff reflect George Schenck's philosophical bent well, happily providing attentive friendly service every time. Yeah, it's worth the wait and the money. read more

American Flatbread is a classic restaurant for Middlebury College students who want a taste of the local flavor without getting too local. Almost every option is exceedingly tasty & equipped with all the non-standard options for vegetarians, vegans, pescatarians, and whatever other diet college students are convinced will save the planet (and a few pounds). The ambiance exudes the homey-but-not-too-homey vibe, complete with those candles that look real (but upon close inspection are sadly not), a stone oven (not pizza oven), and friendly servers who are all too happy to take your order and talk your ear off about the locally sourced ingredients. Though I am not entirely convinced the so called "flatbreads" are not pizzas cut into rectangular shapes, the quality of the food is top notch. Here I commend the creators of the flatbread for reinventing pizza to make it more trendy and appealing. To all the true flatbread fans, I apologize for my lack of FB expertise. read more

The flatbread was delicious, the atmosphere was cozy and warm, and the staff was friendly and welcoming. I could tell right away that this restaurant uses only the best and freshest ingredients. The flavors and fragrances of the toppings really come through while the bread delivers the perfect balance of texture and flavor. Cooked to perfection, toasty and crispy on the outside, warm and tender inside and just the right amount of chewiness. This place will definitely be on my itinerary the next time I visit the area. read more

This place is great. We love coming here every time we are in town. I love their beer selection - they always have some awesome local options on tap. The last time we were there we started out with the cheese pierogis and I cannot wait to come back to have them again. They were awesome. We love their pizzas. I love the cheese and herb pizza. It is simple and not too fancy, but the flavor is outstanding. My family enjoys the New Vermont Sausage pizza as well. This is hands down the best place around to eat pizza, particularly if you're a vegetarian. The garlic-rosemary white bean dip plate is a great beginning and the roasted tomato salsa flatbread is a winner. Local craft beer is served and wine from Lincoln Peak Winery. The best part about this place is that all the ingredients come from local farms, proving once again that Vermont takes care of its own. ALWAYS amazing! Love their evolution salad--ginger-tamari vinaigrette with in-house raspberry vinegar!!! They need to bottle this, and sell it everywhere! Flatbreads are all tasty, many vegetarian options. We like the New Vermont Sausage (housemate maple-fennel sausage, sun dried tomatoes, caramelized onions, mushroom and two great cheeses! Cycling through town on a BAC ride and stopped in here for dinner. The building is a marvelous old marble works factory and the two roaring fires gave the place a warm and cozy glow. Most of the ingredients are organic farm to table, very fresh and full of flavor. The 4 of us shared an evolution common salad and a regular sausage flat bread - and a bottle of wine - and left happy and satisfied. Our server Chloe was awesome, as was the entire staff. Up for a college tour of Middlebury College. Showed up when they opened 4:30, they weren't sure they could seat us (lots of empty tables). I said ok, to go, they said our pizzas would be ready at 7:30! Ten minutes later they sat us, we ordered drinks, a salad, 2 personal pizzas at 5pm. Waitress came up a few times saying order ready soon, 6:45 I ask where our pizzas are, at 6:30 we had been told 15 minutes. TURNS OUT THIS IS NORMAL. Kitchen and pizza makers work at a molasses pace until the backlog becomes ridiculous. They are a chain, "flatbreads" a bit odd and over-doused with balsamic vinegar on top. Wouldn't go back. However, Otter Creek Bakery wonderful for breakfast and lunch! read more

Great gluten free pizza! I go here a lot and have celiac. Staff is super nice and knowledgable about gluten. Great for people with any dietary restrictions (dairy free, vegan, vegetarian, gluten free). A little pricey, particularly with the up charge of the gluten free crust. They only come in one size but perfect for one or two people. read more

