The dish that you really have to order if it's your first time at the Vardar and you might never come back (you fool!) is the kleftiko. (This dish is also widely known, at least in my other half's family, as 'Kalashnikov' - har har!) It consists of a lamb shank cooked according to special (secret?) Greek methods and is utterly, utterly melting and delicious. The meat is so tender you barely need to chew, you could just bite and swallow. All the accompanying vegetables are also delicious (especially the fabulous fried potatoes), but the lamb is the centre and the star of the meal. Do not delay, book in today!

Steven Edwards (an award winning British chef) and his team clearly know what they are doing and are not afraid to experiment and surprise. My wife, daughter and me spent a very enjoyable 3 hours dinning at Etch and left very happy and pleasantly surprised. The fish and chips were average at best. The triple cooked chips were hit and miss, some perfect and others hard in the center like day old roast potatoes. The fish was slightly overcooked and the batter was ok, below average from other fish and chips we've had. The steak was cooked as ordered but again pretty average tasting, the prawns were not the freshest and the squid was delicious. Doubt we'll be back

It was not yet 5pm on a Wednesday evening. The guy at the bar asked if we had reservations, which we did not but they did have space to accommodate us. Now you may be wondering about the food. I can confidently say that this beef Wellington was one of the best I've ever had in my life. It takes 30 min for them to make it but it's well worth the wait. I've been to Gordon Ramsay's in Vegas. I've dined in Michelin restaurants. This was better. The filet was melt in your mouth perfect medium rare with a great wine sauce. The puff pastry and mushroom layers complimented it so well and if you can see that technique, no air bubbles between the meat and the pastry. Service was good. Not sure this is a good thing as, surely, most people choose a venue on it's food and this takes away that choice... They do offer a Dining Club discount on food (must include a main course) of 10% - this is Monday, Tuesday and Wednesday and 'a steak for a tenner' deal on Thursdays. The whole pub is undergoing refurbishment in early 2024 inside and out which is great news as it was looking a bit tired when we last visited. Better weather sees the use of the large field for parking and al-fresco dining which proves very popular, especially at weekends as the pub is located in the South Downs National Park and is just a (steep) walk from the South Downs Way.
