First visit and we really enjoyed it. Secluded and tucked away from the main shopping center, next to a senior living community. Parking lot was full so parking near the shopping center was needed. Nice old feeling as you enter. Enclosed Covered patio was nice as well. Reservation highly recommended! Glad we did, the dining room was an hour wait at 5:45 pm. However, the bar has opening seating. Menu and wine list had many options. Our server was Alfredo who was busy. Actually all the workers were very busy and organized. There is definitely a great system in place from cleaning tables to bring food. Our meals was very good and the Apple cinnamon bread pudding was so good. What was returned was a slight dirty version and pimento olives. Had to ask for more olive juice and the correct olives. Side order was a baked potato with everything but bacon. What did we get? A baked potato with nothing. Had to ask for the fixings with everything but bacon. What did we get? Sour cream and chives. No butter or cheese. Horrible service. Been to Carver's a couple times but this was by far my favorite experience! I wonder if management has changed or improved recently, because I really enjoyed my food AND the Tuesday special price is really good! The meat was cooked medium rare as specified and was nice and tender. I loved the salt mixture on the side that I dipped my meat into. The sides were also pretty solid too - mashed potatoes and vegetables. This was the perfect amount of food for me and I left just satisfied enough I think this place is well worth it for the Tuesday special! The service was good and my table enjoyed the bread service. My one piece of feedback is that the tables could've used more butter by default - the bread is fairly large, but there's not a whole lot of butter to go around. read more

We attended a private retirement dinner at this steakhouse. I have never been here and finding out about is great. We were seated in a large private room with a sliding door so that we could dine privately with a group of 70 others. The event host decided to offer a 2 course prix fixe menu, beer & wine included, and with delicious cupcakes as the third course. The setup was beautiful. There were 7 tables of 10 guests at each table. The room was perfect for an intimate dinner retirement celebration with family and close friends. We chose: Caesar Salad & the Prime Rib and Spinach Salad and Prime Rib. The serving staff were great. They all had smiles on their faces and they seemed to be happy to serve the party. Our salads were great with perfect portions. The salad tasted fresh as well. The Prime Rib was perfectly cooked and prepared; medium and juicy. I loved the cream horseradish sauce that they served with my Prime Rib. Overall, this was a wonderful experience and I now know that this steakhouse exists here in Rancho Bernardo. I uncovered Carver's looking for a place that served prime rib, which is actually harder than it seems if you want to go better than Outback, but don't want to drop $80 on a steak. Carver's has an old-school steakhouse vibe that isn't manufactured. It's not trendy, or trying to be something it's not. They have a small parlor area where you check in and a lounge/bar area in addition to the restaurant. We decided to check out the bar and lounge as we waited for our table and grabbed an Old Fashioned. When we arrived at our table we ordered the Hot and Spicy Shrimp appetizer, which we both really enjoyed. It had the right amount of heat and they had really good flavor. For dinner, I ordered the 20oz bone-in Carver Cut prime rib, which came with my choice of side (I went with fries) and a soup which upgraded to French onion. I really enjoyed the steak and fries. The French onion soup was good but I didn't realize it wasn't going to have the cheese and bread topping. Still pretty good flavor though. My BF ordered the 14-ounce New York steak with a side of au gratin potatoes and a side of Béarnaise sauce. He really enjoyed his as well and was quite impressed with how the steak was cooked and the flavors. We shared a bottle of wine as well and the whole thing with too was just under $230 which is not bad for a special occasion or an indulgent Meal. We will be happy to come back. read more

I was delighted by the cozy ambiance (darker lighting, fireplace, and huge window with twinkly lights), but the dinner was fantastic! We decided to give Carvers a try because of all the good reviews. We made reservations and glad we did because it was quite busy there on a Friday night. Service was great. We had a really nice waiter who gave excellent recommendations for drinks and food. I wish I remember his name. The drink and steak prices were very reasonable. We had a great dinner at Carvers on a Tuesday night which worked out well as that is when they have their early bird special. If you order between 4:30 and 5:15 pm they have a fairly good special where you can get dinners such as Prime Rib or Filet Mignon for about $23 and a decent bottle of wine for $16. Please note that this does not match their website that indicates that this is for every day, not just Tuesdays so a bit of false/old advertising. I would have given them 5 stars otherwise. The 8 oz prime rib was good and the 5 oz Filet Mignon were excellent. The service by Brandon was fantastic, the decor is very nice, and there is a nice garden view. This is a big place but was getting pretty full of people by 5 PM, which may be due to their early bird specials which end at 5:15. That's exactly why I decided to eat dinner two hours early at 4:45 PM! I can never pass up prime rib, and the 8 ounce was cut thickly and it was quite tender. My only complaint is that the temperature was lukewarm. I found the au jus not too salty. The clam chowder had chunks of clam meat but I could've used a bit more cream in the base. Depending on where you are seated you may find it a little dark or you might have a beautiful view of the garden. Service is always excellent. We love the Prime Rib and Filet Mignon. Their "Early Dining" menu is a great deal if you are able to eat early. The garlic cheese bread and Hot & Spicy Shrimp are great appetizers. I love a good Wedge Salad. Unfortunately, Carver's Wedge is hit or miss. When it's good it's really good and full of flavor. The last two times I have eaten there the Wedge was served in a pool of water, soggy iceberg and the dressing was very thin and lacked flavor. Probably due to all the water on the plate. Shrimp Scampi is excellent but I would suggest having them leave the tomatoes out. Their prime rib is herb crusted, slow roasted, tender and has amazing flavor. The filet is very tender. No knife needed. Every time I go I have a conversation with myself and tell myself you are not going to have the Prime Rib or the Filet tonight. They have a lot of great steaks to offer. Really nice place with lots of seating. The menu is great, I really liked how the entrees came with a soup or salad and a side rather than ordering them all separately. The calamari was good and flavorful, I really enjoyed the fried vegetables with it as well. Only wish it had a lot more sauce, even having the sauce on the side would have been ideal because it was very good. The complimentary bread was also delicious. The entrees were subpar, my boyfriend ordered his steak to be butterflied and it was not, and because of that his steak was underdone. Also the steak was bland and he's had better elsewhere. My steak unfortunately had tons of fat on it, even trying to cut it off the fat it was still all over and inside. Every bite was squishy and it was very undercooked as some parts appeared raw. I really did enjoy the sauce on top and the mashed potatoes but the steak was so disappointing. Service was okay, slow at some parts but fast at refilling our drinks which was great. Filet trio was a delicious journey with the very different sauces (like eating an entree sampler). Prime rib had us most excited. Described as slow-cooked and tender on the menu. But was actually a bit tough (first indicator was difficulty cutting into bite-size pieces using a proper steak knife). Our excitement settled to underwhelming. One member of our party mentioned that they preferred home-cooked meals. I have to compliment the service. Top notch, but expect less attention when it gets busy. Service was OK and attentive enough, but not high-end or highly polished/highly trained as you might expect at a steakhouse. Decor is dark and atmospheric, but somewhat dated. Patrons were casual -- one guy was wearing a tank top, shorts and flip-flops, not what I would expect on Easter Sunday at a steak house. Come on people! The shrimp were expertly cooked, tender, juicy, and full of flavor, with just the right amount of heat. For the mains, my fiancé ordered the bone-in Carver Cut prime rib, which arrived perfectly cooked medium rare and richly flavored. I opted for the 14-ounce New York steak. It was beautifully charred, exactly medium rare throughout, and deeply satisfying. A side of Béarnaise proved to be an excellent addition, enhancing the steak without overwhelming it.
