BLUF: very good food at reasonable price. Friendly servers Went with a large group on a Wed night. I think we ordered literally everything on the menu, and to a person we liked what we received. One of the few places that makes a really good Horchata drink, so if you like those order one. It wasn't that lively in there, but it was a Wed so not a big night out for most people. Their steak meals were a clear standout - everyone liked everything, but those got raves. Also, bacon-wrapped shrimp were great - good sized and grilled so they still had a snap to them. The downsides: it took a long time for food to come out, although some of that probably can be attributed to us being a big group. That said, several waited for, and eventually had to ask for, the tortillas that went with their meals. Our servers spoke little english, so sometimes communications were difficult, but ALWAYS friendly. I would definitely go back. read more

The food was pretty good however it seems like their portions are very inconsistent. One time the shrimp was all on one end of the burrito, the next time there was plenty throughout the whole burrito but now it had peas (no where does it say anything about peas). We stayed very close to Casa Calaca while on a recent visit to Salida. We didn't try ot until our last night and we are sorry we waited. We probably would have gone again if we tried it earlier. The Margaritas are delicious with fresh squeezed lime juice. Of course chips and salsa are always good, but we loved their spicy salsa. I had the Casa Calaca Especial. It was delicious. The steak was perfectly cooked and tender and the bacon wrapped shrimp were large and tasty. Large portions of food, great staff and comfortable setting. We ordered the enchiladas mole- and we got the wrong order. Got the chile relleno which was bitter. Unfortunately the least impressive chile relleno I've ever had. Visiting the area and stopped in for dinner last night. It was super busy with the entire entry area full of people waiting. The host told us it would be a 45 minute wait. Obviously it looked popular, so we decided to wait. But within about 10 minutes the entire wait area had been seated, as were we. Great start! The staff was really moving fast - some practically running - to serve food and drinks. The chips were good, homemade salsa was awesome and plentiful - more was offered while we waited for our food to arrive. We had the chicken enchiladas favoritas, and a vegetarian combo. Stop here! Great Mexican food. We always make out first assessment with the salsa which did not disappoint. The green salsa was served warm and it was delicious too. We split the bacon wrapped jalapeno pepper appetizer. The bacon was crispy which is always a plus. Next we split a large guacamole salad. Also very tasty with just the right amount of flavor from the lime and cilantro. We ordered ala carte items- Chicken taco, Bean and cheese chalupa, and cheese enchilada. All was just what you expect. The Classic Margarita was also perfect. Good teamwork defined the staff. All hands were on deck to anticipate our every need. Keeping the water glasses and chip baskets full.the decorations were typical southwest colors and items - pottery and baskets. Really a total package and delightful lunch. Wow- this place is the whole package- great Mexican food in large portions, terrific staff with fast and friendly service, nice atmosphere, and reasonable prices. Although we live about 100 miles away, lately we've traveled to Salida twice stopping at Casa Calaca both times. We both had shredded beef taco plates the first time which were delicious with tender, properly cooked and seasoned beef. Second time around I had a taco and enchilada plate again with their great shredded beef, and my wife had large bacon wrapped shrimp on a plate with rice and beans. The beans were quite tasty while the rice was typical spanish rice. I should also mention the their salsa was quite good- spicy without being overpowering, and it was refilled several times by our very attentive server. We're already planning another trip to Salida which will positively include a stop at our favorite Mexican restaurant in Colorado, Casa Calaca! read more

Have been here several times with great experiences. My meal last night was lacking flavor- the refried beans were watery, the chili cheese inside my chili relleno was solid- not melty - like it should be. I feel they are rushing to get the food out quickly, but quality lacks when you rush. Please Take your time and prepare better quality food. read more

The staff were welcoming and attentive. They were patient with us as we read through the many choices, some with unfamiliar names. I asked questions which were answered immediately. I had one of the house specialties - Pina Loca for $26.00. The food was served on a halved pineapple and that made for an inviting presentation. But even better than that was the actual taste of the food! Delicious. It was grilled shrimp, chicken, peppers, onions and the pieces of pineapple all accompanied with pico, guacamole & sour cream along with rice and refried beans. Too much food for me, but I sampled everything. And the playful characters in the restaurant- the Caracas - make you want to learn more about the cultural relevance of the name and skeleton motif everywhere. Yes I looked it up, it's a multi-day participatory arts festival in San Miguel de Allende, Mexico, held during the Day of the Dead (early November) to celebrate with skull/skeleton art. We were seated promptly but our server was nowhere to be found. Chips and salsa were dropped off. The chips tasted off. They did not taste like corn and it seems they may have been fried in old oil. The salsa was off as well. Not sure what cost cutting measures are taking place here but we weren't about to stick around and find out. We showed up with a party of 8 an hour before close on a Sunday. We were sat immediately, food arrived incredibly quickly. I had the chile verde with corn tortillas, delicious. The jalapeño margarita with a Tajín rim, delicious. Several in our party got various enchiladas. Guess what? Delicious. We we're driving through town and stopped on for lunch off of US-50. What an amazing experience: food was incredible, service was pleasant and ambiance was on point too! I ordered the pina loca off of the specialty menu and I'm so glad I did! The entire menu looked incredible but I saw pineapple and put the menu down. I apparently didn't read the menu well enough because i was pleasantly surprised when it came out inside a pineapple!!! It was eye appealing and delicious! My husband ordered the Fajitas Trio from the specialty menu and loved it too. We sat on the beautiful patio which had ample shade. Will definitely return! read more
