I called and spoke with Chef Cowdrey and he explained that each one is custom made to order. So I placed my order on a Friday and he had it ready for me as requested by 8am on Saturday morning. This was very important because I was leaving New Orleans upon picking up my order. I shared some of the galette with family members who live on the West Bank.
