La bière est excellente, j'ai dégusté le plateau de dégustation ou vous avez l'occasion de choisir 4 biéres afin de voir leurs variété de bières. J'ai bien aimé toutes les bières, les IPas sont de très bonnes bières et la dry stout était exquise. We snacked on some poutine with beef on top and we thought it was very delicious but just didn't have room to try anymore of the entrees. The restaurant was quite busy when we arrived and we were tucked away in a little corner, but that was okay because there were large groups of people there for various celebrations and it was quite loud. So we were kind of happy that we had our own little nook.

With each sip I said to myself this is weird. This is strange. Then this is good. Now I kinda like it. I really like that the fish and chips can include three different kinds of fish. Cod, haddock and salmon. Even more impressive was the bun on my fish sandwich. The outside was crispy and the inside soft and colored red! Amazing bun. It looks really stunning - everything looks new and clean with plenty of seating in the large dining room. When we arrived it wasn't too crowded and were seated towards the side of the dining room close to the windows. At its heart, this is a brewery and they have a good selection of craft beer. We were given the option of beer if we wanted to pay on our own, but we were really there for poutine which was included in the tour. I'm not much of a beer person so I passed, but did partake in the poutine. It was pretty good, though I wouldn't say it was too noteworthy. I have now had poutine from several places in the city, and this would be middle of the road for me. It was tasty and quality, but nothing too exciting. I don't really fault them though, as poutine is not the star of the show here. Service as good - overall I had a fine experience at Siboire. I need to return to explore more of their menu - and possibly a beer.

I wasn't there to do a long session, so I got a couple tasters, one including Peche Mortal and the other a NEIPA. Two very different styles and both extremely well done. Beyond that, the space had a very old-fashioned look. Really nice wooden fixtures and a very warm, welcoming vibe. The server was also attentive and friendly, but also knew when to let people sit back and enjoy their drinks. You probably don't need me to tell you, but yes, you should go.

The space is pretty large - kinda separated into semi- compartmentalized spaces with tables throughout. There's not much decor, but medium-toned woods throughout which gave it a sort of upscale feel. They offer a food menu, but we were just here for drinks. They have a really wide selection of beer - again, I'm no connoisseur, but I could tell that the selection was way more than other breweries I've been to. I ended up getting a cider for the first round and a stout for my second round - both very good. Service was great, and overall we enjoyed our time at Dieu du Ciel. Their selection and comfortable setting made it a standout brewery for me out of the ones I've visited in Montreal - I wouldn't hesitate to return.
