Niman holds itself in high regard for its humane treatment of its livestock and for the quality of the feed they use. We were doubtful, and pleasantly surprised at the high quality of this pork. It was exceptional. Until it wasn't. We put their loin on the menu as a Pork Chop. A great hit! A few weeks in we placed our third order. Unfortunately, it was not the same as the previous orders. The meat was damaged. In the industry what we got is called PSE pork; the letters stand for Pale, Soft, Exudative Pork--the meat is mushy, liquid runs out of the muscle cells and if it's really bad one can put a finger through it like mayonaisse. There are only two known ways this can happen, and it should never happen in a top quality, expensive "heritage" product. Either the animal was abused (scared, beaten, attacked) before slaughter, or the carcass was improperly handled after slaughter (cooled down inapproriately). I tried to make use of the product but was sorry I had purchased it; (we usually do not buy meat products from large concerns like Niman as this is the kind of thing one gets from a "name"). When I could not get a good result with this meat I wrote to them via their website, hoping they would rectify the problem and assure us it was an anomaly, but like all large companies they ignored us. I grew up in the meat industry and have over 55 years experience handling and cutting meats both in our family market in Carroll Gardens, Brooklyn, and in my restaurant in Norwalk CT. I know what PSE pork looks like and I know what proper customer service looks like too. By the way, PSE pork will not hurt people who eat it, and a lot of it is eaten in product meat (sausage, baloney, etc) but it is tough and dry when cooked and not something one finds on the menu of a New York Times 3 Star restaurant. Good bye Niman Ranch. You have been found unworthy by Pasta Nostra in Norwalk.

I thought I might be able to get an inexpensive beef for them and not have to fight a line in the grocery store. The food and the meat in this well kept, immaculately clean carneceria was beautiful and FRESH! Every kind of meat (chicken, beef, pork) that I could imagine was displayed in an inviting array of sustenance just begging to be bought and nurture a meat eaters soul. It actually made me want to find a recipe for beef and partake. The ground beef the butcher offered me was quite obviously of superb quality and priced MORE than fairly. I didn't have the heart to feed it to my dogs, so I tried, in my very poor Spanish, to ask for a more humble "cut" of beef. I just didn't have the heart to tell the butcher it was for my dogs, and I was embarrassed when he replied to me that it was a good price. Yes. Yes, it most certainly was, but just a little too good for my dogs. I've mentioned this store to all of my co-workers and would recommend it highly to all. Great prices. Beautiful meat! Pensé que podría conseguirles una carne barata y no tener que hacer cola en la tienda de comestibles. ¡La comida y la carne en esta carneceria bien cuidada e inmaculadamente limpia eran hermosas y FRESCAS! Todos los tipos de carne (pollo, res, cerdo) que pude imaginar se exhibieron en una atractiva variedad de sustentos que rogaban ser comprados y nutrir el alma de los carnívoros. De hecho, me dio ganas de encontrar una receta de carne de res y participar. La carne molida que me ofreció el carnicero era obviamente de excelente calidad y tenía un precio MÁS que justo. No tuve el corazón para dárselo a mis perros, así que traté, en mi muy pobre español, de pedir un "corte" de carne más humilde. Simplemente no tuve valor para decirle al carnicero que era para mis perros, y me avergoncé cuando me respondió que era un buen precio. Sí. Sí, ciertamente lo fue, pero un poco demasiado bueno para mis perros. He mencionado esta tienda a todos mis compañeros de trabajo y se la recomendaría a todos. Precios grandiosos. Hermosa carne!
