Pork belly and rice. Pickle was pretty good.

Since this is a newer business I'm not going to completely shoot them down but it's not my type of bbq. I've had so much bbq and have made so much bbq that friends and family consider me a guru. Having had all regions of bbq including while living in Hawaii and Hawaiian bbq. Positives: Friendly when ordering and getting the order. Fast service Meat was smoked excellently Packaging was superb Negatives: Need some type of sauce. None was included and didn't see any available. Rice was plain Coleslaw needs sugar or some other sweetener. I expected there to be options like pulled pork or brisket. They did have ribs but didn't get any. Meat was great, I had the pork belly and it was great. Tender and very flavorful. Still need to have some type of sauce though. Glad I didn't get chicken since I'd would definitely need sauce for that. Rice is odd and boring for bbq. I'd rather not have rice at all but it came with the combo. Give me an option for something else like fries, tots or beans. Coleslaw needs sweetness to bring out the flavor. Tasted like mayo covered cabbage. The food truck looks newer and I completely appreciate they smoke all their meats. I also appreciate they had tables and seating right next to the truck. Overall, I would get more meat if there was an option for that, I wouldn't get the combo because I don't think white rice goes well with bbq unless it's Hawaiian or Korean bbq.

We frequent the car wash and have seen the big red bbq truck parked in front of the liquor store for some time. We finally saw that they were open and decided to give them a try today. We called in for the specials and offerings and decided to get two of each. The man who put in the order was very nice. The spicy chicken sandwich on homemade sourdough bread was delish! The chicken was moist and full of flavor. Sausage was great too. The coconut rice was good, love the subtle coconut flavor. Coleslaw was crunchy and full of flavor as well. I'm glad we live close because Big Red BBQ will definitely be in our rotation.

Great location and got bought a bottle of wine at the liquor store in the same parking lot. Please support local businesses.

I could tell this place was going to be good because it was packed out at 11:30 AM on a Saturday. We decided to stop by and most people were ordering very large orders for takeout, but they have a good number of tables both inside and outside. The food takes a while to come, but that just means that it is all freshly prepared, and the staff are so nice and even give free samples. I went with the Kids meal brisket with the Potato salad and added a Sweet potato with the candied pecan butter. I seriously have no words -- all of these things were so delicious, and the amount of meat that you get even with the kids meal is more than enough to fill me up, especially with the rich sweet potato and potato salad on the side. I will be back as soon as I can, their hours are limited, and the drive is a little out of the central Denver area, but it is so worth it

That was missing here, the first indication that all would not go well. I soldiered on anyway, and ordered the 2 meat plate, pulled pork and brisket, with an extra rib bone and collard greens and beans for sides. The brisket and pork were both dry and had no smoke flavor. The rib was so small (an end piece) that they gave me 2; they were both overcooked and had very little meat on them. The sides were the only good part of this meal, but sides do not great barbecue make, hence the 2 stars. The staff was very friendly and accommodating. The pitmaster visited our table and took our criticism with good grace, even offering to replace our food to see if they could do better, but I was done. I won't be returning.

I've had it before and enjoyed it, but the last couple times the food has been cold despite being ready within 7 minutes. Today, I was at Chop Shop the minute my order was ready, as I got a notification on my phone. I got the chicken with polenta and my husband had the chicken tenders. We got freezer burnt chicken that was wet and soggy, breading falling off, and impossible to chew like cardboard. Not to mention the polenta and Mac and cheese were cold. I understand not every experience can be perfect, however to pay a tip, restaurant service fee (that apparently doesn't go to staff because it's a separate charge), and have to pay for utensils at a quick serve restaurant just to receive small portions, cold food, and past quality ingredients is not acceptable.
