They also have really nice A/C!! :) Small shop, but with an amazing selection of steaks, sausages, cheeses, pork and etc. They also had some fresh vegetables, dry goods such as ketchup, beer, spices and breads. Service at the butcher shop was awesome, I was looking for a few large fillets, the gentlemen chopped them up and air sealed them for the ride home. They tasted amazing! So, when visiting the West Side market, you might want to start here first or at least pass thru on the way out. I think you will be impressed by what they have!!

The gentleman helping me slid me a piece of the sweet and spicy bacon jerky (aka bacon candy) and I was hooked instantly. The next day I returned and bought a whole pound. I'm hoping it lasts more than a few days...it is truly a must try. Tender but chewy, Sweet but peppery. Not spicy at all so don't let the name fool you.

But in a lucky twist of fate, Fosters Meats came through with the perfect amount of helpfulness, knowledge and patience. Hallelujah! Jason, Kelton and I stopped by the WSM for a roast and some fresh bread. We didn't think it would take long so we scooped up the first 15 minute parking spot we could find. The first steps we took inside I was thinking we might want to move the car--with this crowd we were going no where fast! We didn't move the car, but we did start to make our way through the crowd until we spotted the first meat counter, Fosters. We were immediately noticed and asked if we needed help! Wow. So, Jason quickly explained what we were looking to cook and how many we were serving hoping to get some guidance on what to purchase. The Foster's employee cut us the perfect portion of beef at the right price and it turned out delicious! He even worked with the credit card minimum to make sure we were happy campers and got us out in time to move our car! Polite, quick, efficient, helpful and actually smiling! Yes, I as surprised too! I mean, if I were working on a busy Saturday at the West Side Market, I'd be one crabby broad. I could learn a lesson or two from the Fosters folks, that's for sure.

They also tied it very nicely, and the vacuum pack is clutch. The big order was a bone-in rib roast (six pounds), which will be our Christmas dinner. It's a beautiful roast ... probably Select Grade, since it was about $120. But there is plenty of fat in the cap. If this beauty doesn't taste worth a damn, it's on me. Notice that I rubbed it with dry rosemary, course black pepper, Kosher salt and lemon zest. It will sit in the fridge overnight and roast low and slow on Christmas Day. We also picked up bacon, breakfast sausage and Dearborn hot dogs (I'm a hot dog junkie). All of it was fresh and tasty, The service here is spot-on. Not only do they answer questions, but they also give you exactly what you order ... along with some advice. That's old-school, and it's too bad that there aren't more places like this anymore.
