I would say you are a mid-size town café. I come to this conclusion because you don't get some very basic culinary fundamentals to call it an Italian Restaurant. Pre-cooking pasta is okay if you do it properly. Biggest point: there was no salt in the water while cooking the pasta. This is a must to add flavor; otherwise, it is very bland and tastes overcooked. Batch cooking pasta is done at 65% cooked, proportioned, and refrigerated. Then, when a customer orders it, you drop it into "Salted Boiling Water" to finish cooking it. Next, you can use frozen meatballs as long as you put them in spaghetti sauce at least 12 hours beforehand, so they don't have a frozen meat taste. Follow these suggestions, and it will quickly become a number-one seller as long as it stays reasonably priced. Last point: clean up the flea-market look in your dining room.
