It was too cold that day to be outside, but there was also an outdoor patio area. Our first server was pretty friendly. He told us which beers were part of the day's Happy Hour deal ($5 for a pint!) I ordered a cider because I'm not a beer person, and it was quite good! My friend and I shared a poutine, which was delicious! The gravy wasn't too heavy and the cheese curds tasted great. At that point we were given another server. (Shift change maybe?) The new server wasn't as friendly and came infrequently and in the other room majority of the time, so we had to flag them down for things like water refill and the bill the times they did come back to sunny room. Overall a quaint modern brewery spot. It was a chill day and not too busy, but I enjoyed how we didn't feel rushed and we were able to stay for a good amount of time.

With each sip I said to myself this is weird. This is strange. Then this is good. Now I kinda like it. I really like that the fish and chips can include three different kinds of fish. Cod, haddock and salmon. Even more impressive was the bun on my fish sandwich. The outside was crispy and the inside soft and colored red! Amazing bun. It looks really stunning - everything looks new and clean with plenty of seating in the large dining room. When we arrived it wasn't too crowded and were seated towards the side of the dining room close to the windows. At its heart, this is a brewery and they have a good selection of craft beer. We were given the option of beer if we wanted to pay on our own, but we were really there for poutine which was included in the tour. I'm not much of a beer person so I passed, but did partake in the poutine. It was pretty good, though I wouldn't say it was too noteworthy. I have now had poutine from several places in the city, and this would be middle of the road for me. It was tasty and quality, but nothing too exciting. I don't really fault them though, as poutine is not the star of the show here. Service as good - overall I had a fine experience at Siboire. I need to return to explore more of their menu - and possibly a beer.

Multiple pizzas like the Roma and Caprini which were thin crust. Was surprised to find out that the regular "authentic" poutine was vegetarian which made me question the kind of gravy that was used. My cousin had the fish and chips which looked to be mostly batter. Even the fries were battered which was a surprise given the ones in the poutine were not. My aunt had the poke which had a good portion. Our waitress was nice. The service staff wore short shorts on a cold fall day which seemed unnecessary. There was a good crowd of families for a Sunday afternoon. They showed a Toronto-Philly NHL game but no NFL which was surprising even though we were in French Canada.
