Last night, 11-13-19, I went there with 2 friends. Two of us ordered a mushroom and Swiss burger. 20-30 minutes after we had ordered, the waitress was sent to our table to tell us they had run out of burger and only one of us could get the burger we had ordered. Another table that had come in after us and ordered after us, had their food which included burger items, served to them. Since I couldn't get a burger patty I asked for a chicken breast replacement. I also asked if I could have greens instead of a bun. The other table that had come in after us had gotten their food and check had left by this time. After more than an hour since we had sat down, our food came. When my revised meal came, it was a 1/4" thick piece of chicken sitting on blank lettuce, no mushrooms, no Swiss, just a dry slice of chicken breast on plain lettuce. To top it off, they charged me for the mushroom and Swiss of which I received neither, and up charged me for adding lettuce. We were in town for the Hard Times Bluegrass Festival and happened onto this great downtown restaurant. Attentive, knowledgeable server who recommended the Farmers Market the following morning, also a great find! At Bouilla we had chicken Parm with homemade pasta and calamari piccata also with homemade pasta, both with Caesar salads. A nice bread basket including whole grain, Artisan bread and flatbread, all made by the local Red Rooster Bakery, yet another recommended business. We would definitely return to Bouilla again if we were in town. read more

Have eaten here several times for lunch. Always delicious! This morning came for brunch with family and friends.... Outstanding! You can build your own Eggs Benedict- we had smoked salmon, pickled onions, avocado with Hollandaise on side. Family members had cheesesteak burrito and huevos rancheros - all excellent! The parmesan home fries were so good - small pillows of crispiness ( no grease here) on the outside and light fluffiness on the inside. Excellent service, amazing food and desserts. This was our first time visiting Bouilla. I tried the Bouilla burger which had a very unique combination of toppings which was excellent. I was also very impressed with the sweet potato fries and the Alaska desert was delicious. read more

This was our first time and we ordered the chicken avocado sandwich and the ahi tuna bowl. AMAZING!! Everything tasted fresh and the flavors were complex and balanced. Would totally come back here tomorrow. Also, the caramel creme brulee was delicious. read more

This place is fantastic, I live in Missoula but have clients in Hamilton so I went there for lunch today. It has a cozy bistro feel but it's still light and bright and airy. We were greeted and sat promptly. With a menu of sandwiches, burgers and salads its surprising how much variety they have. They really have something for everyone and although the items are traditional they have a twist with lots of flavored aioli's and sauces and spreads and pickled and caramelized veggies and fresh herbs and seeds that add a ton of flavor and texture. I had the veggie sandwich which was packed with fresh veggies and avocado and smoked cheddar and sunflower seeds YUM! And the best part is their sandwiches come on this AMAZING bread that they bake every day IN HOUSE. Whoever owns this place should open a bakery. The bread is some of the best I've had in Montana. My boss had the Thai Veggie Wrap which she loved and you can also add chicken. We shared sweet potato fries which came with a sweet and savory BBQ sauce. The food is fresh and creative and flavorful and I can't wait to go back. My only complaints were that the service was a little overbearing and I wish the sandwiches came with a side. I would be willing to pay a couple more dollars for a handful of fries on the side. You can buy a side for 4 or 5 bucks but it's pretty big. read more

