    This place is a Michelin rated restaurant if you're ever in Cabo, do yourself a favor and definitely treat yourself. Coming from Las Vegas I'm used to having amazing restaurants, but this one is truly a gem. The whole restaurant is very uniquely decorated all with chopped lumber. The aroma of meat cooking is in the air. The service is absolutely fabulous as you would expect in a five star restaurant. We ordered four or five of the main dishes. Please go to the video. I will always go to Carbon Cabron anytime I'm in Cabo

    Initially we were skeptical because it seemed they wouldn't have too many vegetarian offerings and also the place looks so shaded or dark from the outside (and inside too) What convinced us was on the day of our reservation, their maître d' contacted us on Whatsapp, got our laundry list of allergies and restrictions, assured us we'd be taken care of and delivered! They validate parking. Easy access, restrooms available. Their menu is divided into veg, sea, meat You can do a prix fixe, we opted for fam style. Our server was the epitome of patience as we explained our restrictions and she catered to each of them to a T. We got the corn, the vege tempura (their special) with one piece separate sans aoili for our friend who can't have eggs, the broccoli, tomato (pesto side for nut allergy), a fish with dashi separate for mushroom intolerance. We also tried their house drinks and got three desserts. Plus two on the house for our bday and anniversary couple. Their dishes look like a romance novel, their service feels like old school hospitality where customer is still king. Loved every bit

    This was a highlight of our trip. The cool ambiance and dark vibe was an experience with the wood logs covering the walls. The food is served family style and while they didn't have a kids menu they accomodated and brought a plain corn for our daughter and the kids loved the steak. The presentation of the food was Michelin style! And the sauce on the corn - we are literally still thinking about that! The steak melted in your mouth and was cooked exactly medium as requested - they came and cut it for us tableside too. Everything was exquisite. Limited menu but each item really highlighted the main feature: so we ordered the corn, and it was the star; we ordered the tomatoe and it shined. They even allowed us to walk-in without a reservation and sat us within 10 minutes!

    Honestly such a unique experience it's hard to put into words! The first thing that will catch your attention is the setup of the restaurant. As soon as you walk in, you'll notice the dining room is super dark and sectioned off into 4 or 5 "aisles" lined by walls of chopped wood. It feels like you're in some mix between a log cabin and lumber yard. When you look at the menu, you'll notice it's categorized by veggies, seafood, and meats essentially with 4-5 options under each. Many of the dishes are innovative and very outside the box. I'm sure the dishes change on a regular basis as well. My favorites were: + T-Rex Ribeye (super charred and cooked perfectly) + Carbon Vegetal (black tempura onion stuffed with something creamy inside) + Leek (served with baked mussels inside - mild flavor but very interesting concept) The service was a bit hit and miss. They were very on point when it came to serving the food. Since the table space was limited, they were very meticulous when it came to making sure to clear enough space to fit the serving dishes and place everything in a very specific way. However, it was often tough to get a refill on water or order another drink. Our entire meal ended up being over 3 hours - partly due to our group taking our time to eat/chit-chat but also because the cooking/serving took some time. Just make sure you come here when you aren't on any sort of time crunch!

    This was an absolute stellar experience. Our server (Rodrigo, I believe) was amazing. Friendly, helpful, great suggestions. The food was simply phenomenal. Steak prepared perfectly. Addictive corn. Inventive dessert. Expertly crafted drinks that fit the theme of the restaurant. The restaurant interior is so unique and beautiful. The entire experience is so well thought out and executed. If this place existed back home you would never be able to get a table.

    All went well and an awesome evening for dinner! First, we were just dropping some friends and then decided to have dinner at Carbon. They went above and beyond to accommodate a reservation for 2 into a table for 6 within minutes. Atmosphere was unique and amazing. Roasted corn, NY strips were cooked to perfection, considering the table ordered 3 different ways for the steaks to be, and the desert was delicious. And for the old fashioned drinkers, you will not be disappointed with their version. Ice cube had a quarter sized , brown sugar on it too compliment the bourbon, bitters, and the smoke as they smoke their old fashion at the table!! All in all, you will not be disappointed!!!

    I like to call this my favorite secret in Cabo. This is a must go every time we go to Cabo, and sometimes the excuse we use to fly in.. I almost don't want to write a review to keep it a little more off the yelp grid... but it's too good not to share. The restaurant itself, visually is one of the most exquisite places. It is dark, moody and woodsy. It has this aura as you walk in where you automatically know you're about to have an interesting and memorable meal. From first bite you will be dreaming of Carbón Carbrón forever. Every time I refer people to go here during their Cabo stay, I say two words: The onions. How can one make onions so delightful? I kid you not, these are the best things you will every try. We love to do chefs menu when we come so they bring us all of the chef's favorites from wood-fired vegetables, seafood, and meat. The cocktails themselves are also extraordinary. I am not going to go into the knitty-gritty of it all because outside of the fact that their menus are seasonal, I want you to give everything a try for yourself. Just trust me when I say the cocktails and dishes are not just presented beautifully, each sip and each bite will leave you extremely happy. A true culinary art piece. Service is also FANTASTIC. I know I say this frequently but, for real, you will thank me later.