Ugh. Middlebury really lacks a good pizza place. People SWEAR by American Flatbread, but it's never clicked for me. I've visited a total of 5 times, 4 of those times unwillingly. The Bad: 1) No meat options except for pork! Bacon, ham, and pepperoni galore... As someone who doesn't eat pork, this is really a turn off. It's difficult to have a complete meal without a good source of protein. There are quite a few pizza places in the Burlington area dedicated to local foods that have plenty of meat alternatives. 2) The flavor combinations. Ah, the Roasted Tomato Salsa pizza... the description lists onions, garlic, cilantro corn, black beans, wood-roasted tomatoes, etc. Considering how busy this place gets, by the time I've finished my starter I'm nearly drooling in excitement for my flatbread. Sadly, once you get past the standard, no-frills pizza options, the flavors become pretty weird. Not bland, just... discordant. I'd say that's true of the Roasted Tomato Salsa and the Revolution. The Good: Flatbread's commitment to local is laudable. Portion sizes are good, the basic flatbread options are good, and their salad is absolutely delicious. While if in the mood for pizza I'd rather drive to Pizza on Earth in Charlotte or La Boca in Burlington, its proximity is good for those busier days. read more

Finally we managed to visit...as we live in Woodstock VT and are rarely in Middlebury in the evening. We;ve visited Burlington and Waitsfield locations which were both great...but Middlebury has a secret weapon.... Kim...who knows how to tend a good bar, chats to clients and also enjoys life with a great British sense of humour as she hails from Blighty. Also being an Eddie Izzard fan makes her presence at the Flatbread a cherry on top of the cake! The on tap beers provide an interesting selection, the daily flatbread (Tofu...and I'M A MEAT EATER...but I loved it!) which we ordered as a half and half with the other daily special were the dogs bollocks! The chilled spinach, courgette (none of this zucchini rubbish for me!) and yoghurt soup to start with followed by a strawberry frangipani tart made for a great supper. And then there was Kim to chat with.....one of the best looking vegetarians working behind a bar that I've seen in Vermont! She has a great smile, opinions on everything and also understands the irony of British humour (spelled the correct way!) As Eddie Izzard says.....Herb..there's a feckin H in the word.....so use it! It took us 8 years to get there....don't you leave it so long! read more

Best organic pizza I've ever had! I went to the Summer Language School here in 2008 and found myself returning to this restaurant over and over. Every pizza had a distinct flavor to it that kept me coming back for more. Not only did I enjoy the pizza, but their selection of alcohol was excellent, as was the ambiance. I recommend this restaurant to anyone that is lucky enough to be in Middlebury on the weekend. read more

American Flatbread has an interesting selection of 'hippie' pizzas which include fresh ingredients from local farms and providers. Don't expect a fluffy hearty crust, but most will not be disappointed. Pizzas are cooked in a brick oven and are quite delicious despite some the more obscure combinations of toppings. Service was so-so. I was with a group of 6 and we waited a solid hour and a half for our first pizza, then it took another forty-five minutes to get our 3 other pizzas. Granted it was a busy Friday night but our server simply just forgot about our last pizza. While you wait you do have a great beer and wine selection at very fair prices. Try Magic Hat's Circus Boy on-tap for $4.50, not bad at all. Overall American Flatbread has great pizza and drinks, just prepare for the long hall on a busy night. read more

Great meal with the family. Fun atmosphere and pizza was very good. We are from CT area and are a bit spoiled. The cheese was okay so I would recommend venturing away from that. We had the sausage onions and peppers and that was a "doover" as my kids say. It was fun to watch them work the very unique oven. Pizza and beer...hard to not like the combination. Having moved here from the New Haven area, and NYC before that, I can say with some authority that this is not the best pizza I've ever had, but it's pretty darned good! Flatbread consistently turns out a thin-but-chewy crust, and does really well with unexpected flavor combinations -- I've yet to have a special that wasn't at least solidly good, and many have been truly excellent. Extra points for striving to keep it local and organic. Great for families with kids and college students alike. Nothing not to like here. read more

It's so tasty. It's made with fresh, almost always healthful ingredients. It's walkable from campus ('cept for maybe when it's cold out). It's true that it can be crowded. I think it adds to the atmosphere instead of taking away. I got my fill on about 20 dollars. It's so tasty that it's worth it. That, and I eat a lot. Great if you're with someone who's been there and knows what's up or if no one in your party has any clue. Definitely better with people and not alone. Try it out! read more