Came in for dinner looking specifically for their signature dish, Lemon-curry Tempeh. They were out of that. So, I decided to try the Mojo Tempeh. They were out of that, too. Should have left right then. Instead, I pointed to the Smoked Salmon Whole Grain Bowl on the menu and ordered that. The waitress brought me the more expensive Smoked Salmon salad, a plate heaped unappetizingly with dry salad greens that looked like they were just dumped out of a bag with chunks of salmon here and there and some nondescript yellow sauce on the side. I said I didn't order that. I had not looked at the salads and certainly didn't order a salad since they are not high on my radar for dinner. The waitress insisted, saying she had confirmed it. I don't know what she said, but it's what I said that matters and I didn't order any salad. Not to cause a ruckus, I ate the salad, reluctantly. The ginger soda was tasty. A noisy group of mostly restaurant workers at the bar added to my overall dissatisfaction with the place. This is a restaurant looking for a niche. They have simplified their menu to just burgers, complex sandwiches and a few sides. They also have soup and salads. The food is slow to come out and very modest in portion size. It is well prepared and a good mix of flavors. Prices are a bit high for what you get. I ordered a Cobb salad and got a delicious salad about right as a side but woefully small for a meal. My friend ordered a roast beef sandwich and again he went home a bit hungry. I made a cheeseburger when I got home to finish my dinner. I will not be returning, as there are plenty of other places in town with broader variety, similar pricing and better quantity. In addition service is quicker elsewhere. read more

Newest place in town and it is really excellent! Owners were cooking in the kitchen and our friend James was running the front. Not busy due to lack of a beer/wine license, but they're working on that. Also open for lunch and it's quite busy! Atmosphere is great also! Try the chicken pot pie- delicious! read more

First time, and many more in future. Lisa is probably top 5 server I've ever had, kept an eye on drinks, food came out fresh and piping hot. The sandwiches are amazing and they have several gluten free options, today's special dessert was Huckleberry creme brulee and I wanted it so bad. But didn't. I will definitely eat lunch here again. It is fast, friendly and has exceptional food. I had the meatloaf, it was delicious. My mom got the Gyro and it looked amazing, it was cooked with lamb so very authentic and delicious!!!! Very creative cheese plate options with lots of amazing flavors. We had a fantastic burger and the reuben was outstanding as well. This review is specifically for the hamburger: Was very surprised to have one of the top two hamburgers I have ever had in my 40+ years of eating hamburgers from coast to coast. It was perfectly constructed and exquisitely prepared. I was in town for just a few days and went back twice just for the hamburger. Reasonable selection of local beers to go with the burger. We went there today for lunch. They appeared busy so I asked how long it would be to get food. I was told about 25 minutes and if we knew what we wanted, they would get our order in in front of a large group who had just seated. We didn't even look at the menu and ordered two salads. 50 MINUTES later we got our food at which time I was supposed to be back at work. We grabbed to go boxes and left with no time to eat. Bouilla had just opened, and still waiting for their liquor license which will get it another star! So far, we've just had lunch there, and can't wait to go back for dinner. The menu choices are selected to give a range of choices without trying to do everything (no one can do everything!!) The care in the preparation of the food is evident. The fresh baked Ciabatta is bread is a perfect surround the the lovely sandwich fillings. We enjoyed a pork steak, and mushroom Swiss chicken breast sandwich. A wonderful place in a hard knocks kinda town. The small plates are each on par with tapas anywhere. It is rather Americanized, with no traditional tapas like Tortilla Espana, roasted octopus, Jamon, etc.. all the same, delicious food, great beer tap list and wines. warm, bright, nicely decorated space. read more

