Great local business. Stopped in the tasting room and tried out a handful of their oils and vinegars. They were all very good. Ended up purchasing a couple of bottles for gifts for the holidays. After driving a couple hours home one of the bottles had a defect in the cork and it started leaking. I emailed them about the issue that I am sure is quite rare, I imagine it is similar to a cork going bad in a bottle of wine. They were very responsive, and they had overnighted a new bottle that was at my house the next morning. What absolutely amazing customer service. Not only do they make a great product, they stand behind it. I will definitely be ordering more oil from them in the future. read more

The two ladies working when I came in were uber-hospitable and lovely. They directed my friend and I immediately to the supply of bread and told us to sample away and amazingly, they did not hover! Unlimited ability to roam and taste free samples are my dream come true. Really well organized shop with very well informed shopkeepers (possibly owners?). The oils and balsamic vinegars are freakin outstanding. I am a big lover of all things spicy and the citrus-habanero olive oil did not disappoint! I ended up purchasing a bottle of their jalapeno oil because, even for me, the habanero oil was a bit too intense and will linger on your tongue for quite some time. I definitely would have purchased additional bottles in various flavors had it not been for the $16 per bottle price tag. Don't get me wrong, they use high quality ingredients and the taste shows...I just wish they carried smaller sized and smaller priced bottles to allow for more variety of take-home goodness. They do have gift boxes with mini bottles of their top 4 sellers but the flavors included in the box were not necessarily my favorite. They are located in another supposedly haunted building in Bisbee, so I asked one of the ladies how haunted it was. She skeptically brushed it off but I couldn't help but notice a locked basement door. She said that one reason it was locked was due to a lot of crazy psychedelic 60s-era graffiti. So, I interpret that excuse as, "this building is totally haunted and I lock the basement to keep the spirits detained." read more

The olive oil and balsamic vinegars are very yummy! The only reason I didn't give them 5 stars is because I never heard back from them on a problem with my order. I ordered 2 bottle of strawberry-peach balsamic vinegars and 1 raspberry and the amount I received was reversed. I used the contact form on the website and still have not heard anything from the company. That was almost a month ago. Great product just don't buy more than one of an item and you should be fine. read more

By far the best balsamic vinegar and olive oil my husband and I have ever had! So many variations of balsamic and olive oils to choose from. Very convenient that the owner has bread to sample each and every flavor. Definitely a must to go visit and stock up for the home. It is as good as it gets. Stopped in while passing through Old Bisbee and the tasting room was a smart idea. Great for them, bad for me because I almost broke the bank! Seriously, probably one of the best oils and vinegars I've ever tasted. Bought the White Jalapeño oil and several small vinegars as gifts but the Meyer Lemon Oil and the Habanero Vinegar - really incredible flavors. Great job Bisbee Olive Oil - keep it up! read more

Holy crap this place was good. In visiting Bisbee on a whim, which was weird and "quirky" in itself, we were just wandering around the town casually exploring. Walked into this shop and the super energized owner was the sole employee that day. He was a wild haired blonde biker covered with weird tats. (You def gotta ask to see the person crawling out of the eyeball tat on the underside of his bicep). He was totally sharing of the shop's and the building's history. Showed us pictures of the building when it was pretty much an abandoned crash pad for hippies in the early 70's. Showed us into his back room and his back, back room which was totally authentic adobe from a century ago. Huge rough hewn timbers and authentic brick walls have to date to about the 40's. The walls are lined with prolly about 50 different types of infused olive oils and balsamics and the owner raved for us to try each one. He kept blowing our minds with suggesting pairings with this food or that food and suggesting unusual mixes and blends. Clearly this man has a passion for food and is singlehandedly able to drain the "froo froo" out of the usually snooty, balsamic and first pressed extra virgin "panties in a bunch" crowd. A wild eyed tatted up biker turned family man/high end merchant with a deep passion for balsamic. Speaking of balsamic, and aged balsamic, he has a balsamic that is aged 18 years. It is deep and oak-y with a little pepper on the long finish. It is like a long Harley ride that you can feel hours after the bikes are put away. His final zenith was to respond to our request for a local place to eat. He suggested, "The Table". We were headed to Sully's for the empanada style deep fried burgers, but Sully's was closed for remodel. It turned out to be a very sweet alternative because the food is served with the 18 year old balsamic and the virgin olive oil. I put that shit on everything. Crunchy spiced fries hand cut fresh, dipped in 18 year old balsamic spiked ketchup. How heady!! See my review of "The Table" in yelp. I highly suggest Bisbee Olive Oil. I bought six bottles total and got a discount. BTW prices here are the same $14-$18 range you would pay in any grocery store for middle of the road olive oil but taste profile is more like the $30 a bottle Williams-Sonoma stuff. I got a discount for buying more than four bottles, like I was a biker family member. When I got home with it I compared his 18 year old balsamic to the aged balsamic from Queen Creek and this crazy wild biker has created the best I have ever had. The Parmesan and Sun Dried Tomato olive oil infusion was heady and filled with flavor. I tried it over the top of some penne all by its lonesome and it rocked my world. This place embodies Bisbee: the soulful impromptu art, the unusual eclectic characters, the passion for all things good...all the way out here in the desert a few miles from Mexico. I wish I could stay forever. read more
