Making chocolate truffles by rolling them in toppings in our chocolate class
    Ashley W.

I took a chocolate-making class here at Bibamba (which is inside Edgewater Public Market) and I absolutely loved it. For context, they expanded from one unit of space within the market to two, and the expansion seems very cool because one side is like a behind-the-scenes kitchen and the other is the staging area of amazing chocolate goodies. Anyway, the class begins by them walking you through a short presentation about where their cacao is sourced and how they approach ethical production, which was nice because you got to learn some chocolate facts while snacking on some chocolate and learning what raw chocolate tastes like. After that, we started the hands-on portion, where we scooped freshly-made ganache using small scoops, and hand-rolled our own truffles while wearing gloves. There was a whole spread of different coatings and toppings, probably around a dozen options, so you could experiment with flavor combinations instead of just making one standard version. And there was definitely extra ganache, and snacking on the extra chocolate was encouraged! :) At the end you package your truffles in a branded box that made your creations look very professional. It was a great class, and then we walked over to the staging side and I bought a 12-pack of their bonbons that my D&D friends LOVED the next day, which was a complement because we bring lots of candy and it's hard to rise to the tip of what we've tried over time. I would highly suggest coming here for one of their classes or to get lovely gifts for loved ones.

    Orange Spark dark chocolate

Bibamba just recently opened up their shop at Edgewater Public Market, and huzzah, I've now found my go-to chocolate provider! Not all chocolate labeled as "fair-trade" is actually fair-trade. Sometimes it's impossible to really know if the chocolate you're eating is ethically sourced, but you don't have to worry about that with Bibamba. The founders source their cacao beans directly from their farm in Cameroon, and one of the founders is a Cameroon native. Their workers are paid and treated fairly, and they never use child labor. Both founders were at the shop when I stopped by, and they were both friendly and provided exceptional service. Aside from the fact that this is ethical chocolate though, it's just delicious artisan chocolate. I don't normally love dark chocolate, but I just want to keep nibbling on their Orange Spark dark chocolate. It's nutty, rich, sweet but not too sweet, with just the perfect amount of citrus flavor and a very subtle kick of peppercorn. The flavors meld together beautifully. They were offering samples of their various assortments when I was recently inside. They also were selling the best hot chocolate I've had in ages, made with real chocolate and none of that powder sh$t! The peppermint marshmallow absolutely slayed. I also love that they make the chocolate in-house - you can see vats from the counter in the back. Cozy shop, delicious chocolate, and warm cocoa. Stopping by here was perfect for a winter day.

I had very brief encounters with him but his demeanor towards me seemed very rude. Asked him very simple questions but made me seem like I was asking him dumb questions. Second, the menu was not good. As someone who has been to a lot of Thai restaurants, this might have been for people who are not very familiar with authentic Thai food. I knew the class was over when the instructor told us to soak the rice paper into water for 30-45 seconds (I understand it was not warm water and we used tap water) Still, anyone who has actually has made spring rolls before knows that is way too long. Pad see ew was atrocious. Only used oyster sauce and tamari as sauces... don't really see the point of coming to a cooking class when your cabinet has better selection of spices/sauces. Chicken Khao Soi was decent. Paying 120 dollars for this class was a big mistake. I don't quite understand how they could charge this much knowing that the ingredients they used were fairly affordable. Honestly wouldn't recommend this to anyone. Allison was very sweet. The place was very cute. Only 2 positives.

The experience from start to finish was excellent, and I cannot recommend them enough. Our group was a bit complicated with dietary restrictions, including shellfish allergy, gluten-free, vegan, no red meat, and no pork. Chef Rich worked with my husband and me on the menu over a few phone calls to make sure we could accommodate all our guests. He went above and beyond to ensure everyone felt included in the experience with thoughtful substitutions based on each person's dietary need! At his creative suggestion, Chef Rich brought an additional assistant/bartender to create a "cocktail hour" for us. The bartender crafted a signature drink that all could enjoy and made a selection of cocktails based on our group's preference. The team was friendly, professional, and clearly cared about providing an outstanding experience. We are so thankful for them and we were all so impressed. Hire them, you will not regret it. So imagine the pleasant surprise when the same friend had the same 4th of July party exactly one year later, only this time to discover that the person responsible for the most amazing food was her! There was so much thought that went into the food.. what I mean is, not only was it delicious, but there was something for everyone (vegans, paleos, veggies, people that just want to pig out and eat deep fried pickles with the best sweet and sour sauce... I didn't even know that was an option in life until that day). I digress. Ok.. so here you have all these different types of food, all delicious AND all following one unified theme.. 4th of July. In other words, even though there was something for everyone it didn't look like a pot luck dinner where everyone brings something different. My mind is being blow b/c I didn't appreciate this awareness until right now, as I am typing. I think this is one of the things that separates people that like to cook and make contrasts for the sake of just being different (nothing wrong with that for sure!), and a true chef. I would highly recommend her and my girlfriend and I are looking forward to having her do a private cooking class/meal with our friends! Dave ps: here site and facebook page rocks too!
