The eggplant is delicious, slightly sweet with a creamy rather than chewy (thank god) texture. The cashew ricotta is also tasty, but I do think it needed to be blended a bit more to remove the slightly grainy texture (the cashews might have needed more soaking). I appreciated that they were salted perfectly. I appreciate restaurants that can make satisfy a variety of preferences and dietary restrictions.
