The place was packed to the point where I ended up standing at the bar. I guess even the bar seats require a reservation. There's a lot of creative cocktail making going on here, and I enjoyed the drinks, but both of the drinks that I tried seemed simpler in actuality than their complex descriptions implied that they would be. Certainly, the Kelpie was well-named because it was like drinking ground-up nori. If you don't like seaweed, you would not like this drink. The other drink I had was the Run Wild, which turned out to be an excellent espresso martini, but again not as complex as the ingredients might imply. It was perfectly assembled, though, and the float of cream on top of it was sublime. There's a nice menu of happy hour bites that I hadn't seen online, and also a food menu for sharing that I hadn't found anywhere either. In addition, during happy hour they were passing around various small bites, including their chili chicken and a truffle flatbread. Both were quite tasty and appreciated. The bartending was precise, but the volume level in the place precluded any form of socializing, so I can't comment on the friendliness of the servers.

The demeanor of the hosts and management need improvement. Otherwise, the service when we ordered drinks and the quality of drinks were really good. I feel like some negative reviews also voice the same issue. While my issues were resolved via compromise on both sides, I am still leaving this as a 1 star since I was not particularly satisfied in the way this is handled compared to numerous other visits at bars and restaurants of high caliber (as demonstrated in my repertoire of reviews) We got the Kelpie and Northern Lights, both fantastic drinks with good presentation and show. Kelpie tastes like seaweed in cocktail form, with a bit of herbal notes from aquavit. The Northern Lights is presented with a smoke effect and is tangy and refreshing. Drinks were excellent. A few issues were mostly from hosts/manager side which caused pain to the beginning and end of the visit - We walked in, full house, it is busy I get it. Sunday 8:45pm. I found reservations for 9:30pm and let them know and I trust their understanding of waitlist and reservations management. Both the host and I communicated thoroughly throughout the process, so credit is due here. - However, we were perusing the menu within earshot of the host table, and a couple without a reservation social engineered their way to bar seats. So I asked what the situation was and they said they were at standing tables for drinks, but they were lying since we saw them get the 2 seats at the bar - So we decided to not wait any longer and were at the standing tables. Not really a big deal, would have preferred that this was an option to begin with since we were there for drinks and they did not even communicate this option to us (I'd imagine Saturday would be busier and given they supposedly do a good job with waitlist and reservations, they should've communicated this as an option for us) - We enjoyed our drinks. 9:35pm comes around, they apparently double booked and prioritized someone that had 9:30pm reservation too, that came after us, and left us still at the standing tables. It made no sense like we would've seated and finished our drinks and have those bar seats free. - Finally, they tell us the bar seats are available at 9:45pm and we were already done with the drinks. We didn't plan to order more so we wanted to speak to the manager who did not want to comp the drinks (I understand the POV but at least be more apologetic and side to the customers. Food and beverage usually side on the customers to appease them, but here the manager 100% sided on the host without wanting to hear our side fully and even if he listened, he still does not change the stance). Instead of comping the tab (which this situation at least warrants a discount), the compromise was to give us enough short stories (small cocktails) that somewhat equal to the cost of the 2 cocktails (which was about 60 CAD). Which is fine, I would've preferred drinking less but given the stubbornness I didn't want to get a worse deal so we sat at the bar and enjoyed the mini cocktails). So the issue is resolved via compromise which could have left a 3 star review but the way the whole situation is handled sadly pushed me to write a 1 star review.

The Forager's Martini was actually super refreshing. It was ice cold in a carafe and I felt that it was more of a 50/50 martini. It was botanical forward and had a lot of complexity. I still prefer other cocktails but it definitely changed my mind on martinis. Another stand out to me was the Gimme S'more. It was a seasonal drink so they might not have it when you go, but it tasted just like a mix of s'mores and champurrado (Mexican hot chocolate). The drink had the pumpernickel toasty flavors of rye, and mixed with the cocoa, amaro, and cayenne gave it complexity and a hint of spice at the back of the palate. The graham cracker foam on top added the s'mores vibe since it tasted exactly like a graham cracker. Another non-seasonal drink I really liked was the Fantasy Island. As I gathered my belongings to move, members of the larger party avoided making eye contact as they some thanked me for moving . Obvious that they were feeling guilt and yet it didn't stop them from claiming the booth I was using as a disabled person . Quite an unpleasant experience . To be fair I get the need to accommodate a larger party but honestly they could've literally just pushed three tables together and arranged the chairs to be three on each side. It would've been a little bit more work, but I think it would have been the fairest solution ..and would have been my solution as the employee working there or if I was a member of the party . The Uncrustables is pretty interesting - could have had a bit more peanut butter flavor but still good with the fruity undertones that resemble the jam. It is pretty much the liquid version of Uncrustables peanut butter and jelly sandwich. On the Ritz is pretty good too - a bit creamy and easy to drink. I recommend eating the crackers asap unless you want to try it soggy dipped with the cocktail (either way is good). Gin & Juicemaxxing is wonderful with the fruity and faintly herbal notes. It is also interesting as it is a cocktail on tap since it is highly popular and fairly complex to make, so this drink came out very fast.
