We were customers of Katana ( sister restaurant) for quite a while but the wait times were not pretty. We decided to drive an extra 30 mins to try out Shima and we've never turned back. So it's the same wait list style as Katana but the line moves faster and there's more tables. What I absolutely love is the staff and servers. They truly make us feel right at home from the moment we walk in. We wait our turn like everyone else but the minute we sit down the servers are super attentive. Darling and the team are just the best! The seared spice salmon is to die for!! 7 orders are placed within 30 seconds of being seated. I've tried almost everything on the menu and so far nothing I didn't like. The fish is super fresh and boats have a nice variety. They are super accommodating as we always go with our 3.5 year old. We've taken a lot of friends here with us and to drive 30 mins out of way when Katana is only 10 mins away speaks for itself.

We liked the Osaka roll; the mango gives it a nice touch. The nigiri is good too. Nothing was fishy or chewy in a bad way. Gyoza were tasty. The curry katsu udon bowl was bland. We would not order it again. The egg sandwich was bland and we would not order it again. I wish they had funaguchi sake here. Cute ambience inside. More often than not, one side dominates, the other disappears, and everybody loses. At Amazonia, a Japanese-Peruvian restaurant in Miami, that fear evaporates somewhere around the first bite. The opening argument came in the form of Gyoza Huancaína, pan-fried dumplings stuffed with lomo saltado and served with a vivid yellow huancaína sauce. It is the kind of dish that sounds gimmicky when described aloud. Then you eat it. The dumplings delivered deep savory notes from the beef, while the creamy sauce added brightness, spice, and richness. It felt less like a fusion experiment and more like a dish that had always existed. Four dumplings arrived on the plate. Four was not enough. My entrée, the Midori Risotto, continued the conversation between Japan and Peru. A strikingly green risotto made with kale and edamame arrived topped with grilled shrimp, microgreens, and dots of black garlic aioli. The rice was cooked properly, retaining a slight bite, while the edamame added texture and sweetness. The shrimp brought balance to the richness, and the black garlic aioli quietly tied everything together. It was a dish that managed to be both comforting and elegant. To drink, I ordered the Nikkei Lemonade, a blend of yuzu, Peruvian ginger, and huacatay. Bright, citrusy, and refreshing, it reset the palate after each bite and served as a reminder that the fusion extends beyond the food. My wife chose the braised short rib, a dish for diners who may not be ready to take the full leap into the restaurant's more adventurous offerings. Braised for 72 hours and served over mashed potatoes, it collapsed under the gentlest pressure from a fork. The beef was intensely flavorful, and the braising liquid was rich enough to make you consider asking for a spoon. Dessert brought one final East-meets-West moment. The Flan Nikkei paired a silky custard with miso caramel, whipped cream, and fresh strawberry. The miso added just enough savory depth to keep the sweetness from becoming predictable. It was a thoughtful ending to a meal built on thoughtful combinations. Amazonia succeeds because it understands something many fusion restaurants do not. Combining cuisines is not about piling flavors on top of one another. It is about finding where they naturally intersect. Here, Japanese precision and Peruvian boldness meet in the middle, and both emerge better for it. Fusion rarely wins me over, but Amazonia makes a compelling case for keeping an open mind.

We ordered a variety of appetizers including the chicken skewers, spring rolls, sushi rolls and tuna Cerviche. Presentation was lovely. Grace was our wonderful waitress - so sweet and accommodating. Red Ginger is a speciality restaurant on most if not all Oceania ships specializing in Asian cuisine. Generally you get at least one reservation at Red Ginger per cruise. Depending on load factors, length of cruise and your status and/or cabin type, you can often dine here more than once. I like to use the phrase, "the worse Red Ginger has ever been is excellent". This definitely applies to Red Ginger in my opinion. Upon arrival, you order your drinks and the type of chopsticks you want to use from several varieties. Edamame is also served to the table. Appetizers are a feast. I often say I could just order appetizers and be happy. We often order the sushi chef's selection along with calamari served with a sweet chili sauce. Other excellent appetizers include caramelized prawns, tuna tatami, Vietnamese pork spring roll and seared salmon with scallop ceviche. On our most recent Oceania cruise, we enjoyed the calamari and sushi. Salad offerings are many with our favorite the spicy duck and watermelon salad. This salad has crispy duck, watermelon, cashews with a tasty sweet fish sauce. You can also order a Vietnamese chicken salad or avocado lobster salad. The reason we've never just ordered all appetizers and salad is there is one entree that shines above all-miso glazed sea bass. I cannot get enough of this. Always perfectly prepared. I also love soft shell crab. This is also an entree offering. I have them bring me an appetizer portion. Can't over eat!