Last week we made our first adventure to Bouilla because we had a coupon and it was AWESOME!!!! The sandwich offerings are fantastic. With the stand outs being the Falafel (AMAZING!!) and the Mushroom, Swiss Chicken (FANTASTIC). The Caesar salad is to die for and rivals salads I have had in San Francisco and Los Angeles. The atmosphere is a pleasant change from the normal Bitterroot Valley offerings. The wait staff were very friendly and there service was excellent!! In one short week we have eaten there three times and have left satisfied and very happy each time!! We had an issue on our second visit that was handled with the utmost professionalism and focus on customer service. They now serve the same menu all day. Give it a try!!! I am thrilled that this restaurant is now open for dinner as well as lunch. I dined there last night for dinner for the first time and it was amazing. They are serving tapa style and we were told the menu will be changing periodically, which I think is wonderful. Every dish we had was absolutely perfect. I have experienced Bouilla numerous times for both lunch and dinner all with positive outcomes! The only negative to Bouilla is a lack of beer or wine but in talking to the owners they are actively seeking a license. Lack of wine aside, my dinners have been exquisite! Generous portions and flavor combinations that will blow your mind all from a menu that is simple yet full of creative options and appealing to all eating habits (vegetarian and vegan options available). The Rainbow Trout on Quinoa is by far my favorite but it's fun to go in because they are regularly changing their menu to fit the season and fit people's different price points. Many times my friends and I have ordered different things and just tried each others'. Lunch is just as tasty with alacarte options. Again, portions are generous so share the fries. You will want to definitely try the sweet potato fries with curry BBQ sauce. My favorite sandwich is the BLT. Not your normal BLT but the arugula and aioli just makes this sandwich special! Bouilla is fresh, clean, and has great service! You won't want to miss this experience when you are in Hamilton. If you need wine, stop at The Banque club across the street before hand. Then sit back and be treated like a king or queen and enjoy a beautiful dinner at Bouilla! It's a perfect evening! read more

Went to lunch here with my mother and grandma and absolutely loved it! The atmosphere is so nice when you walk in, both elegant and quaint at the same time. I had the swiss chicken and mushroom sandwhich that was amazing! loved the flavors and even had enough to take half of the sandwhich to go. We all really enjoyed the coffee and chai tea. Hands down the best place to eat here in Hamilton, my first experience was on my birthday a few years back before they changed their menu. Then and especially now the food, atmosphere, staff, and experience is amazing. The servers are all very attentive and knowledgeable about the specials and what is in the food. We were looking forward to taking our out of town guests here based on a reliable recommendation, even though they don't serve wine or beer. It was a slow night - only two other tables occupied in the nicely decorated, stark-modern dining room. Their menu had just been revamped, however the signature pot roast was still available. Pheasant breast had been added, as well as a roasted root vegetable plate. We ordered a French onion soup, which was startlingly, grossly sweet. So much so that we had to send it back. The rejected soup sat on the edge of the table for what seemed like forever before the waitress came to query. She did give us credit at the end of the meal but offered no substitute nor did anyone from the kitchen come to investigate. The caesar salad came with dressing on the side - so, essentially romaine lettuce, pre-shredded Sysco parmesan cheese and lots of tasteless croutons. I've never seen a caesar like it. Especially at that price. Unfortunately, either the chef was not working (hopefully!) because the main courses were all shockingly sweet. Sweet steamed broccoli? Inedible. Cloyingly sweet pheasant breast on a bed of (sweet) parmesan barley? I was looking forward to the pot roast but it has a sweet berry sauce sauce that just wasn't right. We passed plates to confirm our experiences. It all tasted as though someone mistakenly grabbed the sugar tub instead of the salt in the kitchen. Obviously nobody tasted any of the food before it left the line. The roasted root veggies consisted of russet potato, sweet potato and carrot. Not a beet, parsnip or onion on the plate. And they were swimming in what tasted like canned, sweet applesauce. We had to apologize over and over to our guests. We were all hungry but couldn't finish our meals because of the taste. And then the waitress failed to ask if we wanted desert or coffee. Maybe that's why there were only two other tables of diners. read more

Bouilla is a creative upscale addition to the ever-burgeoning/changing Hamilton restaurant "scene." Our dinner there was quite nice (loved the lemongrass-infused carbonara pasta and the pheasant); the ambience is slightly modernist, as is the piped in techno music. While we rather liked that, that may be a detractor to the older set. The biggest gap is the absent beer and wine license, but hopefully that will come. In the meantime, the quality of the food and friendly service offsets that misfortune. Nice effort by the young new owners! read more

Enjoyed a wonderful veggie sandwich. Leave off the cheese for a vegan veggie sandwich. My friend had a great portobello vegan sandwich. In the past I have had the roast beef and meatloaf sandwiches which I would highly recommend. They make their own bread daily. read more
