Went back a week later placed an order for the same hamburger this older shorter man assisted me he didn't have on any gloves and went to grab my request with no gloves on and weighted I said put some back he put one glove on to put that extra meat back and then he decided he was going to press mine down with his bare hand and wrap with plastic so paid for but I gave used for my dog I know it was raw meat but after seeing this I was done so I decide not to go back because he had enough sense to but the extra back with a glove but mine it was ok to barehand it yeah no.

The Owner, Alex, answered and gave me some great information-- most importantly that he DID have a Brisket and he COULD accommodate our request. Whew!!! When I arrived, Alex showed me the meat and discussed with me the options for trimming off the fat and trimming it down to the size I desired. Alex's staff -- both the store personnel and the actual butchers -- were all friendly and helpful. Alex gave me a tour of the store and I bought a bunch of cheese, dried fruit, etc., while I was waiting for my USDA Prime Brisket to be ready! Such a nice store! Such nice people! Not the least expensive cut of meat I have ever bought ... but WOW!!! The meat cooked perfectly!!! This was literally the single BEST brisket I have ever eaten (and I have eaten a LOT of brisket in my life!)! I have subsequently heard from other people in the area that The Cut is well known for selling top quality meats. I look forward to going back for more soon! A heads-up when ordering: They typically have several sandwiches pre-made and ready to go, but if you want something made fresh to order, you'll need to order by phone or online. At least at the Lyon Village location, you can't order a made-to-order sandwich directly at the counter. So if you have your heart set on a freshly made sub, plan ahead! They carry Route 11, a Virginia-based chip company, and they had several varieties available: lightly salted, dill pickle, Chesapeake Crab, Mama Zuma's Revenge, and salt & pepper. You'll need two slices of seeded or marble rye bread, about six ounces of thinly sliced corned beef or pastrami, two slices of sharp Swiss cheese, roughly a quarter cup of well-drained sauerkraut, and two tablespoons of Russian or Thousand Island dressing. A little butter for toasting the bread and optional spicy brown mustard round it out. That said, what I actually received was the absolute worst Reuben I've ever had in my entire life. They used ham instead of corned beef or pastrami, an insult to the name. The Swiss was bland and low-quality, not sharp at all. There was no mustard, barely any Thousand Island, and I couldn't even detect any sauerkraut. The bread wasn't toasted, and they still charged me $12.50 with tax. If this is what passes for a Reuben at a supposed German delicatessen, save your money and go somewhere that actually knows what they're doing.
