    HOLY MOLÉ!!! Dude...these tacos are BOMB!!! Even the vegetarian tacos are delicious...and I'm not even a vegetarian! Lengua = on point, so good! I got seconds! Al pastor = deliciously satisfying Carnitas = amazing chipotle BBQ flavor Quitlacoche = vegetarian and wonderful Flor de Calabaza = vegetarian squash blossom euphoria ATACOLYPSE NOW can be found outside of Equinox Brewery on Fridays and Saturdays starting at 6pm. They are also open in front of Pateros Brewery on Thursdays. Pablo is an awesome chef and really cares about his customers and the food he serves. I love that I see him constantly using a laser heat thermometer to make sure the grill is hot and that the food is getting cooked properly. I've lived in LA for 9 years and ATACOLYPSE NOW in Fort Collins, CO definitely takes me back to the street taco feel with a yummy taco for an inexpensive price...but still with quality ingredients. If you want some late night taco munchies to go with your beer, this is the place to be. I think I'm about to order another taco...

    Geat Tacos!! Never had food from a food truck. Highly recommend. Great service and the cook was very nice.

I have been here twice now and greatly enjoy these authentic street tacos. Everything is just so tasty and the guy and girl that run the operation are very nice and I strongly encourage that everyone give it a try at least once! Be aware that they only serve tacos and quesadillas yet they have a picture of a tostada as one of their menu items. It has been discontinued so they should probably update that sign of theirs. Other than that no complaints. I am planning on many happy returns here at this good and inexpensive food cart over this coming summer!

There, you have to keep it simple - there's limited space for ingredients, and pretty much one cooking technique. Food carts narrow their scope to focus on one or two types of menu items and nail the execution, because it's the dish they specialize in! Tacos On The Street is the food cart on the northeast corner of College and Oak near the Aggie Theater. They've been serving some of the most simple - and yet, super tasty - street tacos in Fort Collins since the fall of 2010. They serve grilled rib-eye steak three ways - in tacos, tostadas, and quesadillas. Whatever form you choose to eat it in - it's made with homemade corn or flour tortillas, topped with onions and cilantro, and fresh homemade salsa and guacamole. That's it. Those six simple ingredients. Those three basic dishes. But, they taste great. I stopped by for lunch one sunny afternoon so I could enjoy the summer weather and people watch in Old Town. I ordered combo #1 - a taco, a quesadilla, and a toastada - all loaded with the available toppings of onion, cilantro, salsa and guacamole. The service was friendly and fun, chatting away while they grilled the steak right before my eyes. The cart was clean and organized with their operating license displayed right in front (and I later found out that they welded the cart together themselves - that's impressive). I sat on one of the park benches that line College and dug in. Since this the same dish each way - everything tasted about the same - simplistic and fresh. The grilled steak had a slight smokey flavor, and I thought it was kind of funny watching the smoke from the grill billow out onto the sidewalk, enticing more people to eat tacos. The tacos were juicy and light, the toastada crispy and a bit too dry for my liking (next time I'd ask for extra salsa and guacamole). The quesadilla was the best of them all since the cheese really added another level of flavor and texture that pulled it all together (literally). Not only was this light and simple in taste - it was the same for my pocketbook. Good food doesn't always need to be complicated. It's fantastic that we have a real Mexican street taco option, and best of all - the simplicity is perfect.

Slowly licking the creamy white sauce from her lips she smirked. Each penetration into the gentle, juicy folds of the warm, spicy flesh caused her eyes to roll back in gratification. Tangy sourness teased her tongue in every nibble. The chewiness filled her mouth and her yearning. It wasn't long before it was all over with, leaving her to suck the remaining flavor from her fingers. Women, men, bar hoppers in Old Town, are gaining late night fulfillment on the dark, cool corner of Mountain and College. Every Wednesday through Saturday from 10:00pm to whenever the bars close and revelers start to go home, people looking to please their appetites begin to line up for quick appeasement from a simple menu; a quick and cheap satisfaction. There are other things on the menu to lust after, but you go to this cart to get a hot, juicy, meaty (sometimes double meat if you're feeling it) gyro. Since 1999 people have been partaking of this after hours delight and haven't been shy to tell about it. It's one of Fort Collin's most infamous food carts. I've been by at both the first half of the night, stone cold sober, and after the night progresses into the early hours of the morning and I've had a few cocktails. Sometimes, a few drinks can make a difference, and so it is here. I prefer them much more when I'm feeling a bit saucy, otherwise they leave me wanting something more. And it's not the size that matters here. But when I'm out having a good time, these gyros quell the salivating hunger sublimely. The mix of rich grease, smooth cream, dense chewiness and hearty meat works just right to keep me going for the rest of the night.

Yes, yes there is, and you can find it at a food cart. I know! A food cart! This food cart is the cream of the crop, the bees knees and the cats meow. They are bringing the best of that food cart trend we're seeing all around the country to Fort Collins and taking it to an unbelievable level. There are very few places that I eat at on a regular basis. Fly By Diner is so good, I eat there every week! Finding this great food on a regular basis is not so easy. They are at the Advanced Energy parking lot off of Midpoint Drive on Wednesdays from 11:00am-1:30pm. On Thursdays they're at the New Belgium employee parking lot off of Buckingham at the same times, and on Saturdays they are at the Larimer County Farmer's Market in Old Town on Oak Street. We eat breakfast there every Saturday morning at the market when we pick up our vegetables from Native Hill Farm. It's the highlight of my morning (next to the excitement I have when The Preschooler is picking out healthy vegetables to take home). Fly By Diner is not only a fabulous food cart that serves downright amazing food, it really is some of the best you'll find in Fort Collins - period. The constantly changing menu features inventive dishes that not only taste good, but are good for you. This is a Fort Collins food-lovers dream! I'll see you there on Saturday morning!
