This heritage turkey had absolutely no flavor of game to convince me it was raised wild. I have prepared and roasted goose, duck, and wild turkey for over 20 years for my family, and this farm is not authentic. We use a local USDA butcher to process all of our meats, and he packages the giblets and neck from each turkey and then adds them back into the cavity. We have never encountered a situation where the neck and giblets are missing, but it is not impossible, as each turkey is handled by a person, not machines.
