We shared the Curried Goat - interesting plate of kale, rice, tostones, and of course the curried goat. Not sure I've had goat before - a little tougher than lamb, but pretty good, I'd say. Most of our dishes missed the mark in some way. At least we had a prime view of the Friday night sunset in Edmonds. Our calamari escovitch app took forever to come out. It looked pretty and had a decent spice profile, but it was tough to eat. Even the tostones were totally dry inside. When it came to our mains: The peppered beef stew, which was the least regional dish we ordered, nevertheless clearly won the night, thanks to the yummy starch finish from the garlic mash. My brother finished it off in no time. In contrast, my chayote citrus salad was just disappointment: its oily dressing was totally lacking in acidity, and it lacked a soft element for texture. I'm not even sure where the chayote was. My mother's seared scallops, at $42, had an exemplary cook - glistening white and tender throughout - but the runny sauce failed to achieve flavor concentration. I also ordered a painkiller, which was drinkable, but obviously used cheaper rum. In the end, I'm not sure I'd recommend Calypso to anyone based on the night we had. Came back for dinner/happy hour. We enjoyed our food. Our server was kind, and very helpful. Started with the calamari on happy hour, which was topped with pickled escovitch. Very good- On the softer side. The jerk chicken was good, but a little dry and not spicy at all. However, I eat a lot of traditional jerk, so I'm used to the normal spice of the dish. The curry goat was fantastic! If you're trying to decide on a dish, I highly recommend going with that. It was tenter and seasoned beautifully. I also got the cornbread again, which was very good. For drink, I got the Mule cocktail which was okay, but didn't have the strong ginger flavor a mule usually has- probably wouldn't get it again. Easily one of my newly found favorite restaurant in Edmonds. Calypso brings the flavors and the hospitality of the Caribbean to the PNW. My first visit to this restaurant left me with a positive impression. The space exudes tropical vibes and relaxed atmosphere. The menu showcases various dishes from the islands including the ubiquitous jerk chicken. This is I had to try. The bone in thighs was tender and had a nice spice. This was served with rice, beans, and vegetable mix. The pineapple scotch bonnet jam add an even greater kick to the chicken. I also ordered a mojito which was served in a hurricane glass with garnish and flexi straw. My second visit was just for drinks and an appetizer. I tried their jerk chicken wings and asked for the sauce on the side. Very flavorful and full of spice. My third visit was for brunch. I ordered their hash bowl which had peppered beef, roasted vegetables, breakfast potatoes, and hollandaise. The beef was tender, vegetables cooked perfectly, and generous amounts of hollandaise sauce. Service was friendly and attentive. Finally tried this place and loved it. Husband is gluten free and there are more gluten free options than not. I had the peppered beef stew and loved it. Friends tried the jerk chicken, beef patty and rice and beans and gave everything a thumbs up. Definitely try the cornbread. The only slight disappointment was the adobo ribs small plate. We went around 11:30 AM thinking we would get a lunch menu, but it happens that it's brunch menu until 2 PM. Still went ahead and ordered the calypso toast, the jerk sandwich and steak and potatoes along with the wings. The jerk sauce which comes with the wings had a different taste and was good. The wings was little bland for our taste. The potatoes which came with steak wasn't liked by my wife but otherwise everything else was good. They also had a pina colada virgin! A sign lured us in as a light rain began to fall - a sign promising drinks in a pineapple. We had already eaten earlier, so we were intent on drinking only. it was fairly quiet when we entered with only a couple tables occupied which isn't uncommon for most restaurants during the time between typical lunch and dinner. Our waitress was very friendly and ensured we had drinks as long as we wanted them. The drinks were very good; most of the one I had were on the sweeter side, but that was to be expected from a restaurant that proclaimed tropical vibes. We ordered the conch fritters and while I didn't care for them my partner loved them. I do not think it was any fault in the preparation, I just don't think I'm a conch fritter fan. My husband and I stopped by Calypso for an impromptu date night and had a great time! Be prepared to wait - we thought we were beating the dinner crowd by coming around 7:30PM, but were told it would take an hour to be seated. I do appreciate that the restaurant calls you when the table is ready though - this allowed us to go grab a drink elsewhere while waiting. We were seated right away once we got back to the restaurant. Props to our server that Saturday night as it seemed like she was the only one on the floor. My husband and I went with the: - Pina Colada & Bahama Breeze - These drinks were bigger than expected! I'm a sucker for Pina Coladas in general, and this one was great. The Bahama Breeze was a pass for me - it was almost TOO much alcohol hahah - Jerk Chicken Wings - Loved the seasoning on these wings! I liked having the sauce on the side - keeps the wings crispy - Rasta Pasta - You can order the dish with a choice of either jerk chicken, shrimp or just veggies. We were in Edmonds and decided to try Calypso for dinner. We got there about an hour before closing and were seated immediately. We got Corn Bread, BBQ pork ribs, Conch fritters, and Jerk Chicken. We live in Edmonds and we've been to Calypso 3 times, and we like them. First of all, their tropical drinks are tasty! They are really tasty!! Good size and we can actually taste the alcohol! We've tried many dishes here and like them. I think our favorites are the beef stew, and the jerk chicken and jerk pasta. The only thing we won't order again is the conch fritters and the rum cake. The fritters are mostly batters and very very little conch. I still don't know what conch really taste like! As for the rum cake, I could not taste the rum and it was pretty dry! The service just blew my mind! We were at a well attended event in Downtown Edmonds and there was rush to the only open karaoke that many could find. We watched at about 30-40 people lined up within 2 minutes and Jen (hostess, manager, front of house?), kept a calm and cool head while she sorted out the space for everyone and kept everyone happy as she moved everyone in and out. I ordered the starter scallops with a curry lentil sauce. The curry lentil sauce threw off my palate. It was giving more of Indian than Caribbean flavors. Then, I ordered the oxtail risotto thinking okay, something outside the box. This dish is a big no for me. The oxtail was not seasoned nor in a gravy, the fried asparagus doesn't go at all.
