This is a great place to eat in Ellis. The price is right and I find it enjoyable to set and eat in the restaurant. I have also grabbed some to go orders. I always suggest eating in a restaurant, but if you have to take the meal elsewhere and can't eat in here, this is a good place to order from. I always get the veggie chimichanga, with no cheese, no sour cream. I have also had the veggie stir-fry with no cheese, no sour cream (which my wife always gets). Both dishes are always good. Once we asked for guacamole, but they cautioned, it had sour cream in it. We are fine without it then. But they then made some specially for us without the sour cream. If you need place to get some vegan dishes, stop in here and they are good to accommodate you. Just tell them what you want/don't want and they will get it done for you. read more

This great restaurant had only been in business 5 weeks, but what a find! Newly remodeled, the interior has a great ambiance with rattan chairs. The booths have been refurbished, also. But the food is fantastic, starting off with warm chips & salsa. We had the $8.99 lunch special of 3 cheese enchiladas smothered in fajita chicken. The huge plate also came with rice, lettuce, sour cream, & freshly made guacamole--not spicy--just the way I like it! Great meal! I shared with my hubby and he was surprised that we both felt full. And no charge for the extra plate like some restaurants! This is a great place to eat lunch or anytime after 11:00 AM when you're in Western KS, w est of Hays, KS, about 16 miles. An added bonus is that it is next door to a Love's gas station that always has excellent gas prices. And you can have dessert also at the Dairy Queen next door. I did fail to mention that the Cancun Mexican Grill also has a cute bar area with lots of margarita choices and other spirits. This food is quite good! I have eaten here several times while in town on business. The staff is friendly and fast and the premises are clean and cozy, although they do have some wobbly tables. The food is fresh and flavorful, it comes out hot and fast. Their chips and salsa are good and come out right away with your drinks, they are very good about refilling chips and sodas. This is right off the highway and totally worth it, don't let the idea of roadside Mexican food throw you, this place is a gem on I-70! read more

We were staying at the Loves and walked over for a bite. Good stuff! I could of sat there all night just eating chips and salsa! Yum. Hubby had the burrito Cancun with steak and I had #1 off the vegetarian menu, one bean burrito and one cheese burrito with rice and beans. It was tasty and we left stuffed! Multiple steller salsas! Excellent choice for take out or a sit down meal in the middle of Kansas. Passing through and chose to stay in Ellis for the night at the close-to-the-highway Days Inn with hot tub and this spot to bring a late nignt dinner back to the room. The food was hot and seasoning on point. Had the tacos and a picky order for my brother they put together quite well. Prepared and waiting at the counter on arrival. Horchata was great too. Should have asked for utensils/napkins. The restaurant was clean and well decorated. Eating in definately would have been nicer if we weren't so tired. Hostess was polite and helpful. Great dinner at Cancun tonight. I had the special Grande Burrito and my wife had the fajitas. Portions are huge. Had enough to take a box home to our puppy pal at the motel across the street. Service was quick and very pleasant. Our waitress Kara was terrific, very patient, and did a nice job checking up on us. The menu in this place is huge. If you cannot find something to meet your fancy then you are not looking hard enough. It is very clean and the Margaritas were huge. I was passing through Kansas, in my car with a broken air conditioner, on a day that was 100 degrees, when we stopped at this oasis for the perfect Mexican dinner. The free chips and salsa are better than most, the chips even coming out still warm, the salsa a little spicy and refreshing. We decided we needed margaritas to forget about our car woes, and they did not disappoint, large, reasonably priced, and a nice balance of lime and tequila. I had one of the vegetarian combos, which came smothered in an amazing cheese sauce, and my dad had an enchilada combo. They cheerfully substituted red sauce for green sauce when asked, and he says it was delicious. The total bill was very reasonable, and the service was prompt and attentive. Very pleased with Cancun Mexican Grill! Hungry in the middle of Kansas so we used Yelp to find a place to eat for dinner. Have not had any luck finding Mexican food that was decent in Kansas City area so was skeptical when we pulled into the gas station in the next lot and saw Cancun. So glad we went in. Great chips and salsa to start. Very extensive menu to choose from. My sweetie had 3 Amigos- enchilada, tamale and chili rellleno smothered in a red sauce. All homemade and excellent! I had Carne Asada street tacos. Huge portions of well seasoned and cooked steak and additional salsas plus beans and rice. Huge meal for $8.95! I am very particular about what I eat- it was a clean plate meal. Look forward to eating here again on trips back to KC. read more

Had a wonderful dinner there on a Tuesday night. Happy hour ends at 5:00 and we arrived after that, but the house margaritas were still very affordable, good, and in a big festive glass. Great chips and salsa, delivered pronto, which was good, as I was starving. My husband ordered the molcajete, which was absolutely delicious. Our young waiter did not know how to pronounce it, which was kind of funny, because I took him for Hispanic! The molcajete was a huge serving, definitely enough for two people with normal appetites. It's one of the most expensive things on their menu. I think it was $14. I had the pollo banderas. I may not have the name exactly right, but it was also a pretty large portion, enough for two light eaters. I ate it all. It was little chicken pieces seasoned griddled, and topped with cheese sauce. Rice and beans on the side. Our tab with both margs, both meals was around $36. Very good value. read more

Heading West on I-70 after a long days drive. Hungry, tired and needing gas we pulled into the Love Truck Stop. Lo and behold there's a clean and friendly Days Inn across the street in one direction. On the other side of the truck stop? A feast for the eyes of two, road weary, Northeastern transplants MEXICAN FOOD... But in Ellis Kansas??? Yes!!! In Ellis, Kansas. Cancun Mexican Grill is really, really good Mexican no matter where it would be located and if you squint your eyes you can almost pretend you're in Cancun once inside the restaurant. Try the combo fajitas for two. Chase it down with a ginormous margarita, (one for you and one for you - no sharing). Then, go ahead and share a flan for dessert - you'll be glad you did. read more

First, the salsa was great, but that was it. I asked for a chicken quesadilla with fajita style chicken and the lady had no idea what I was talking about. When it came out, it was shredded garbage and warmish at best. The queso was not awful, but extremely thin... like the sweet tea, which tasted like it had been cut with water from the toilet... not the tank. The absolute worst part is that my fiancée ordered the nachos, no chicken only beef, and got horrible food poisoning all night. It was horrible. We now have to stay in KC an extra day on our way to Maine from California. She also asked for more hot water for her hot tea and the lady brought her a tall glass of ice water. Just AVOID this place. I have no idea how they are rated so highly. read more

Stopped while traveling through because I saw they had the white queso dip, which is a staple in all Mexican places in the South, but is nowhere out west where we've been traveling for the last two months. If you happen to find yourself hungry and in desperate need of a bathroom on I-70 in the middle of Kansas, you would be lucky. This was my case when coming upon Cancun Mexican grill, a rural treat at a decent price. I'll give you the details so you know what to expect: fast service; no frills, the food speaks for itself with large portions and what must be locally sourced meat; a friendly staff, and satisfactory facilities. I ordered the burrito loco, which I would recommend. I liked the chorizo sprinkled on top (living in Mexico for some time, I know the importance of a good chorizo); I liked how the pulled pork interior was soft yet crispy at the edges, and I liked the large quantity of melted queso on top. Needless to say, my order was delicious. I would consider this restaurant your typical American Tex-Mex meets authentic Mexican cuisine. I actually downloaded yelp to give this restaurant a good review, if that speaks to my satisfaction. So I guess there isn't much I wouldn't recommend about this locale, although it should be noted I am partial to plain and simple service and warm bathrooms. read more
