A higher star rating from me is warranted, however one of the challenges tied to any food truck is the availabilty of seating, shade, etc. There is one table with chairs available however and in our case today we were taking out regardless. The truck and work areas are clean and the menu is clear and concise (unlike some of the hastily handwritten ones for many food trucks). Although "tacos" provides the initial draw, the menu for Tacos Colima is varied. Other than tacos one can choose from burritos, super burritos, tortas, flautas, quesadillas, sopes, tostadas, and even a Torta Cubana sandwich. Protein options include pork carnitas, chorizo, chicharron (+$3), lengua (+$3), cabeza, shrimp, chicken, asada, pork adovada. We both went with burritos today - a carnitas Super Burrito - slightly larger and includes sour cream, avocado, and cheese - and a regular chorizo burrito - the regular is a simple beans, rice, and meat version. Being a chorizo "aficionado" I was more than pleased with my "plain" burrito. The soft tort was filled with an equal amount of chorizo, beans and rice. I was very happy with my choice. The portion was great for $7. The carnitas Super Burrito ($11) was also great, and large enough to opt for leftovers. My dining partner has also tried the carnitas tacos here which she stated were great. Nothing flashy, just really great, basic eats. Each of our plates also included shredded lettuce, thin sliced radishes, and a lime wedge. The burritos were also foil wrapped and were still nice and hot when we got them home. Such a great place to have close to us in Star. Very reasonably priced, fresh ingredients, and very friendly service. Highly-recommended.

Their St. Louis Style ribs are succulent, meaty and finger licking good. The ribs are sauced and absolutely delicious. I've tried several sides and the potato salad is one of my favorites. Full confession - I'm normally not a big fan of coleslaw, but Blue Smoke Craft Barbecue adds apple and I've been converted. I highly recommend the Banana Pudding to end your meal or just because!!! These dishes are definitely comfort foods and truly taste homemade, without me having to do any work!!! The breakfast burrito is a sight to behold. I ordered it with brisket and it was full of delicious meat. They offer breakfast sandwiches, rib plates, mac & cheese bowls, sides, tacos and desserts. Note - it is a food truck so the menu can change. The owners, Arica and Andrew are wonderful people and care about the food they provide - this food truck has heart! So of course we made new plans, made sure our schedules are were open so we can snag a meal after a round of coffee. Today was that day! I did check out the menu online the night before. I like to see what they have and what their menu entails. The red curry coconut noodles really caught by eye! Noodles, broth, curry!?! 3 of my favorite things in a bowl! So,I went to the food truck feeling 100% in my food choice. Well, the red curry noodles were not an option so I had to look over the menu again. Total bummer since I had my heart and stomach set on it. After reading the menu board over and over again and it was still early enough that ordering breakfast wasn't weird, I decided on the Croque madame. Grilled ham and cheese with an egg, it sounded good. My sandwich did not look like it came out of a food truck. It also doesn't look like it should be in a to go container. My sandwich was a work of art! The egg was cooked perfectly. The fondue sauce was snow white. The pieces of cilantro added a beautiful color to it and was nicely sprinkled all over. It was just too pretty to eat! This sandwich is messy so the fork and knife that was provided for me was used! The bread was very soft and fresh! It toasted and buttery. There was so much ham! It made the sandwich very hearty. The egg yolk was runny and jammy. The cheese fondue was rich and savory. The heirloom tomatoes added a nice freshness to the sandwich. All together it was a very thick sammy. All the flavors were fantastic but it did get overwhelming to eat after few bites. I enjoyed the fondue but it was a lot for me. The fondue is very rich and you add all the other elements and it gets to be too much. If I order this again, I'll probably order it without the fondue. There's already cheese in the sandwich so it was overwhelming with the cheese sauce added to it. My friend ordered the chipotle breakfast sandwich and it looked amazing. It was simple and it looked like something I would have really enjoyed vs what I had ordered. I did ask the gentleman in the food truck if they will have the curry noodles anytime soon. With the cold weather coming, they are anticipating the noodles too be back. I look forward to that! I haven't frequented many food trucks but this one has really set the bar high! The quality of the ingredients used were fantastic and fresh. The service was great. The food truck itself was pretty neat. The location is fun and chill. I know we will be back and I look forward to having that bowl of noodles. If not noodles then I'm sure I will be able to find something that will be delicious.

I ordered the meat bowl with shredded jerk chicken, beans and rice and like this little salad thing on the side which was quite enjoyable! The BEST part of it though was the double fried plantain! WOW ! Extremely good and I was not expecting that! I usually don't finish all my food when I go out but I ate my whole meat bowl that day! My wife ordered the loaded fry plate thing and it had all sorts of meat on it fry sauce salsa .... OMG .... Salsa FIRE!!! So when my wife didn't eat all of her food I took it upon myself to finish hers when we got back to the house for her! I couldn't let it go to waste! Now don't think I'm just a pig! Some said it was spectacular, however others did warn me to tread lightly, whatever that means. It was Saturday so the line was long. I waited about 10 minutes before I was able to place my order. The next part was ridiculous. I waited more than 20 minutes for my food. I tried to give them the benefit of the doubt, it was a nice August day and there were lots of people. I was content until I noticed others who had placed their orders before mine get their food. I'm talking big orders. All I got was a freaking salad. How hard is that to put together... Anyway, I forgot the name of this dish but I got some kind of plantain salad. I love plantains, but this was disastrous. After waiting 20 minutes for a salad, I was so disappointed to find it was merely a couple over-fried plantains with a handful of lettuce and a few pieces of dried shredded pork, drizzled with sauce and a tiny ass spoonful of salsa. I'm not kidding, look at the picture! There was hardly any flavor. The worst part?! This depressing salad cost me nearly $8.00! Again, $8.00 for a 15 strips of lettuce. What a joke. I was so sad this turned out to be my experience. I was so disappointed I can't convince myself to give them a second chance, and I am a huge believer in second chances when it comes to food establishments. I guess some experiences are so bad, you can't waste time on being disappointed again when you KNOW there are bomb ass food trailers out there.
